Extra Tall Two Tier Drip Cake- Rosie's Dessert Spot

  • In this tutorial, I demonstrate how to create a super tall drip cake decorated with fresh flowers, meringues ad a sweet acrylic cake topper.

    Chocolate Ganache Recipe:
    250 grams white chocolate
    110 grams heavy cream
    (NOTE: normally when making white chocolate ganache you add 1/3 of the weight in cream to your chocolate. So if you have 300 grams of white chocolate, you add in 100 grams of cream. The reasn why I added extra is to make it extra drippy and also to ensure the consistency of the ganache doesn't change once I add in the gel food colour.

    Rosie...wow this might be my favorite ever. The dramatic black with the drink that I thought looked peach but turned pinky is stunning either day. Love the gold leaf so much and those meringues....and roses...just so perfect. But to then toss on that big huge sentiment topper...just whoa. Gorgeous. What a show stopper. You know I love the over=done style of the Meringue Girls but there is a quiet beauty in this cake that really speaks to me. You have some of the elements of the Meringue Girls but they go straight to full on whimsy and this cake stopped at gorgeous sophistication with a dash of whimsy and I am in love.

    Quick question: Isn't there to much cake for the quite small amount of buttercream? Would it be better to cut the cakes in half to have 8 layers in total?

      +GoldenBuddhaGirl Yes, you totally could. They would come out even taller. It come down to personal preference really. At the bakery where I work for example they have just a cake without any layers of frosting in the middle. When we make extra tall cakes, it's cake on cake without frosting like I have added here. So it comes down to personal preference really :)

      Hey Rosie I wanted to know if you've ever found that adding gel colouring distorts the flavour of the buttercream. I see this americolour black gel and wanted to get the desired colour but it ruined my buttercream giving it a bittertaste. Could that be my buttercream recipe? Or just too much colouring?

      +Christinah Adegasoye Black gel coloring will give your buttercream a bitter aftertaste because it takes so much to get it dark. What I usually do is either start with a chocolate base and then add a couple of drops of black to that, or I make my icing a day or two before I need it, color it, and the color develops as it sits. Black tastes like licorice to me.

    If you use chocolate buttercream it doesn't use as much dye because the original buttercream is darker!

      +Martha Sandison I had this exact thought, it's a lovely cake but chocolate buttercream would have yielded a much better color and that frosting probably tastes pretty gross with all the dye. The dark colors are metallic and bitter.

    You should never put fresh flowers directly on to your cake, specially if they come from a florist because they put chemicals to persevere there flowers. If you do want to put Fresh flowers on a cake, the stem should be covered with flower tape so that no water or liquid from the flower can go into your cake that might contain pesticide or chemicals. Then, insert that stem into a straw or some cylinder container and then inserted in your cake. This way, you don't risk to transfer liquids, chemicals or even pesticides to your cake and it becomes food safe.

      +Liliana da Silva Depends on where the flowers come from, actually. I eat flowers out of my garden routinely and don't worry about them touching my food, because I clean them and also grow them without the use of fertilizers or pesticides (except of course of the manure turned into the soil and biological insect control). You do want to avoid flowers from most conventional florists, but if you know where they come from they can be perfectly safe. Crystalized rose petals are beautiful and delicious!

      People eat petals, like roses but not the stem!The stem keeps all the waters and chemicals safe from the flower. If you put it directly into your cake it will automatically go into your cake. I'm not talking about petals... i'm talking about putting an entire flower with the stem into your cake very different.
      It's better to prevent then be sorry, trust me!

      +Liliana da Silva But she PLACED the flowers on top. She didn't STAB the stem into the cake. Plus there is chocolate ganache that acts like a shell for the top of the cake.
      In addition, if there would be any adverse effects, I'm pretty sure it would be MINIMAL since it's a couple of flowers.Think of all the pesticides in most of our foods...yet we're still living. Our bodies are smarter than we give them credit for.

    Hi. Lovely clean design. By not slicing each cake into halves, is that a personal preference? I always thought a thick tall cake needed to be halved and buttercreamed. Thank you.

      hi, thank you! you can cut them if you like, it comes down to personal preference really. i like it with 4 layers of cake 3 layers of frosting like all my other cakes. It can be done either way though :)

      Hi +Lucette Debono, thanks for your comment! Yes, these cakes were also made using Bakels mud cake pre-mix. I do have a scratch mud cake recipe if you're interested. They come out the same really.

I haven't seen gold leaf being sold in cake stores here in my area...

      +Austin Dayacap haha thank you for the lovely comment Austin ;D I use Buttercream because it is really stable on cakes, it won't melt or shift under pressure like other frostings might. Gold leaf can be expensive in store, although on ebay you can find it at a decent price :)

      +Thanya A thank you! I guess it would come down to the flavour of the cake. I know at work we don't cut the cake in half or fill it because the chocolate mud is soooo dense and BEAUTIFUL it just doesn't need anything else to compliment it. If you ever get your hands on a premix called gluten free mud cake / brownie mix by Well and Good, let me know what you think. It's my favourite of all the quality bakery grade pre-mixes.

      Hi +Dana Walsh, thank you! They are thick because I bake the cakes with foil over the top of the cake tin. This makes the cake rise evenly and taller. it also cooks more evenly :)

    Hi, I love all ur cake designs. I just wanted to ask why the ganache was so thin? I know white chocolate can be tricky but can it be made thicker, or more Opaque? Xxx

    Hi, I want to make something like for a party, but I was wondering how long the cake lasts for and how is it best stored? It's for saturday, so could I make it on Thursday and do I keep it in the fridge?? also it needs to be transported in our car, so a 5 hour journey... Any advice please...

    hi there, I'd love to know, if I wanted to do a cake like this and transport this to a venue, do you recommend stacking it on site or stacking at home and taking it somehow? I plan to do a tall 6 inch and a tall 8 inch on top of each other. thanks a lot!

    also, i didnt get the size of the cakes. .... is it an 8 in in the bottom and a 6 inch on top? if so, how much mixture do you put in each mold to make it that thick?

      +Dora Castillo hmm it depends on the cake mix you are using. For the scratch mixes that I have (the butter based cakes) I times the recipe by 4 (the standard cupcake recipe) to fit into 2 8 inch pans and 2 6 inch pans.

      Hi hun, a naked cake does dry out faster. Buttercream covered not as much and fondant covered is probably the best option for keeping the cake fresh for longer x

      This is a good question +Cakes Cupcakes. I'm considering planting my own flowers to avoid the pesticide sprayed florist flowers. If you can find an organic florist though they would stock naturally reared flowers minus all the nasties. It's hard to find though. Otherwise washing them will eliminate most of the nasties.

    Hi Rosie I tried making one of the mini Easter cakes with the ganache and I used whipped cream instead of the buttercream (because it's too sweet) and the ganache turned out to be a complete disaster it completely slid off the cake wondering what I could have done to avoid this thanks!

      The ganache is likely too heavy for the whipped cream!

      +Rocio G whipped cream does not have the strengh or substance to hold ganache, butter cream does because of the butter wich hardens when its put in the fridge xx

      +Victoria Triepke lol that is a very good question! I think it might leave just a litttle tinge, but nothing too noticable. I have to check myself from now on, I have been making many black cakes lately.
