    It is so good to have a doctor discussing foods and diets. Most doctors are in the pay of huge pharmaceutical companies that promote drugs and medicines rarely discussing side effects.

    Vegetables also comes with pesticides, herbicides, night shade variety, & very little minerals due to over-farming.

      The animals that you're eating, ate vegetables themselves. So they don't have any more minerals. They are factory farmed, made to live in miser*ble conditions, stressed and sick, mutil*ted and sl*ughtered.
      Organic vegetables reduces pesticide/herbicide exposure.
      A meal made of vegetables requires much less land and much less water to produce, is healthier for you, and doesn't contribute to vi*lence and cru*lty.

    I've eaten bacon, bologna, ham, turkey, potted meat, pepperoni, pastrami, corned beef, Vienna sausage, and hot dog franks. When I eat that stuff for a month without starches nor produce, the sodium nitrates stabilize my blood pressure. I also lost weight and my energy levels increased. My heart felt great. So sodium nitrates from processed meats are epic. And yes, it improved my sleep as well, believe it or not.

    Yes I like beet skins and I make a drink with water fresh basil thyme rosemary and tarragon. Mixing well in a blender, strain it and drink it every morning diluting it and drinking all day .It stops mucas and coughing like nothing else .
    Oh I also take a Quercetin and Bromelain supplement which helps but nothing like my green drink .
    Everyone should atleast have their own basil plants to add to food ect .
    Its so good for digestion too .

    I use organic beet root powder before workouts or hard labor.
    Heres something delicious....dump some into organic carrott juice then add some ascorbic acid powder and mix well.
    Its delicious and almost impossible to get sore even after heavy training! Piping Rock has 1 lb bags beet root powder on sale sometimes for about $12.

      @@garyssimo Yes beets contain a lot of carbs, it's logical they give you a boost for workouts. Bananas will do pretty much the same.

    Thanks for the great information. I have heart palpitations when I eat cured meats. I thought the uncredited meats were the greatest thing, however I soon realized I was still having problems when I ate these. Thanks again for explaining this.

      salt is salt. you have hypertension aka high blood pressure. get it under control or risk stroke heart attack and enlarged heart and heart failure. I had to take a medication until I modified my diet and increased exercise. Now i don't have to take the pill.

      @@WholeCosmosquality salt like Celtic salt is not bad for you. My blood pressure is 100 /67 since going carnivore and using Celtic salt. It was previously 120 something over anywhere from 85-93. This happened almost immediately. We’ve been lied too. I was previously plant based.

      Very possible it's dehydration and you're just not used to eating protein in any meaningful amounts which requires a good bit of water to process so should we cut protein or add water lol I think this is a really easy answer to arrive too and don't forget the fat you need it!

    Really good video. Very informative. Thanks. On a side note, I've always wondered why, if nitrates are so good for us, I never see any commonly sold mineral supplements in nitrate form. I've seen minerals in oxide form (zinc oxide - very poorly absorbed); chloride (magnesium, potassium & other chlorides); and even sulphate form (zinc & copper sulphates). But nothing in nitrate. Why is this? Surely it wouldn't be toxic, would it?

      Actually, a company sells these really expensive lozenges for NO with a lot of stuff, and guess what? The active component is 40 mg or so sodium nitrite..

    The IARC conclusions were based on epidemiological “evidence“. Epidemiological evidence can be used to conclude that beer is the source of, and the solution to, all the worlds’ problems. You might be able to use it to propose a hypothesis, but you can’t use it to prove anything.

    I eat bacon all the time. I don't know if or what is in it but it's about all the nitrites I'm likely to eat in abundance. I love my bacon. When it comes to Amines I'm careful to eat the rest of my meat fresh, or as fresh as possible.

    The supplements available for increasing nitric oxide often contain potassium nitrate or sodium nitrite. I bought a several pounds of potassium nitrate and along with some ascorbic acid created my own version of those supplements, and it does measurably increase my NO levels at a tiny fraction of the cost.

    Hey Jakob, in general, yes. One concept I always try to consider in these cases is the context. How the soil is managed will have a huge influence on the nitrogen cycle. What microbial processes are present within the soil web? How much are you tilling? Are you tilling? Perennial vs annual. Context is huge.. I mention these questions because “discoveries” like NO are super exciting and it can be easy to forget about context. Too much NO will kill you with inflammation and cellular rusting. We’re still learning so much about this and the bigger cycles of gases. Looking at traditional diets and systems of medicine give us some strong guiding principles for research and practical application.

    My response to the first video what's to get more Arginine .... just go out and buy it in a tablet. I still do that but now I'm using regular food like beets, green's ....excetera. The good thing about the videos that you make is that they make me think and then I'll develop better habits. So I'm eating better food now and thank you very much !!❤!!

    I would love to have you as my primary physician. I'm 55 and very active physically. I developed sudden hypertension, high cholesterol, and high glucose levels in my mid-40s. Recently, I asked my doctor if I should nitrate supplements like beetroot or L-arginine since nitrate-nitrite deficiency might be the root cause of it all. He dismissed it as nonsense. Of course, I ignored him. It's only been a month of me taking the supplements, so I haven't notice any changes yet.

    Being a Diabetic 2, I fill the fridge full of vegetable snack snacks. I feast on washed Celery stalks and washed but not peeled Carrots. Since watching your video on Moringa, I have introduced it to my diet.
    I add the green powder to my unsweetened Greek yogurt in the morning. A nice treat is to mix the powder to my bottle of Soda Stream Water I keep in the fridge. I drink this and snack on my veggies all day.
    Adding a squeeze of lemon juice to my Moringa water improves the taste and helps me curb my diet between meals.

    So what if you cure meat without the nitrates, if you use the old-fashioned salt, pack method, and no nitrates to cure it. Also, when curing the meat, I wonder if we pack it with some sort of additional vitamins, and nutrients in the curing stage or the drying stage or mix it within the meat, if making sausage. I’m really big into Moringa and I’m wondering what you would think about salami that is salt cured only and has Moringa in it?

      @@DevelopAwesomeSkills there are nitrites free cold cuts available. Most people don't buy them because they are grey an dull. A well done porc roast is greyish too but don't seem to mind.

    I used to like those little cocktail weenies now it’s making me wonder could any cured meat if you add the right vegetables make the nitrates less toxic? Make up those little cocktail weenies, chop up garlic and onion when you put them in the slow cooker.

    Question I have- My understanding of nitric oxide is that it enables better elasticity in veinous / arterial walls. If it's molecule with a life of one second, how permanent is the effect in the circulatory system. I'm sure it's probably a more complex answer.

    So do the positive nitrate effect in vegetables get transformed into the carcinogenic one when eaten together with amines from protein/meat?
    Or do I have the logic upside down? Can the nitrates in preserved meat actually be good for health as long as there is sufficient antioxidant consumption?
    As in bacon doused in nitrites is actually healthy if eaten together with berries ?

      Get rid of fluoride, Listerine and other mouthwashes, antacids, and be careful with antibiotics. Don't use them for just a cold..

    Is the interaction with amines you are talking about something that takes place in the food itself, or is it in the digestion process? In other words, if meat is consumed/digested with vegetables, is the vegetable nitrate content more problematic than when vegetables are consumed alone? Or is the issue that within the vegetable, before digestion, there are no problematic ami es present, contrary to the meat as it sits in the butcher’s case?

    I'll be adding celery to the list of leafy green vegetables that I eat six servings a day for nitric oxide, per Dr. Esselstyn's recommendations. I've been doing that for a while and a few days ago I tested myself with a HumanN nitric oxide test strip and showed up in the 'optimal' zone! I'm 67 years old and having optimal nitric oxide is awesome!

      I am preparing my veggies a week in advance and Freezing them. I feel that, that may be reducing nitrates. How are you preparing the veggies, and do freeze them? Also, what veggies are you consuming?

      @@seangreen8262 I got them from Amazon. Esselstyn names the leafy greens in several videos on RUclips. if you searched for "Esselstyn greens" You will get several. In my case, I get them fresh and mostly steam them, though I also enjoy them in soup.

    You forgot oxalates in vegetables, we don't digest fibre. So what's so good about vegetables. Ever since quilting veggies and carnivore life is so much better

    What these test didn't do is check the add salts for impurities or other chemicals....i rather know exactly what i am eating than something with added chemicals

    3:43 in meat also (specially organ meat). Carnivores don't need as much vitamin c as those who eat carbohydrates.

    Very well researched. Thank you for including sources. Does this imply that eating something high and nitrates like beets, and high in amines like walnuts, together in the same dish is as bad for you as cured meats? At least in regard to nitrates

    Another great video! The question that comes to mind: Is eating a high nitrate vegetable (arugula, beets, etc.) along with a food that has amines (cheese, eggs, well cooked or aged meats) the same at eating cured meats? Cured meats have nitrates and amines that create nitrosamines, but eating two foods together (arugula, aged steak) also contain nitrates and amines. Are they, when eaten together, equivalent to eating cured meats as far as creating nitrosamines?

      Good bacteria in our tongue convert nitrates to nitrites. Nitrites are still useable by us to improve health.

    Beet juice spiked with L-Citrulline has been a game changer for me. I monitor my levels from time to time with test strips, and the beet juice / L-Citrulline combo makes a huge difference.

    Not convinced, but I eat only fresh meat, wild fish, and pasture raised eggs. Perhaps you have some research where the population studied has no complicated situations and only eats meat, fish, eggs and nothing else.

    I'm not familiar with this person, but she sounds like a member of the Church of Vegan. I suggest watching a video by Dr. Nathan Bryan, an expert in this subject who calls the bacon nitrate/nitrite cancer story the biggest myth in nutrition. If you notice, none of the studies she points out have the word "proof" anywhere.

      Chicken manure is extremely high in nitrogen. Watch out it can burn your crops.

    I find Chlorella and Spirulina powder balances the ph levels, works well. Probably because don't eat enough salads.

      Spirulina can be risky because of the chemicals it picks up in the water. It's worth researching. I've stopped spirulina despite its benefits and only take chlorella now.
