5lbs of potatoes = around 6 quart jars.. + 1 jar of water for a full 16quart presto canner. You can add some onions to the bottom of the jar, along with your favorite salt. I use kosher pickling salt. Ball's complete guide to canning will have a recipe for canning up plain potatoes, Been canning up potatoes for over a year now.

Sometimes I par boil them for a minute or 2, sometimes I forget to do so. lol But either way, It is what I do. Its been a while, since I still have around 6 quarts still in my pantry. I've canned raw potatoes and never parboiled. I've never seen anyone parboil them. That's new to me. I soak rinse x3 day before and it's successful. The jars are clear and beautiful. My best results we're peel cut in chunks, rinse and soak overnight. Rinse and soak all day and rinse then can in the afternoon. No mush in the bottom of jar. Also 10 Lbs potatoes fills 7 quarts.
I use Yukon Gold and I soak in cold water after peeling and rinse them three to four times after cutting up. And straight into jars with cold water and salt. I get just a little of starch at bottom of jar but I just dump liquid rinse and put in pot with fresh water when ready to eat

I bought and canned potatoes for the first when the shut downs first started myself. I tried both salt and no salt in jars and prefer to can without salt. I love being able to have eggs and potatoes for breakfast! I found that the starch on the cooked potatoes give a nice crust when cooked in a pan with butter and a little vegi oil (so the butter doesn't burn). I want to can some more but I think I will wait until fall when potatoes are cheaper for the holidays.
I don't add salt to anything I can. Quit many years ago when I learned that salt is only added for flavor and doesn't aid in preservation. Amount for that too low. It's easier to add salt, as needed, especially when combining with other ingredients. Some of those may already have more salt than is needed / desired. Especially for people on low sodium diets.
We love canned potatoes. They make the best fried potatoes and potato salad. I do not blanch my potatoes and the starch does settle at the bottom of the jar.
Potatoes and green beans canned together will be great! I am looking forward to that video! This is my first season pressure canning and I have canned both separately. My favorite way to cook commercially canned green beans is with potatoes in them. The potatoes do something to the green beans that makes them extra delicious. Once when camping, for potluck I made the green beans and potatoes. Everyone wanted to know what I did to the green beans to make them so good! My grandmother always did this so I just revived her recipe. Looking forward to all your videos!
I just did my first batch of potatoes and canning. First time ever using a canner before. Wish I would’ve known about boiling off the starch before canning them. I just rinsed mine off and I have that cloudy stuff like you were saying. Oh well, there’s always the next batch. Thanks for the video, it really helped me.
The cloudy water in potatoes after boiling is not just starch. There is a lot of needed potassium in that water. You may want to do a little more research before you throw all that potential health away.
I just checked my potatoes in my winter storage....they are starting to sprout and there are a lot of them....I googled your channel to watch how you canned them....I have never even heard of canning potatoes before the last year or so of watching youtube....I am going to give it a try....looks like something my grandkids(parents) would love! I am sure I will too...what fun!
While growing up..my Granny would put potatoes in water bath canner..cover with water, soak for several hours..then we would spend several hours scrapping the peels off..then she'd can them. We spent weeks, it seemed, doing this.. Awww the memories

You're right, canning potatoes is easy! The results are delicious and you can make many dishes with the resulting canned potatoes. I raw pack my potatoes (I don't par-cook/de-starch) and my jars are nice and clear. What I do INSTEAD of par-cooking is to peel and cut the potatoes the day before canning then I put those in big pots filled with water and a bit of lemon juice or citric acid and stow the cut spuds in the fridge. Overnight the starch is mitigated by falling into the soaking water. I then drain and pack the jars with salt and fresh filtered water and pressure can process for 55 minutes. This also spreads out the job a bit for ease. About a month ago I canned 60 pounds of russets and Yukon golds from Costco. (I just opened a jar today for lunch and mixed the pre-cooked potatoes with butter, sour cream, home-cured bacon bits, and garden chives and it tastes like a yummy baked potato filling.) Thank you for sharing!
@@happydays1336 Yes, the potatoes are still firm but cooked through after processing/canning. There is a tiny bit of starch that falls to the bottom of the jar and maybe scantly covers the bottom of the jar but that's likely cooked out during the canning process and mainly with the starchy russets. I've used them to make potato salad, mashed potatoes, easy slice and quick "fried potatoes" or cottage fries, the mentioned "baked potato", and others.
I love my canned potatoes. A pint and half jar are perfect for my husband and I. This week I used two. One I was being lazy and just had buttered potatoes with salt and pepper for breakfast, and for supper one evening I added one to onions, bell pepper, and sausage.

Been watching a few weeks now so guess I’m a new subscriber 😅🤗... Enjoying your honest and straight forward videos. Been homesteading a few years myself and “dabbled” in canning as our gardens been kept small enough to manage and keep for fresh eating and a few tomatoes to toss in the freezer etc. its worked well around milking goats, building our orchard etc. This year we bought more “bulk” fruits and cucumbers and my Livingroom tables atm holding 200 jars 🥳... potatoes where next on my list coming up here as a local market sells 50lb bags for reasonable pricing. I’ve always bought 1 and by spring end up having to toss the bottom 1/4 😔. This year I plan on buying 2 and canning them. So TY for the well timed Videos!
I think you will love your canned potatoes! Try canning some with carrots and about 1 tablespoon of dry onion soup mix. I add o jar of that to a pint of canned roast beef and season how we like and a thicker and you have an incredible fast beef stew! I saw Tessis Homestead can her potatoes and carrots that way and I absolutely love it. I do use the beef onion soup mix.

👋 that's me! New to canning....well I water bathed 27 quarts of tomato sauce last year. That's about it. I failed at making grape jelly they didn't set and most didn't seal I threw it all out discouraged. SO your channel is GREAT and love how you explain everything 💟 thank you
Suffolk Susie Next time with the grape jelly, pour it back into the pot, heat it up and add more pectin, boil it for a minute or so and test it and then jar it up and can it. Or freeze it and call it syrup.

Whenever i boil potatoes i use the left over water and pour it over any weeds i have on my path, it works great but im not sure if its the water still being hot or the amount of starch in the water that kills them off.

@@1870s I am in love with your videos. They are easy to follow and delish. I have been canning potatoes for a while and we absolutely love a canned potatoes. You can get those out of the jars and fry them up and there are beautiful with some steaks or chicken etc.

Your potatoes look great!! Funny but yesterday was my first day to can potatoes too. I tried two methods, a dry canning and a raw pack both of which I found instructions for on YT. They both look good except the raw pack had some minor breakdown on the bottom of the ones I peeled and diced smaller. The non peeled chunks and baby whole look fine. I chose not to blanch because I was afraid they would turn to mash potatoes! I have to pressure can at 15 psi because of my altitude. When you add in the venting and cooling off time in addition to the 40 minutes of processing they are bound to get overcooked. I may try another small batch using your method to see if I can get the same results as you. Of course time and a taste test will help decide which method is ultimately best. Thanks so much for sharing!

canned potatoes are great for quick soups and stews if you have canned beef stew meat as well as canned carrots they are also great for mashed potatoes and I have thick sliced potatoes to can for fast fried potatoes the potatoes break up a little but still make a great fried potatoes
@@GeorgiasGarden you keep them in a bowl of cold water after rinsing and soaking then use a slotted spoon or your hands I use my hands to get them out as you pack them in jars and pour boiling hot water over them to a 1-inch headspace they will not brown on your that way I did not use lemon juice or citric acid hope this helps

Whenever i boil potatoes i use the left over water and pour it over any weeds i have on my path, it works great but im not sure if its the water still being hot or the amount of starch in the water that kills them off.

@@1870s I am in love with your videos. They are easy to follow and delish. I have been canning potatoes for a while and we absolutely love a canned potatoes. You can get those out of the jars and fry them up and there are beautiful with some steaks or chicken etc.
Can you can the o'Brien potatoes?
@@pineymom213 good question. I am not sure if that works considering how small everything is. I would be afraid that the ingredients are all mushed together. I will try my luck and freeze dry them.

Your potatoes look great!! Funny but yesterday was my first day to can potatoes too. I tried two methods, a dry canning and a raw pack both of which I found instructions for on YT. They both look good except the raw pack had some minor breakdown on the bottom of the ones I peeled and diced smaller. The non peeled chunks and baby whole look fine. I chose not to blanch because I was afraid they would turn to mash potatoes! I have to pressure can at 15 psi because of my altitude. When you add in the venting and cooling off time in addition to the 40 minutes of processing they are bound to get overcooked. I may try another small batch using your method to see if I can get the same results as you. Of course time and a taste test will help decide which method is ultimately best. Thanks so much for sharing!

Curious... Since this video is a year ago, and I don't remember if I've seen you can any potatoes this year, is this something you enjoyed? Was it a staple? How have you used them? Will you continue to make this a yearly canning project?? Love your channel! This is my first year canning, and have learned alot from you!
canned potatoes are great for quick soups and stews if you have canned beef stew meat as well as canned carrots they are also great for mashed potatoes and I have thick sliced potatoes to can for fast fried potatoes the potatoes break up a little but still make a great fried potatoes

@@GeorgiasGarden you keep them in a bowl of cold water after rinsing and soaking then use a slotted spoon or your hands I use my hands to get them out as you pack them in jars and pour boiling hot water over them to a 1-inch headspace they will not brown on your that way I did not use lemon juice or citric acid hope this helps
