  • Grilled up this TOMAHAWK RIBEYE STEAK for father's day. It was awesome.
    Not exactly a reverse sear.
    Smoked it, seared it, and then finished it slowly on the ugly drum smoker until it hit 135.

    Looks like the ugly drum is working out. If you want to use it as a griddle you can probably nicely fit the gabbys griddle attachment. Its designed for their santa maria attachment which is an attachment for the large webber kettles. Im thinking since you got that webber lid all those attachments will work well for you. Im sure that was your plan was always to use webber mods tho

    I regularly cook with a charcoal chimney. You had too much charcoal. I usually have it around 1/4 full.

      Lol 😂 it was definitely fun. Lately I just use the lower grate with charcoal and wood chunks on one side... I start out indirect letting the steaks smoke for a while and sear over the coals in the middle of the cooking process... then finish them off indirect again.
      Searing over the chimney is quite the experience though! 😂

      @@localherobbq it's my first time or calling somebody using bricks for their diffuser. It's a cool idea. I think I will try it in the future

    I see nothing wrong with any of this! Maybe just have some good gloves to handle that tomahawk on the chimney.
