      Canning really is one of the best feelings. I love seeing all of the finished jars at the end of the day. Now I gotta tackle the other 10-12 bags of tomatoes that are still in the other freezer.

      @@waardenburgfamilyfarm4764 I’m sure you will tackle the other bags of tomatoes no worries🍅I forgot to mention I purchased some strawberries and blueberries. I had to taste both to make sure they were sweet (quality control that’s my story and I’m sticking to it!) Well I ended up eating half of the strawberries😂and yeah they were super sweet! After eating have of my strawberries I realized I didn’t have enough strawberries for my strawberry jam recipe. So I mixed my berries and made the best Strawberry/Blueberry Jam. I will be making that mixture from now on…….I shared a few
      jars with my neighbors and they loved it. My little mistake worked out just fine😃

      I was surprised how much flavor was in that concentrated juice. I'll definitely be saving it all and boiling it down in the future.

      it is the best!!! I had canned one the year before and it just wasn't as good. The only drawback to this recipe is that it has dairy and can't be canned, but I'm willing to sacrifice some freezer space in order to have this bbq sauce.

    If you want to save your skins you can dehydrate them. Then grind them down to a powder as a thickener and I have heard you can use it for tomato paste

      I did that a few years ago. It was amazing how many things I could use that in. This year we're going to freeze dry tomato puree and powder that. We'll experiment with various amounts of water to see if we can get juice, sauce and paste. Thanks!

      I make syrup with it and use the fruit pulp for jams, and it makes great applesauce and apple juice. Whatever you do with it does two jobs at the same time. Win win!

    Yes I really enjoy canning too. I can't quite tell but does you tomato sauce separate a bit from the liquid once it is canned? Also, did you PC the one with the herbs in it? Have a wonderful day.

      The tomato sauce sometimes separates, but I just mix it up before using it. I water bath canned my Italian tomato sauce. I used dried herbs, not fresh. There's a bunch of conflicting info out there able adding herbs. I'm sure to acidify the tomato sauce with lemon juice and the I don't think the herbs would change the acidity level too much.

      @@aplantbasedwife no, I've never noticed any lemon flavor. Citric acid does the same thing, so either one would work.

    Dah. I remembered this video about concentrating the tomato water but forgot the pour it back into the sauce part. I just canned all my sauce w/o the water! I thought you canned it up as a tomato juice seperate. :( oh well It still will make lovely base to soups etc. I have 11 qts of sauce and I haven't concentrated the juice yet. I've got about 2 gallons now. .... cook pot cook!

      The concentrate would be really good to add to soups and other recipes. It does take a long time to cook it down, but it is SOO flavorful.

    Wow, that's a lot of work. Ketchup and salsa or tomato paste next? This Texas girl may give your BIL 's bbq sauce a try. How big a bag of brown sugar did you use?

      Since i did a double batch i used a large bag. I would start with less and just taste until it's where you want it.
      I've since made a bunch of pizza sauce. I tried ketchup one year but Donny didn't care for it. I'm hoping to freeze dry a batch tomatoes and powder them too. I'll just keep making things until i run out of tomatoes. 😁

    It looks like those bbq sauce cans are too full for freezing and will pop the lid off?
