I wouldn't say they're shoddily-made, though from having worked on many of them over the years, his efforts seem to be focused on the acoustic parts of the instrument, rather than the decorative and mechanical. This Italian is very solid, with very reliable action, though some others I've worked on took some care to get the action adjusted where it should be. I've not spent much time with any new instrument of his though. Most have been from the early 80s, and this Italian was built in 1976. Like any instrument, you can never trust entirely in the builder's reputation. Good builders sometimes make mistakes, and good instruments are sometimes poorly maintained or stored. Always take a good look at any harpsichord to see what shape it's in, and what regulation might need to be done.
It's Byrd's arrangement and elaboration of Dowland's pavane. Many composers set this famous piece in various arrangements, including Dowland himself, who made many different versions for voice, lute and viols. Byrd's is my favourite keyboard setting, but certainly not the only one!
Nope! A full-size harpsichord still remains a harpsichord even when single strung. The smaller plucked keyboards (virginal and spinet) were always single strung; however, many Italian harpsichords were single strung (1x8'). On the subject of the smaller plucked keyboards, the virginals were usually oblong (Flemish) or pentagonal (Italian). The 'wing-shaped' Anglo-French spinet were developed in the late 17th-18th centuries, and generally replaced the virginals as the standard small domestic keyboard.

It's a 2x8, like most 17th century Italian harpsichords.
