I bought the Ank, and I love it-but I also have friends that bought the Bosch, and they’re equally as happy. But your insights are so interesting to me, that the dough develops differently in each! I’m so glad you share your thoughts with us-I was especially frustrated with window pane, but making sure I add an autolyze step made ALL the difference. Now, it’s so satisfying to watch that gluten development. :-). I used to be young and cool…and now I watch bread dough. LOL

I have both and I like the Ankarsrum better for bread doughs and the Bosch for sweet doughs. One thing hands down is they are both way better than my Kitchenaid Pro. Sadly I have just about every attachment for my Kitchenaid as I've had it for nearly 20 years and it has never failed so it's never going to leave my kitchen lineup.
Yes, I agree with you there! I also still have my old kitchen aid mixer because I have the pasta maker attachment, and some others that I can still use the front drive on.
@@GrainsInSmallPlaces I still have and LOVE, love, love my original Ron Popiel Pasta Maker with all the attachments from when it first came out and I love it for making pasta with first my kids and now my grands. One of my kids permanently borrowed my KA pasta attachment I can't remember when but truth be told I like using my Marcato Atlas better when I need to make volume.
I have both mixers. The Bosch for 8 to 10 years. The Ank for 1 year. Hands down the Ank is the winner for me! The Bosch uses 1200 watts and the Ank uses 600 watts which is really important for me since I’m on solar. The Bosch is hard to get dough out because of the design of the bowl.Cleaning the sprocket on top is not easy and for so people is a deal breaker. The design of the bowl over the years was my biggest drawback. Also having the blender on the base wasn’t a plus for me since I was never going to buy the blender to use. The Ank does have a learning curve. I love the timer and the very slow to fast speeds. The Bosch doesn’t have a very slow speed. It is so much easier to add ingredients with the top completely open. Being able to watch the dough as it kneads is easier. Both will last forever if you don’t melt the top and bowl of the Bosch like I did trying to warm the dough up and forgetting to turn off the oven.
I got an ankarsrum for Christmas! I haven’t had a mixer in 5 years. I’m still learning. that’s so funny I find myself too watching it 😂. I just made your chocolate cake out of your cookbook:) for my husband’s birthday! We all loved it! Thank you for all the help with milled flour 😊

I'm enjoying experimenting with different varieties of grains. I will probably be going with one of these mixers when my Kitchen Aid eventually bites the dust. I had a KitchenAid Pro for many years - it worked well for cakes, but struggled with bread dough. I had my eye on the Ank for many years, but that sticker shock. During the pandemic, I got the Ank right before the price increase. As with many things, I say buy the best you can afford because the cost of replacement/upgrade increases your final price. I say "cry once" and buy what I really want. Prices steadily increase so if you can afford it, but it and have many years of use with it.
I bought my Ank about 20 years ago when I needed to move up to a stand mixer. At that time it was marketed as the AEG Assistent. I looked over and nixed Kitchen Aid because I was just getting into bread baking and most of the models had plastic gears. About 4 years ago I added a Bosch Compact for smaller jobs that stays in one of my drawers. Sadly it’s been discontinued but is a great small machine and I use it a great deal. I looked at the Artiste at that time but wanted something with a smaller footprint. My Ank stays on my kitchen counter. I’ve been very happy with my choices.

I don’t like tilt KAs so I got a lift one and I don’t like that I have to work around it. Love that the Bosch seems so compact and easy to put ingredients into. Still find myself reverting back to a bowl and dough whisk and relying on time to stretch my dough without having to knead it.
Welcome! You do what is best for you! Sometimes, I will also just grab a bowl and go by hand, especially with sourdough. There are times I just want to work with the dough in my hands. I love all the options! Thanks so much for sharing! :)
I ended up just getting a Vevor spiral mixer. Man it makes dough so good! The dough is so smooth and the gluten develops so nicely. Id have loved to get a fancier Italian one, but I cant afford something like that. The Bosch looks nice, but I see a lot of mixed reviews on it. The Ankarsrum seems capable, but not a fan of the flimsy looking whisks and plastic accessories. Not to mention the design seems so odd. Like having to lay it on its side to utilize the attachments. It seems like they could have put a bit more thought into its design.

I’ve had to fix the cog gear once already from trying to use my kitchen aid to make bread dough. I’ve only had it just over a year. It works for small batches, but 20-30 minutes to get it to something close to windowpane stage near overheats the motor 😅 I’m going for the ank when I can afford it, hopefully they still have the salmon colour as my family voted on that one to go with our wooden counter tops and cream cupboards.

Thanks for comparing these! Makes it so easy to send people to you when they ask me questions and I haven’t tried all the things! I do have a question though: what’s the kneading time in your Ank with the dough hook vs the roller and the Bosch? I would expect the roller to take longer (just as hand kneading typically takes longer than a mixer). I have the Ank but haven’t ever used the dough hook since the gentle roller is the whole reason I picked the Ank in the first place.
I rarely use the dough hook, but mostly because it is in a high up cabinet that I can't reach by myself! lol But, when I have used it it is still pretty close for me to the roller ball times, maybe a couple minutes faster.
It took me awhile to buy one and I’m extremely happy with the machine. I’m a retired engineer and I have to say the build quality first rate, every detail has been refined over decades of mfg. I bake two 1 lb loafs a week. Occasionally a big batch of cinnamon buns, the type/size you get at the mall. Highly recommend it.
Have you ever seen how quickly the hook attachment develops gluten on the Ank? Are you talking about just the white rolling attachment or have you also used the big hook? I haven't tried the hook yet and I wonder if it would be a bit faster. Though for me, I don't notice that the Ank takes a long time. It seems like it's always done in like 5-10 minutes. I do run it faster, so I wonder if you could share the speed you typically use, too. Anyway, interesting points! I'm so happy I got my Ank because I really like the way it looks and when I was shopping I didn't see the stainless bowl for the Bosch. That makes it look so much nicer! Thank you for the insight. I have only used a bosch. Unfortunately, we had an issue with the blender attachment. If you dont get the bottom components screwed on tight, it leaks down little holes into the tower. That ruined my motor. Thankfully it was still under warrenty, but I was informed it is a known problem with no solution. I still enjoy using the mixer though!
I get what you mean about the Ank taking longer with the roller. I don't have a Bosch, but looking at the video, the Bosch appears to tear the dough in the way I imagine the Ank dough hook would. Have you tried comparing the timings using the dough hook on the Ank? I'm going to try this out myself to compare.

I watched your other video showing the Bosch machine(going to try out your Kamut recipe 😊) and I see why you love that machine. The paddles move like blunt blades - similar to a Vitamix which also has dull blades but powerful enough the blend to a smooth consistency. You have the best of both worlds.
I have a Zojirushi bread machine that I'll just put everything in and put it on dough cycle. I'll let it sit for an hour after I put it in to let the flour absorb the water, but it usually comes out pretty well. For dough I need to be a little more precise with, I use my Kitchenaid. What is the advantage of one of these machines over those options? Been eyeballing them but trying to figure out what the benefit is if you don't already have something.
I'm still learning with my Ank, but my understanding is that it's extremely gentle with the dough, so it's hard to over mix and it always turns out very tender. It's also very pleasurable to use, in my experience. There's just something about watching the dough come together that's very satisfying.
The main difference is how they knead the dough, you will get a nicer stretchier dough and faster without overworking your machine. The kitchen aid needs breaks between kneading so it doesn't overheat. The bread machine works for the occasional loaf. But, for everyday use, it can take a toll on that too. I hope that helps! :)
The roller really is best with a wet dough, it does a fantastic job with a wetter dough. I rarely use the hook, but mostly that is because I have to keep it in a high up cabinet that I can't reach by myself. lol
I have an Ank and it kneads stiff dough just fine but watch some vids on using it because there is a learning curve. I would say of course it is easier for any mixer to knead wet doughs but the Ank does stiff bagel doughs with the roller. I have not used the big dough hook on it either. It’s a great machine…so is the Bosch.
Nice presentation. When you state that Bosch kneads very quickly, is that on slow setting, or can it be slowed down to take longer, such as over 15 minutes?
Heck, I would love to just be able to afford one of those mixers. The Bosch or the Ankarsrum lol. Both of those are amazing mixers. I've used both when I was in culinary school.
The Ankarsum mixer I’m going to. Get some time this year we can only buy it on line and only. Late last year To Australia and New Zealand I haven’t a mixer but want a good one to make bread
I prefer stainless steel, but the plastic does do a better job at not having the dough stick and grab the sides at times (This happens with all my stainless steel bowl mixers, not just the Bosch)
How is the clean up of the Bosch with that center post? I've been leaning toward the And because of that center post and well its just a beautiful machine! My 15 year old Pro KA is still going strong and doesn't overheat, dad gum it! Also do you think living on the gulf coast and the humidity makes much difference in choosing a machine? My sweet dinner rolls reached a windowpane way before the dough made a ball yesterday. It was kind of strange. Thanks for all the great information!
I have both. The Bosch center can be cleaned on the outside with a brush. The inside is cleaned by flipping the bowl over and unlocking the drive post which pulls out. I run hot water or a bottle brush in the center. Let dry and replace the post. The Ankarsarum is much easier to clean. They are completely different ways of thinking. Bosch is a little easier as it uses the American thought on mixing. Ankarsum is European and there’s a learning curve. Both are great mixers.
@graceandgrowthmedia I haven't had any issues with cleaning the Bosh, the bowl is dishwasher safe as well. The gulf coast can affect the recipes a bit, you may need to add just a tad more flour to offset the humidity. My dough does not always ball up, I just go by the window pane, when it's nice and stretchy I will cover and let it rise. :)
Do you have an idea of the hydration levels they prefer? The percent? That would be helpful as I have to watch that, because of my altitude. It's complicated!
I don't have all the attachments to the Bosch, but just the bowl and dough hook is easy to clean. I did upgrade to a 100% stainless steel dough hook, and that makes it all dishwasher safe as well.
I have the Bosch and it handles everything I throw at it. I can’t justify spending the money buying an Ank too. BTW, does anyone recommend a recipe book that focuses on baking with fresh milled flours?

It's clear that the Ankarsrum is the BEST, but both that and the Bosch take up too much space on my counter and I'm really happy with my Nutrimill Artiste, especially since I don't make enough bread to need anything larger. One thing though is I think the Bosch and Artiste have tricky advertising that lets people ASSUME that their dough hooks are stainless steel, which they are NOT. Nutrimill USED TO sell a stainless steel dough hook (for close to $100) which fits in both the Bosch AND the Artiste. I bought that a year ago and it's working fine. But last I looked they don't even sell the stainless steel dough hook anymore. Odd. I don't have an Ankarsrum but am under the impression that its dough hook really IS stainless steel. Is that true? Just in case I ever find myself in a larger kitchen and with a budget that allows me to get one. I have no problem with it taking longer! The Nutrimill dough hooks are zinc or aluminum alloys that APPEAR to be stainless steel to those without an eye that discerns the color/tone of real stainless steel. I had to look deeply into it to find this out. To me, that's a big deal. I don't mind the plastic thing on those hooks that come with the product. It's the kind of metal that is being used that I have a problem with.
I have the Ank and can confirm the hook is stainless steel. Haven't used it yet though. I enjoy the roller, but plan to maybe use the hook for bagel dough.
I understand where you are coming from, I did purchase the stainless steel dough hook after realizing the same. So, as of 2 months or so ago, they did have the full stainless steel dough hook. Yes, my Ankarsrum does have a full stainless steel bowl and dough hook, but the roller ball is plastic if you are using that.
It is possible that your wheat berries are lower in protein which helps to form gluten, so it may be taking longer. OR if you are doing a larger batch, more dough will take longer to knead (I am talking about 1 batch (to make 2 small loafs) in each mixer.) OR if the dough is too dry it will take a long time to form the gluten (sometimes never).

For attachments Kitchenaide beats them all. But as mixers the Ank and Bosch are the best for bread doughs. Unless u get into the professional mixers.

I had the Artiste and ended up with the Bosch Universal. It's a great mixer and I've been very satisfied. I will admit the Ank is on my wish list.

I get what you mean about the Ank taking longer with the roller. I don't have a Bosch, but looking at the video, the Bosch appears to tear the dough in the way I imagine the Ank dough hook would. Have you tried comparing the timings using the dough hook on the Ank? I'm going to try this out myself to compare.
I rarely use the dough hook, but mostly because it is in a high up cabinet that I can't reach by myself! lol
But, when I have used it it is still pretty close for me to the roller ball times, maybe a couple minutes faster. But, let me know what your experience with it is. :)

I watched your other video showing the Bosch machine(going to try out your Kamut recipe 😊) and I see why you love that machine. The paddles move like blunt blades - similar to a Vitamix which also has dull blades but powerful enough the blend to a smooth consistency. You have the best of both worlds.
I have the Nutrimill Artiste and am very happy with its performance and since I live alone, I have no intention of getting a larger machine.

I have a Zojirushi bread machine that I'll just put everything in and put it on dough cycle. I'll let it sit for an hour after I put it in to let the flour absorb the water, but it usually comes out pretty well. For dough I need to be a little more precise with, I use my Kitchenaid.
What is the advantage of one of these machines over those options? Been eyeballing them but trying to figure out what the benefit is if you don't already have something.
I'm still learning with my Ank, but my understanding is that it's extremely gentle with the dough, so it's hard to over mix and it always turns out very tender. It's also very pleasurable to use, in my experience. There's just something about watching the dough come together that's very satisfying.
The main difference is how they knead the dough, you will get a nicer stretchier dough and faster without overworking your machine. The kitchen aid needs breaks between kneading so it doesn't overheat. The bread machine works for the occasional loaf. But, for everyday use, it can take a toll on that too. I hope that helps! :)

Same for me.
The roller really is best with a wet dough, it does a fantastic job with a wetter dough. I rarely use the hook, but mostly that is because I have to keep it in a high up cabinet that I can't reach by myself. lol

I have an Ank and it kneads stiff dough just fine but watch some vids on using it because there is a learning curve. I would say of course it is easier for any mixer to knead wet doughs but the Ank does stiff bagel doughs with the roller. I have not used the big dough hook on it either. It’s a great machine…so is the Bosch.
The Bosch really does make great dough fast!

Nice presentation. When you state that Bosch kneads very quickly, is that on slow setting, or can it be slowed down to take longer, such as over 15 minutes?
Heck, I would love to just be able to afford one of those mixers. The Bosch or the Ankarsrum lol. Both of those are amazing mixers. I've used both when I was in culinary school.

The Ankarsum mixer I’m going to. Get some time this year we can only buy it on line and only. Late last year To Australia and New Zealand I haven’t a mixer but want a good one to make bread

My bosch has the white plastic bowl. I'm considering buying a stainless steel bowl. What are your thoughts on plastic vs metal bowl?
I prefer stainless steel, but the plastic does do a better job at not having the dough stick and grab the sides at times (This happens with all my stainless steel bowl mixers, not just the Bosch)

How is the clean up of the Bosch with that center post? I've been leaning toward the And because of that center post and well its just a beautiful machine! My 15 year old Pro KA is still going strong and doesn't overheat, dad gum it! Also do you think living on the gulf coast and the humidity makes much difference in choosing a machine? My sweet dinner rolls reached a windowpane way before the dough made a ball yesterday. It was kind of strange. Thanks for all the great information!
I have both. The Bosch center can be cleaned on the outside with a brush. The inside is cleaned by flipping the bowl over and unlocking the drive post which pulls out. I run hot water or a bottle brush in the center. Let dry and replace the post. The Ankarsarum is much easier to clean. They are completely different ways of thinking. Bosch is a little easier as it uses the American thought on mixing. Ankarsum is European and there’s a learning curve. Both are great mixers.
@graceandgrowthmedia I haven't had any issues with cleaning the Bosh, the bowl is dishwasher safe as well. The gulf coast can affect the recipes a bit, you may need to add just a tad more flour to offset the humidity. My dough does not always ball up, I just go by the window pane, when it's nice and stretchy I will cover and let it rise. :)
Does your stainless steel bowl have the center shaft? Im wanting to buy the stainless bowl and found out there are two different types available.
Mine does have the center shaft, the one without the center shaft has a bottom drive kneading mechanism.
The bowl with the center shaft is an alternate bowl for the clear mixer bowl used for cakes, eggs, etc. .
Do you have an idea of the hydration levels they prefer? The percent? That would be helpful as I have to watch that, because of my altitude. It's complicated!
It really depends on the recipe, and wheat berry. I just go by texture and feel.
what about the cleanup, I've heard Bosch has a lot of pieces to clean?
I don't have all the attachments to the Bosch, but just the bowl and dough hook is easy to clean. I did upgrade to a 100% stainless steel dough hook, and that makes it all dishwasher safe as well.
Does the ank mix and proof the dough?
You can proof the dough in the Ank bowl, but it does not have a warming or heating unit.

Owned a Bosch for 3 years. Now I have the Ankarsum. I think the ANK is far superior.
I have the Bosch and it handles everything I throw at it. I can’t justify spending the money buying an Ank too. BTW, does anyone recommend a recipe book that focuses on baking with fresh milled flours?

It's clear that the Ankarsrum is the BEST, but both that and the Bosch take up too much space on my counter and I'm really happy with my Nutrimill Artiste, especially since I don't make enough bread to need anything larger. One thing though is I think the Bosch and Artiste have tricky advertising that lets people ASSUME that their dough hooks are stainless steel, which they are NOT. Nutrimill USED TO sell a stainless steel dough hook (for close to $100) which fits in both the Bosch AND the Artiste. I bought that a year ago and it's working fine. But last I looked they don't even sell the stainless steel dough hook anymore. Odd.
I don't have an Ankarsrum but am under the impression that its dough hook really IS stainless steel. Is that true? Just in case I ever find myself in a larger kitchen and with a budget that allows me to get one. I have no problem with it taking longer!
The Nutrimill dough hooks are zinc or aluminum alloys that APPEAR to be stainless steel to those without an eye that discerns the color/tone of real stainless steel. I had to look deeply into it to find this out. To me, that's a big deal. I don't mind the plastic thing on those hooks that come with the product. It's the kind of metal that is being used that I have a problem with.
I have the Ank and can confirm the hook is stainless steel. Haven't used it yet though. I enjoy the roller, but plan to maybe use the hook for bagel dough.
I understand where you are coming from, I did purchase the stainless steel dough hook after realizing the same. So, as of 2 months or so ago, they did have the full stainless steel dough hook. Yes, my Ankarsrum does have a full stainless steel bowl and dough hook, but the roller ball is plastic if you are using that.

I'm always fascinated when I hear it only takes people 5-8 minutes to knead in their Bosch. Mine is easily double that without exception.
It is possible that your wheat berries are lower in protein which helps to form gluten, so it may be taking longer. OR if you are doing a larger batch, more dough will take longer to knead (I am talking about 1 batch (to make 2 small loafs) in each mixer.) OR if the dough is too dry it will take a long time to form the gluten (sometimes never).
