    I have nightly dreams about this stand mixer. I'm curious if the scraper wears down after heavy use? That Breville smart oven in the background is baller for proofing dough, paired up with this mixer the possibilities are endless.

      Yep that's the setup, great in the winter when baking bread. I doubt that scraper will wear down.

    Great video! Once thing I´d like to add: the screw at the back of the arm does not technically adjust the tension of the spring, it restricts the arms movement to one side. If you use the roller and the dough keeps going the wrong way around it (i.e. not in between the roller and the bowl) you can use the screw to position the arm such that there is a bigger gap, allowing the dough to go, where you want it to. Also, if the dough hook should touch the bottom of the bowl, there is a screw inside the hole for the attachments to adjust the height (at least there is on my older model).

    I make a lot of pizza dough, freeze what I’m not going to use immediately. I use the dough hook. It takes time, more time than my KA did, but the Ankarsrum is a beast and I can do like 6-8 doughs of around 22+ ounces each. Maybe 10, but that’s pushing the capacity, not the motor. Great machine, but there’s a learning curve. Have some patience and this thing will return to you tenfold.

    You still can have the dough scraper on too when you use the dough hook, though I love to use the roller most too.

    Do you know what the interior components are made of? My kitchen aide has plastic in the head. I'm really wanting something built to last.

      I don't know but, the bottom spins and it is a solid metal key that fits into the metal bowl. I can tell you it is built to last more than a kitchen aid.

      on my machine (from about the 1990s/ early 2000s) the gears are plastic (at least the visible ones). The machines is set up such, that even if the bowl is stuck, the components are unlikely to be damaged. The motor is connected to the worm gear by a simple rubber belt (with some grooves to keep it on the wheels, but no groves that allow for any grip) so even if the bowl is locked, the motor should theoretically be able to keep spinning, avoiding damage to the motor or the gears.

      It looks like it has an inward-facing lip on the bowl. Does it? So unfortunate because a rubber spatula will catch on that when emptying the bowl of, for example, cake batter.

      @@mw3flowers There is a lip but it is completely molded if that makes sense. The seem is on the outside of the bowl.

    There's a convincing review on amazon with video that says that plastic bowl and plastic beater mechanism is hella cheap and plastic was falling in to the dough after they heard a cracking noise. curious if this is true. not crazy about the idea of so much of it being plastic and seemingly cheap plastic for that price

      The plastic beaters are for light things like whipped cream. Dough is not made with the beaters if that makes sense.

    After 3 dead KitchenAids in 10-15 years, I'm ready to say Goodbye.
