Your recipe is the exact same taste I've been missing for so long. Tell your dad I love him. And if your dad passed away, like mine has, just say a prayer for him and let him know his recipe won't pass away. I'm already teaching my kids this recipe. Keep doing what you do. We all love you.

Hello! You can use any chopped green chile that you have available to you, but I am using Lemitar green chile in this video. It is another variety of New Mexican green chile. If you have anaheim, those will work great as well.

Absolutely! If you make the sauce before, add in cooked pork, but if you want to make pork chile, you would add the pork along with the oil in the beginning and then add flour to proceed to make it in the same way here. I hope that makes sense.
As a Coloradan, I admit that I do love green chile that is a bit different from New Mexican. But it is silly to claim something is "the best". It is completely personal. Having said that, I make chile with Pueblo-grown and New Mexico-grown chiles. It is all delicious!

Always use wood or nylon utensils. Seasoning is very important to cast iron. Metal utensils will scrape the seasoning off.
