My pleasure! Yes, you could mill it ahead of time and keep in the fridge for up to 1 week, or freeze for up to 3 months. 😊
Homemade is usually better, in my humble opinion. I am so excited to have the FMF recipe, thank you so much!!!! One thing i usually do differently is to dip the eggplant in flour, then the egg wash and back in the flour.

Ok, so this video a year ago. Do you make your buns now with kamut instead of spelt?
I rotate, and have done both. I will typically grab for Kamut, yes. But, sometimes I will use spelt, especially if I am running low on Kamut.
I mill my own flour for bread. Tastes great but it is too crumbly. What am I doing wrong?

I have an even better way of long term storage for your starter. When you use your starter in and regular sourdough recipe, right before your final shaping and rise you pinch off about a 1/2 cup to 1 cup of the dough flatten a little like a biscuit and put it in a little crock of some sort of good quality sea salt and bury it. Make sure it’s completely covered in salt bottom, top and all sides. Put a lid on it and it’ll dry out and go into a dormant stage until you want to use it. To rehydrate for use you just remove it from the salt and scrape off all the salt and chop it up and add it to warm water let it sit out for a hour or so, strain out the dry bits and use the liquid as your starter. You will need to adjust your liquid for the recipe to accommodate. Then you repeat the process every time you make your bread.

I love that you have been boondocking. That's exciting. In making these roll could I use soft white wheat? Or maybe 3:1 ratio of soft white and einhorn? I want to make these for a gathering. Could I make into rolls? I'm still learning this fresh milled journey.
Yes! We love having the freedom! I would recommend to use mostly a hard wheat for this dough, and most bread type doughs to get them light and soft. With soft white/Einkorn they will be a bit more dense. Neither soft white or Einkorn do well with much kneading. I hope that helps! Happy Baking! Enjoy your journey! I am glad you found me! Apologies if it's been asked and answered before, but is there any particular reason you use the Nutrimill instead of the mill attachment for the Ankarsrum?
I don't have the Ankarsrum mill attachment. But, I really like having a stand alone grain mill, also this allows me to be using both at once when I want to. 😊

I’m so glad I found your channel! Your GISP method is a game changer for FMG! I made your challah recipe and used 70% Khorasan/Kamut and 20% hard white wheat and it was fluffier than I’ve ever been able to get bread with FMG. I had almost given up on using FMG because my bread was always so dense. Thank you so much! I would love to have that mixer but we’re on a strict budget disability monthly check so I have to borrow my daughter’s kitchen aid every Friday to make challah for Shabbat. Keep on making these videos you are awesome!

How long did you knead the over kneaded dough so I don’t do that in my ank!
It can be different each time, but this batch went for 40 minutes.
@@GrainsInSmallPlaces i threw away 2loafs today, i kneaded for 35-40minutes with bosch universal. After bake it just ddnt rise and just as tall as the before bake😢 is it overk eaded or under kneaded. I used speed 2-3. Dough not too hot after kneaded.
You are so talented I enjoy your videos I have a question I do a old recipe on Hardee’s biscuits the recipe I want to convert it over to wheat berry flour I currently use AP with baking powder and salt instead of the self rising flour it called for can you sunset how it best done this dough mix can stay in the fridge for 2-3 weeks it has yeast in it also thanks for any suggestions
You could use my AP Flour blend for this, and mix up the dry ingredients and keep them in the fridge for a week, or freezer for up to 3 months. But, the dough mixed up would probably only last for a couple days in the fridge. Way too much sugar in it. The bread is inedible. Is sweet almost like a cake. Othervwise, receipe is good, results are ok.
You can decrease the amount of sugar in the future, or sub for some honey as well. 😊

I believe the sweet beautiful point is water oil/lard or coconut oil and a little salt. I’ll works for you because of the fat in the milk. White wheat didn’t bubble as quick is the tip wait 30 seconds before first flip. You’re potentially doing the first flip too soon.

Is your ankasarum mixer still taking around 15 minutes or so to get to this windowpane stage as demonstrated in one of your other videos?
I got a new batch of hard white wheat berries, and they were kneading around 8 minutes, then another batch from the same brand, kneading for around 15 minutes. I find It really depends on the wheat berry, hydration, and even the weather! It is a bit different each time. For health reasons I've milled my flour & baked my bread for over 20 years & your recipe is the BEST I've ever made! I even have an ankarsarum mixer that I retired for a smaller kitchenaid after downsizing my recipe & not quite getting the results I wanted. I'm thinking about pulling it back out & trying it again with your recipe/method. The kitchenaid is taking about 15-20 minutes with the 5 minute pauses you described in your video just to get to the early window pane stage with my current combo of hard red/white wheatberries. I'd also like to try your recipe without the additions. Is the texture that much different from the enriched bread with the milk/egg? I just can't get over how much difference the hydration step makes with the gluten development & final texture of the bread. How did you ever find this method?
