    The tip on increasing the distance of the roller from the edge of the bowl to prevent "dough creep" is great. I was having that problem, thinking I needed the roller to be as close to the bowl edge as possible for proper kneading.

    So when you say “bread flour” in the recipe, are you talking about fresh milled flour? Hard white?

      Great question! The bread flour I use is an organic hard red. I don’t mill it myself, I buy it from Lindly Mills out of NC, mainly for ease so that I don’t have to sift the germ out. Hope that helps answer your question. Thanks so much! ☺️

    I think the dough hook is more suitable for mixing dough. It kneads at the same time.

    Looks great. I just bought this stand mixer and I'll start with this recipe. I'd like to add onion flakes and dill (Shaw's grocery used to sell onion-dill baguettes). When do you add the herbs into the dough?

      Congratulations on your new mixer! Onion and dill sounds delicious. I’d suggest adding these before adding in the flours. However, if you’re adding delicate fresh dill (versus dried) you could add it after the kneading process just before the rise. Gently knead it into the dough by hand ~ this would take roughly 30 seconds. Great question! Thanks so much for asking. I’d love to hear how it turns out! ☺️

      @@farmbreadthanks for replying, soft texture less chewy than I like and smaller crumb. I didn’t roll out I just punch out with finger tips final raise was two hrs and. The raise was ok but puffed up when cooking.

    Does using yeast interfere with your starter?

      Hi! I have seen recipes that include both a levain and a yeast but I have not tried them. In those cases, I think a yeast is used to help the starter so I don’t think it would interfere. However, I use one or the other. I haven’t used both together. Hope that helps to answer your question? Thank you! ☺️

    I have had mine for 2 years and Its great much better then my kitchen aid no comparison Ankarsrum is a much better machine for the advanced baker. I can set the timer and do a window pane test and Its perfect. Thanks for the video

    Just got back into making bread and my Ankarsrum was doing the same things yours was doing around 4:13. I thought my machine was broken because each time I adjusted to be one inch from the bowl edge, the arm would swing wildly again. I see I should have adjusted the arm to be closer to the middle, not the bowl. My dough was 900g and 600g water so about 66% hydration. Can't wait to test this again - thanks so much for this video!

      Ah yes, the amount of flour, hydration and stage in the process all affect the position of the dough roller. It takes a little time to figure it out but if you notice the arm swinging it typically needs to be positioned closer to the center of the bowl.       @@briklof course! It’s a standard baking sheet pan. About 3/4” deep. It’s not really the type of pan we think of when making bread but for this recipe with 4 loaves, it actually works well. Let me know if you have any other questions! Thank you so much! ☺️

    My Pumpernickel flour is 4 months out of "best by" date. Do you think that would matter in the end results?

      Hi! Good question! I’d use it. It may affect the gluten strength a bit but I don’t think by that much. Especially if you’ll be using a bread flour with it. Once berries have been milled into flour they begin to lose their nutritional value, so I believe that is part of the reason for an expiration date. I think it should be ok to use in your scenario, it’s only 4 months past. Hope that helps! Thanks so much!

    Question: I proofed the loaf for 4 hours last night, then put it in the fridge overnight. Can I take it out today and let it proof at room temp for another 4 hours and then go from there, getting a total of 8 hours that way? Great instructions, btw!

      Thanks so much! 4 hours may not have been enough for the initial proof, but since it rested in the fridge it may be ok. I would almost suggest letting it come to room temperature (1-2 hours ) and then baking. I could be totally wrong but I think if you leave it out for more than that you may over proof it, which is hard to come back from. This is a great experiment- I’d love to hear what you end up doing and how it turned out! Thanks so much for asking/ sharing!

      @@farmbread I let the dough proof for 4 hours after taking it out of the fridge. So it was in the fridge overnight after being proofed for 4 hrs. at room temp, and then the 4 hours after refrigeration. The bread was delish! Thank you.

    I want to add raisins to this recipe. Would you recommend doing it at the stage where you add the oil and seeds, or during the pre-shaping?

      This is a surprisingly quiet machine. Quieter than my former mixer and the kitchen Aids that my friends have. At the fastest speed it’s at its loudest of course.       Good question! I don’t 😜. But…I’ve recently been looking into using it specifically for sourdough due to the stretching technique- thinking it could be a good replacement for stretch & folds by hand. I’ll be testing this out soon and will share my results! Thanks for asking!

    I purchased an Ankarsrum mixer a few months ago kind of as an early X-mas gift to myself and while it was pricey I feel it was well worth the money. One of the big reasons is one I had never considered but which has come to be a major consideration for me. I can get up, mix up a batch of bread dough in about ten minutes and the only dirty dishes I will have to show for it are the roller and the bowl scrapper. It used to be when I made bread my kitchen was a disaster and there was flour everywhere. Now I use 1 measuring cup, 1 measuring spoon and a baking pan. I purchased a two drawer filing cabinet at the second hand store, sanded it down and painted it bright yellow and red, attached caster to the bottom and a wooden top to place the mixer on. All the attachments go in one drawer and measuring cups and what not in the other and I can roll it anywhere in the kitchen.

    What should internal temp be?

      Hi! Unfortunately I don’t know the internal temperature, but the oven temp is 450 f, reduced to 400 f when the pan is placed into the oven. Then I bake for 45-50 minutes depending on how golden the loaf looks. Hope that is helpful! Please let me know if you have any other questions! Thanks so much!☺️

    Kate, you helped me out with earlier videos of the Ankasrum and this is the first video you've put out since my wife bought me one. Thank you for showing me that I'm using it correctly now - and thank you for the guidance you gave when my wife was looking at them. I LOVE it. I can't get myself to use that dough hook yet, though, and maybe I just won't - you know? 🤭

    If you watch Breadbecker’s videos, you will see that you have too much flour in your dough. It should not be beating around a big ball of dough like that. You let it form a donut and when you see it releasing from the sides of the bowl, you stop adding flour. It took me a while to understand the way this mixer makes bread, but it makes sense now.

    My mixer just arrived about an hour ago and I can't wait to try it. I mainly wanted one to make pizza dough but will try other breads. I have very bad arthritis in my hands now so can't knead dough anymore and I was searching online for a strong mixer. Thank you for posting this video, I feel more confident now to get some good dough from this.
