The Ankarsrum is weird, coming from a hook style mixer like I did.... But your video was a perfect example of how it works.... Think I've had mine for a year nearly... I still think it's odd, but the bread is amazing ! I'm producing my best bread ever, but watching the kneading process leaves me mystified :) Have you tried making cakes in the mixing bowl ? I fancy trying that soon.... just blending butter,sugar,eggs and flour etc... all the best ...👍

Hi and great question! I have typically only made batches with about 1500g of flour (8cups), so I cannot say for certain it would handle 12 cups exceptionally well but in my experience I do think it will work. I would suggest starting with the roller more in the center of the bowl so that it doesn’t overflow when mixing. Slightly adjusting it with your hand to mix on low speed and then when kneading you would probably want to stay on medium-low. Hope that is helpful! Thanks for your question! ☺️

Is that medium speed? I thought 2-3 was medium, and that's what I use. You use a lot faster. I wonder if I should try that. THanks.
Hi! Yes when I’m kneading I typically increase to 5-6 on the dial which I would consider medium speed. Hope that helps! Thanks so much!
