Maple Balsamic Onion Jam | A Must Try Canning Recipe!

  • This Maple Balsamic Onion Jam will become a staple in your pantry! This water bath canning recipe is based off of the Balsamic Onion Jam in the All New Ball Book of Canning with a couple adjustments as noted throughout the video. The extra step of caramelizing the onions adds so much flavor to this recipe.
    1 tsp olive oil
    2 lb sweet onions, diced
    ½ cup balsamic vinegar
    1 cup pure maple syrup
    1 1/2 tsp salt
    2 tsp ground black pepper
    1 bay leaf
    2 cups apple juice
    1 tsp pomonas pectin
    1 tsp calcium water
    Caramelize onions in olive oil for about 45 minutes. Add spices, balsamic vinegar and sautee a few minutes. Add apple juice and bring to a boil. Reduce heat to low and add in calcium water. Mix together maple syrup and pectin. Add maple syrup mixture to pot and bring to a boil. Stir for 2 minutes. Remove from heat and fill 1/2 pint jars to 1/4 inch headspace. Process 10 minutes in a waterbath canner, adjusting for elevation.
    *If using low sugar or no sugar pectin, use 3 tbsp and add it with the apple juice.

    I did this recipe recently and I love it too. I think next time I’ll follow your lead and caramelize the onions. I enjoy your preservation videos so much.

    Looks pretty easy and delicious. I'm curious about your choice of pectin...is there a taste difference from regular pectin?

    Did the jam set? I just made this jam tonight, from an online recipe pretty much the same, and it's still very liquid. I read it can take a day or two to set, but I'm just worried now. Thank you!
