I assume it is on some models, although it's probably not the safest thing to do to your violin. What is usually done is people play the bottom 2 or 3 notes before projecting the bow to the top 2 or 1 respectively. This is a must for cello players because the strings are too far apart (usually; I'm sure there are exceptions) for the bow to naturally play 3 or 4 note chords. Depends on the piece and performer, in any case.

depends on the notes and the proximity of distance like G and D are open notes that dont require fingers to play since just the string alone is that note so the player can play the other two strings while including open strings if that makes sense if all notes arent open strings and actually require a finger to be pressed down though, then i doubt all notes can be played dkdm

He had a thing with his fingers that made them very loose and flexible which abled him to do these thing with a slight advantage I believe
