I used to do that way back in the 80's when I sailed in college. Wasn't nearly as smooth as you.
Rolling tacking was one thing I didn't perfect when I was learning dinghy sailing 25 years or more ago.😢

I don’t understand what the “2 step tack” is and why it would be illegal.
When you have already completed the tack and you are still on the leeward side of the boat, then switch sides and pump. It's like pumping and it's illegal according to rule 42

I ALWAYS forget to ese the sheet before jumping to the other side
That might get you stuck, It's probably the stupidest thing about about a rolltack but it can make a big difference
