    Just made it for the 1st time myself. Called my mother and watched it. As a young Guyanese-American male this video was a marriage of old favorites with new style learning. God Bless

    My grandfather and grandmother used to put whole garlic cloves inside the baigan and roast it. Thus,making it flavorful.

    This is my all time favourite meal! My mum wraps up the bigan in foil (holes need to be made in both after wrapping) then roasts it on the stove top (turning it frequently). It makes for easy clean up since the leftover skin can be thrown out with the foil and it still gets that nice roasted flavor. She also uses roasted tomatoes but after looking through some comments, I think that's a Guyanese thing. Personally, I prefer oil roti with it but my mum usually makes sada since it's a bit healthier. Then again, I'd eat oil roti with anything though.

      I also think she cooks it in a pan for a bit at some point. But I think that's in place of putting hot oil on top.

      Your mom was right Sada Roti is the ultimate for this .. I love the tomatoes with it as well definitely a trini thing as i grew up on them both together :)

    U can roast in a 450 degrees oven on the bottom rack....on top of a baking sheet....its done in about 20 minutes.....perfect every time

    My mom was watching this with me, & said she would make this! She's planning on adding fried salted herring to it, to eat with provision!

    Just tried the recipe. All I can say is I never thought about grilling the baigan on the pit. Saved me a lot of clean up there. The olive oil added extra flavour. Thoroughly enjoyed this recipe

    Chris you are doing a good job. This will help the generations to come, that is lost to all the extra lessons in the name of education. Our children are losing the basics.
    They do not have time to see Ma cooking. Even Ma has lost the touch because she did not see Nanny do it. Keep it real.

    Hey chris thanks for all the info most people don't like important info like this lol, but if you stick the garlic in to the egg plant, and use them after taking them from the egg plant, crushing them as you did, the garlic flavor and the texture after crushing is amazing, you can even seeing that your using a grill, you can put the garlic on there in some foil,

    in Guyana we put the whole garlic clove in....and the garlic get roasted with the bolange or egg plant..... it makes a nice filling for roti.

      I'm in agreement with you there....I would roast the garlic along side of the eggplant too! Gives it a smokiness that would offset some of the heat from the pepper!

    If you spread some foil on your stovetop (just cut a hole for your burner), you'll make cleaning up much easier, Also I slit a little hole in the baigan and stick the garlic in and roast the baigan with the garlic in it. Trinidad flavours :-)

      trini do i take off the burner and place the foil directly or wrap the eggplant? TIA

      OriginalRipndip Take the burner off and place the foil directly on the stove then you either cut a hole and replace the burner or let the stem of the burner punch a hole in the foil when you put it back on as Danial Fabien suggested. The eggplant gets a better roasted flavour when it is exposed to the flame as opposed to being roasted in foil. I haven't used a gas stove in decades so I can't remember the exact workings of the burner.

    Thanks for sharing this, instead of olive oil coconut oil can be a alternative, but congrats your video was concise, smooth and clear.
    In the Micro it can explode the grill is really the best .

    I sometimes roast the eggplant on the grill for my mom when she makes it. it tastes so much better than when it's all done inside.

    oh boy am i hungry now :)...just a tip - I usually put the garlic in the slits of the bhaigan before i roast it fireside.....

    Adding whole cloves of garlic in the slits will roast the garlic as well. Brush the eggplant w/olive oil before roasting. Roast also a large tomato, slice this. Add a pat of butter, chopped shallots, mix with a fork. (no need to mash except for the garlic) 🌻

    Enjoyed your receipe from Toronto will I will eat it with bus up shut I bought from a Trini roti shop with some dhal.Actully my brother's wife usually made it in the microwave but you know we rost the eggplant in a wooden fireside in Guyana or Trinidad.will be trying it today.

    my family also roast tomatoes (peels the skin off) and then adds it to baigan choka... the tomatoes adds alot of taste! Im not sure if it's only a guyanese thing though

    My grandmother normally put the garlic Inside the baigan also she roasted tomatoes then she would add the salt pepper and spring onions I have never seen it done before like how you prepare it

    this is my favorite way to eat eggplant. the roasted way taste better than fried and curried imo.

    Typically in Trinidad and Tobago brigan choka is eaten with sada roti, I imagine one can eat it with what is preferable.

    a toasted flat bread would be a healthier alternative to oil roti but would it taste better. i doubt it. my parents usually cook this with oil roti because they dont care about health that much

    I have done the Baigan Choka in the microwave..I usually do it for 20-25 minutes..it depends how big or fat the egg plant is

      Hi Cris good cooking...I watch ur videos...An yes u do have to put the garlic into the slits on the bygan...An yes u do get a very very bbq flavor....I am MATTIE from central Trinidad California love ur cooking keep on exposing our lil Trinidad an yes LOTS of ppl don't know where Trinidad is.
