I know this video is 10 years old, but I agree with one of the other comments that say this is one of the best videos out there of how to use this mixer. The model is slightly different than what the current one looks like in 2024, but its all still relevant. This video also does a great job of showing how to position the roller, how everything works, what a small batch looks like.... it basically answered all my questions. I have been watching multiple videos on this product, and this is one of the best, still... in 2024... even though it was made 10 years ago. Bravo, Lynn Junk, this has stood the test of time wonderfully.
After making ONE LOAF of wheat bread in my KA 600 today and listening to it labor, I threw in the towel and ordered an Ankarsrum Assistant and this video is head over heels better than anything that even the company makes. THANK YOU!!!
Thank you for making this video. My Kitchenaid died on Thanksgiving Eve. I bought the Ankarsrum Assistant and have been learning how to use it since. This has been one of the most useful videos I have found. I really appreciate it.
I'll echo many people here...this is one of the best videos on what the Ankarsrum can do. You show MANY uses which answer a lot of questions that at least I had: (1) can you do a small batch of dough instead of multi loaf - YES; (2) can you use the SS bowl to make cookies instead of the bowl/whips - YES; (3) what's the difference between using the roller vs. hook - gentle kneading vs. ripping. I could go on, but you get the idea. I do wish I could get the recipe for that herbed cheese bread as it looks amazing but it is helpful to see all the variations you can do with this machine. I've watched this video at least 3 times and will continue to come back to it as a reference / confidence builder anytime I have questions on what something should look like. THANK YOU!!!
I want that recipe, too! And incidentally, the roller and scraper do a FABULOUS job of creaming butter. I only use the plastic bowl if I have someone taking something out of the S/S bowl and want to get started on something runny-ish, like a glaze.
Six years later and this is still the best video covering the Ankarsrum out there. Really wish Lynn had a more videos because she clearly gives the details that so many appreciate. I've been looking to replace my KA for a while since the motor is on its last leg and cannot handle more than a kilo of dough at a time and this review was enough to put me at ease with the price tag and order one. Cannot wait for it to get here. Thank you Lynn!
As a user of Electrolux assistent since about 30 years i can recommend to put some vegetable oil in the hole of the roller and back at the swinger arm nut aswell to the knife. Good demonstration.
Holly crap, I am sold! Thank you so much for making this excellent video. You are a great presenter, straight to the point and very easy to listen to. Thank you, Lynn!
At the risk of sounding like a broken record I'm going to say this is the best demo on the Assistent I've seen yet. I've been weighing my options because I've been a hand-bread maker (even the lift-up Kitchen Aid just doesn't get to all the dough and then I have to finish it by hand anyway so why bother. Plus I like 100% rye and that takes muscle which neither the KA nor I can handle! So I'm zeroing in on this machine and getting convinced. Thank you for the excellent demo!!
As everyone else says....this is the BEST demonstration video for the Ankarsrum Assistent! (I wish it didn't cut off partway through the meat grinder demo though). I've been agonizing over whether or not it's worth the cost to buy now vs waiting for my 6 qt KA pro to die (it's still running strong...so it could be a while). This demo seals the deal for me. I'm going to sell the KA while it still has life in it, and use that to offset the cost of the Ankarsrum and several attachments.
Lynn, you did a fantastic job with the explanation of the mixer. When I research for videos to help me decide on a purchase, I always look for this type of video that is not “professionally made” (by some you tubers standards) but it is honest and shows enough details and explanations to help. This video convinced me to purchase the mixer vs. the Kitchen Aid. It is by far the best video on the use of the machine and the accessories.
"Professional" is usually appliance-manufacturer Newspeak to sucker people who think they need COMMERCIAL equipment. While it's true that commercial equipment tends to be more robust, it's usually not necessary, or even optimal, for home use (in addition, it invariably carries NSF certification). KitchenAid used to manufacture very fine machines but even at their best, they wouldn't have been able to knead large batches of bread dough, much less smaller-recipe whole grain dough.
Wow! THANK YOU SO MUCH! I bought this like 8 years ago, and its sits on my counter looking pretty- I never use it! what a shame! Well today I just got inspired. subscribed to your chanel! What a blessing.

I bought this machine and now I know how it works, thanks for the tip,
Thank you to Lynn for a clear demonstration of how to use the Ankarsrum mixer! She tells how to assemble the mixer and how to handle it during use. She makes it easy. Thank you!!
I have just bought a Ankarsrum Assitant and this vid helped me a lot because it is different then other mixers. I owned a Bosh for about 6 months and I just had some issues with it, like dry pockets of flour wether it was bread or cookies. It also had a lot more to clean. Already I like this mixer better. This vid was the best one I could find. I may get more attachments b/c Lynn was so good demonstrating.
Thank you! That is without doubt the very best demonstration of how to use the Ankarsrum properly on the internet. I've just ordered one of these and was looking for halfway decent instructions. Yours is by far the best I have found so far.
Wow, I've been researching this mixer for a while, and just stumbled upon this video; by far the BEST demonstration than anything else I've seen!! I just ordered mine...
I honestly enjoyed your videos too Joan, you're an amazing person for boldly sharing how you used the same machine. There definitely is a learning curve.
The DVD no longer comes with the Ankarsrum in UK and I was advised to look on RUclips. I looked at several videos and this is by far The clearest and most comprehensive. A big thank you for taking the time to make it
Lynn thank you so much for the review of using my Ankarsrum. I have had mine for several years and do not use it enough. Now it is back to work. Happy New Year from Ottawa- Regards Delaney Anderson
Thank you!! True, this is by far the most user-friendly, experience-tested, easily understood video for experienced or inexperienced bakers. My learning curve has been bumpy, as an experienced baker, and Lynn Junk has shown the way to more successful and satisfying work with this beautiful, potent mixer. It's like Lynn is standing nearby offering comments and observations as we move through the steps for all kinds of recipes, all kinds of mixing machine positions. A great teacher, daily user, super encouraging! Lynn comments on all the weird and unfamiliar mixer behavior to point out all is normal. Here ya go!!! We are gonna have some delciious cheesey garlic bread later today! Thank you!!
This is the best Ankarsrum video, Lynn, you do a great job. I have watched many times and learned so many tips. I finally gave in and bought an Ank and wished I had done so years ago. I would love to make the pumpkin, grain mix that you have in video, sound like a perfect Ank recipe!! Thanks for this video, and I will continue to pass the link for many others to watch.
Lynn, this is the best video on this device that exists anywhere on the Internet. You have a natural knack for this sort of thing. I just now subscribed to your channel based on this video. Keep up the great work!
I am going to 3rd this comment, Adam! Excellent and so informative. I feel like I have already used the mixer and this video has given me what I need to make my final decision on a new KitchenAid Pro Line 7 vs this. Ankarsrum it is! Thanks Lynn.
Finally got mine yesterday in Black Chrome. Beautiful! Can't wait to try it out on the weekend and this is where I'll try my 4 loaf of home made bread recipe. Wish me luck but I'm confident it will work out. I have problems with my shoulders and this will be a very welcome helping hand.
Lynn this was a wonderful video....I have had a Magic Mill DSL Assistent for many many years...But have not used it for years. Got it out today and it still works and just needs some cleaning...I was wondering if you would allow us to have your recipes? I would love to try them and thank you again for a very professional video. You are very easy to listen to. Just made my day..Hugs
This is the best review. I knew nothing about this mixer and was intimidated about how it works now I want one. I wish there were written recipes of these wonderful breads and cookies in the video.
wow, fresh milled flour, freshly flaked oats... i love to hear that. i try to cook from scratch as much as possible but you take it to a level that most people have lost an appreciation for.
I wanted to buy Kenwood chef xl elite 1500 W but after watching this video noway. This is much fun and not noisy plus you can touch the doug while it is mixing. Although it is expensive than kenwood, but I will buy mine today. Thank you!
I have just received it today it looks fantastic..I ordered Black but it is not Black it is like DIMGRAY it looks even better. It came with a recipes book for Bread, Cakes and Smoothies.......It looks beautiful and solid and it is made in Sweden :) I bought it with grain Mill package. I am looking forward to try it heavily the coming 2 weeks and I will let you know :)
I bought mine in 1990; thousands of loaves later of 100% w.w. bread, and I still prefer the dough hook. The hoopla about the 'tearing' of the dough is obviously made by people who have never seen commercial spiral or fork kneading. Just a terrific and very different mixer.
Great video and to echo others - the best overall description of the Ankarsrum on the internet. Keep up the great work. Although "you are not a chef" - your recipes look great!
I think it is a good idea to start your bread dough with the roller! If you start with the hook, as I did at first, the machine will just wind the dough around the hook and not much happens....The roller seems to be the most versatile attachment to the machine.
I know this video is several years old, but I just found it, as I said earlier, it is hands down the best video I have watched trying to get enough confidence to even use this mixer. So, again, thank you for that. I would like to ask you if you would please share your recipes. I know you said that this video is not about your recipes, but I am thinking, if I could use yours for my first run, I would already know what the recipe is supposed to look like. I totally understand if you are uncomfortable sharing. Thank you for what you have done already. suzie
Sold. I had a KitchenAid for 15 years loved it...had to buy a new one :-( After 2 years of the same use and I upgraded to a professional model it broke, right after the warranty expired. I make a lot of bread, and Brioche so I am willing to pay the price to have something that will last me another 15 to 20 years.
Omg although this video is old I thoroughly enjoyed it in 2022 I just ordered mine and hope to catch up on the attachments I want im torn between do I get the pasta attachment or the meat grinder first THANK YOU
This is a great video. Please do a video making bread with the dough hook from when you add the ingredients to what the dough looks like as the hook kneads it. Thanks.
Thanks for such a thorough review. I had been wondering if the big bowl could be used for cookies, cakes, etc. and you've shown how it works so well. I have a KitchenAid from 1989 that still works well, but when its time comes, I had been wondering if I should get another KA, or a Kenwood or Ankarsrum. Your review helps very much. Thanks again.
Hello, I have been asked several times for these recipes. I am sorry it so long I'm not even sure which recipes I used. But any recipe works, just use your favorites but remember liquids first! Enjoy!
As I review and compare several of the pricer and high quality home mixers, I have found this video though posted 4.5 years ago, to be the most thorough by far! It shows multiple uses, adjustments, and personal hints while being well documented in the video while being easy to hear and understand as well. THANK YOU (I'm seeing only a clear flimsier looking plastic bowl with the current models; is your white one a replacement or just what used to come with the mixer?)
Thanks for your kind words and glad you find the video helpful. As for the bowl, the plastic bowl was redesigned several years ago. It is very high quality PBA Free Tritan Plastic and I am sure you will be very happy with it.
I have owned 2 KitchenAid mixers since Christmas of 1955. My present one just started mixing with just high speed. So I started looking on line for a replacement when I came across the Ankarsrum! I have been watching several videos on it! Am impressed with it! I don’t make bread very often, mostly cakes and brownies. Was wondering if it would be a wise investment for me?
It's going to be a while before I can afford this but I'm now convinced that this is the mixer I want! Thank you for the thorough demonstration! I'm curious how the flour mill attachment compares to the Komo mill you have in the background. I'm sure the attachment is a great value and probably one I would buy, but I'd like to know if that beautiful mill is something I should aspire to after I buy my Ankarsrum.
There's an online group for mixer owners and some of our members have KoMo mills. I hasten to add that most of us also own Ankarsrums, Bosches, or both. And I agree: this is an excellent demo. I waited years to be able to afford my Ankarsrum but it turned out to be for the best because I got the benefit of several manufacturer's upgrades. groups.io/g/Mixer-Owners
Hello! Thank you so much for such a detailed review of the mixer. I would like to know if the white color of the mixer has yellowed over time and is it white now? I would be very grateful to you for a quick answer.
Hello, this is actually the light creme mixer in the video and the color remains. We have been distributing ffor over 12 years and have never had an issuse with anyone contacting us that the white unit did not stay white.
I have an old machine called a "Ballerup Mastermixer" It´s a Danish machine from the early 80s and still going strong.. It´s the exact same model with the exact same bowl and accessories but with an older design til the botten leyout. Mine comes with a meatgrinder too but only the stainless bowl. I think the plastic with the whipper thing is something new. :D It says "made in Denmark 1981" in the buttom. i belive the design was sold to Electrolux, but i am not sure..
Love this video, watched it more than once! My Ank arrived 3 days ago, beautiful orange color. I know there will be a learning curve as I’m using to primarily hand mixing sourdough bread dough. This video has helped a lot, though most YT videos are yeasted breads, not sourdough. I am determined to master it and hope I get the hang of it soon. Superior machine!
I was under the impression that you knead whole wheat flour doughs less as the bran tends to cut through the gluten strands. Why do you mix yours longer?
This is awesome. I'm still deciding if I should buy this. I have a professional Kitchen aid 7 quart but I get frustrated trying to had things. Does this do cakes as well? Would you use the rollar to mix cake batter?
Thanks for the video. Although I have a solid KA stand mixer, I've been dreaming of the Ankarsrum for a while - just love the funkiness of it. By the way, your teapot at 2:10 is just too cute.
5 years later, I now own an Ank. I can not wait to see what great breads come from it. My Kitchen Aid will now be for cakes primarily as it struggles with certain types of breads.
Hi ..... I have been asked for that recipe before and to be honest I do not a recipe. I have a favor to ask of you. Out of respect can you please remove the time from your above post. I have no control over the translation but would really appreciate no more attention drawn to that closed caption time.. and my apologies to anyone that is offended as that is NOT what I said.
@@lynnjunk4822 Sorry, I didn't see your post sooner. I went you one better and removed the reference altogether. I'd hoped that you could have pointed it out to whoever at RUclips was responsible (which I guess you can't).
HI Sheila, I ground Saskatchewan Grown Hard Red Spring wheat but have done many other grains as well. As for how much wheat gluten I suggest you look elsewhere for that info especially related to the bran/gluten relationship. I love baking bread but am no expert when it comes to that. Trust me many dogs have been fattened up with my flops...lol
I see you have a Nutrimill grain grinder...is it a good buy or is it better to buy the Ankarsrum attachments...or is their a different product you like???
Hi Sam, No that is not a Nutrimill, it is a KoMo Mill. I use both the Ankarsrum Mill attachment and the KoMo at times. Both are great, if you have an Ankarsrum Mixer the attachment is wonderful but does not grind quite as fine as the KoMo.
Awesome video, I acquired this machine a few years ago and didn't know what a great machine it was I'm excited to use it. What other attachments are there 🤔?
Lynn, This was very helpful. Can you advise about adding ingredients by weight? I currently place a KA mixer on the scale, and tare ingredients as I go. Because I bake a great many loaves of bread at a time AND use sticky ingredients (like honey and sourdough starter), I don't want to weigh them in separate containers. The Assistent's bowl is so heavy, and the need for it to be going while flour gets added makes me wonder how to adjust.
Hi Laura, you got me on this one. To be honest I've never tried. If you are on Facebook there is a Facebook group Ankarsrum Mixer Fans USA. A great place for questions and information and people around the world have joined.. Often someone on there will have tried. Sorry I could not be more helpful.
@@lynnjunk1386 May I kick in? Weigh your flour and starter in advance in (sorry) separate receptacles, then (and this is where a scale that can handle a lot of weight comes in handy), weigh all of your liquids--including fats, sweeteners, eggs, salt, dough conditioner--into the Ank's bowl, then start Lynn's procedure. Add half the flour, then the starter or yeast, then keep adding flour like Lynn does until you get the "doughnut." Bear in mind that, due to ambient humidity levels, you might not use all the flour your recipe calls for. Dough that looks "loose" or "shaggy" after its knead and rise is normal--take it out and fold it a few times on a lightly floured surface. I promise it'll come together to what you think dough should be! The few adjustments I mentioned may take a little getting used to but once they become routine, you won't find them problematic. The Ankarsrum handles bread dough MUCH better than a KA, and in larger amounts, too.
I had the same problem with my roller when kneading heavy doughs. I got it fixed by applying a tiny droplet of oil (light machine oil in my case) to the roller pin, so there's less friction between the pin and the roller. It hasn't risen since. You should probably use a food safe oil, but also something that doesn't get rancid over time.
Hola desde Valencia, España. Me podrías decir si ese robot que utilizas en el video hay alguna posibilidad de comprarlo en mi país? Me encantaría poder comprarlo. Gracias.
How is this with making cake batter? I'm so fond of how the kitchen aid creams butter, but mine is TERRIBLE with dough. Really want something that can still do both though.
Ive just bought a very old model. Older than this i believe, Mainly out of curiosity. I tried to attach the roller but find that it just slides down the pin resulting in the roller touching the base of the bowl. Is this normal. Also the roller does not turn. Just the bowl.
I know this video is 10 years old, but I agree with one of the other comments that say this is one of the best videos out there of how to use this mixer. The model is slightly different than what the current one looks like in 2024, but its all still relevant.

Wow, I was mesmerized 😮😮😮😮 Excellent Video, my goodness 😊😊😊😊 thank you for the hard work and effort you put into this. God bless you❤
I think it is a good idea to start your bread dough with the roller!
I have this mixer attachment for the test totally free value 100D, PM me if u r interested.
Why did you stop making videos? You did a beautiful job on this video. I just started milling my own flour and you made my day. Come back to you tube
Omg although this video is old
I thoroughly enjoyed it in 2022 I just ordered mine and hope to catch up on the attachments I want im torn between do I get the pasta attachment or the meat grinder first THANK YOU
This is a great video. Please do a video making bread with the dough hook from when you add the ingredients to what the dough looks like as the hook kneads it. Thanks.
Cool demonstration. Thanks for the video.
KA is best brand of stand mixer!
this machine very noisy
Really pushing my luck here after your fantastic video but any chance of the recipe for your cheesy garlic bread. It looks scrumptious Lynn
Just posed the same query!
When or if you decide to publish your recipes i would love that
This mixer looks fun to use
Brilliant demonstration. Thank you for that!
Wonderful teaching video!
Hello, I have been asked several times for these recipes. I am sorry it so long I'm not even sure which recipes I used. But any recipe works, just use your favorites but remember liquids first! Enjoy!
Haha, now we understand why you had not attached them. Thank you for finally clarifying that. Cheers !
Fabulous - great mixer and fast!
Thank you so much for a great class and demonstration!

Thank you so much for this video, I can not tell you how much this video has helped me. suzie
It says "made in Denmark 1981" in the buttom. i belive the design was sold to Electrolux, but i am not sure..
This was designed 1937 and bought by Electrolux fram a Swedish company in Eskilstuna.
I just got my Ankarsrum and really appreciate seeing how well it works. I made sourdough right away, and it did a remarkable job.
Best all round demonstration of Ankarsrum Assistant.
For recipes that call for the paddle attachement, what do you use?
Love this video, watched it more than once! My Ank arrived 3 days ago, beautiful orange color. I know there will be a learning curve as I’m using to primarily hand mixing sourdough bread dough. This video has helped a lot, though most YT videos are yeasted breads, not sourdough. I am determined to master it and hope I get the hang of it soon. Superior machine!
I have this mixer attachment for free value 100D for the test, PM me if u r interested.
Love from Pakistan 🇵🇰
Thanks 😊
when i watching this i imagine a robot transformer that got punished and had to become a kitchen assistant . except this its a very impressive machine
It was a very good demo i learn alot
Great video. The only thing I’m missing to understand how to use it is the speed. Not sure what speed you were using when making bread. Thanks 😊
Soon after adding the yeast, around 4:30, did you increase the speed? You didn't say so, but the motor sound changes, and again at 6:20.
I was under the impression that you knead whole wheat flour doughs less as the bran tends to cut through the gluten strands. Why do you mix yours longer?
I'm a pumpkin fan -- do you have a video showing that recipe you mentioned in this video?
Sweet! To the point and complete thanks
Excellent tutorial.Thank you!
This is awesome. I'm still deciding if I should buy this. I have a professional Kitchen aid 7 quart but I get frustrated trying to had things. Does this do cakes as well? Would you use the rollar to mix cake batter?
You can use the roller for anything except maybe pie crust.
Thanks for the video. Although I have a solid KA stand mixer, I've been dreaming of the Ankarsrum for a while - just love the funkiness of it.
By the way, your teapot at 2:10 is just too cute.
It looks like a Sophie Conran teapot. www.sophieconran.com/white-porcelain-small-teapot
5 years later, I now own an Ank. I can not wait to see what great breads come from it. My Kitchen Aid will now be for cakes primarily as it struggles with certain types of breads.
mine is still working week by week and its 64 years old... 😇
Lynn, is there any place we can find the recipe for the cheesy garlic herb bread?
Thank you for the demonstration--waiting and excited for my ankarsrum! I wanted to know what kind of wheat you Home milled? How much wheat gluten?
HI Sheila, I ground Saskatchewan Grown Hard Red Spring wheat but have done many other grains as well. As for how much wheat gluten I suggest you look elsewhere for that info especially related to the bran/gluten relationship. I love baking bread but am no expert when it comes to that. Trust me many dogs have been fattened up with my flops...lol
As previously asked, Is there anyway you can please provide recipes for all the demo items? Would greatly appreciate it.
Are you Canadian? Your accent sounds very familiar. This is such a cool machine! Great demo.
I sure am Canadian...Saskatchewan born and raised:-)
Great video. I love my Ankarsrum but my metal pin raises up and comes out when I'm using the dough roller...any idea why please? x
Thank you so much for taking the time to reply with a helpful suggestion. I will give it a try, thank you. I’m glad yours is working okay now 😊 x
Hola desde Valencia, España.
Me podrías decir si ese robot que utilizas en el video hay alguna posibilidad de comprarlo en mi país?
Me encantaría poder comprarlo. Gracias.
This actually very helpful with the camera angle. Thank you for this very informative video!
So when you bring the arm over to use how tight do you tighten the arm screw
Hyvä video....🇫🇮... good video🥰
I'm curious that you do not use the milling attachment that grinds rice to also mill wheat. Would you please comment?
I would love the recipe for that cheesebread 😁
How is this with making cake batter? I'm so fond of how the kitchen aid creams butter, but mine is TERRIBLE with dough. Really want something that can still do both though.
You can absolutely make cake batter in either bowl. I almost never use the plastic bowl.
Ive just bought a very old model. Older than this i believe, Mainly out of curiosity. I tried to attach the roller but find that it just slides down the pin resulting in the roller touching the base of the bowl. Is this normal. Also the roller does not turn. Just the bowl.
