    White Mutton Pulao
    Ingredients for Garam Masala Potli:
    Muslin cloth
    Red whole chilies 7-8
    Cumin seeds 1 tbsp
    Coriander seeds 1 tbsp
    Green cardamom 4-5
    Black cardamom 3-4
    Star anise 2
    Cinnamon stick 1
    Ingredients for Yakhni:
    Mutton 1 kg
    Onion (sliced) 1 cup
    Salt 1 tsp
    Garam masala potli
    Water 7 cups
    Shan Ginger Garlic Paste 2 tbsp
    Ingredients for Pulao:
    Oil 1/4 cup
    Onion (sliced) 1 cup
    Black peppercorns 1 tsp
    Cumin seeds 1 tbsp
    Black cardamom 3-4
    Shan Ginger Garlic 2 tbsp
    Boiled mutton
    Coriander powder 1 tbsp
    Cumin powder 1 tbsp
    Salt 1 tbsp
    Yogurt 1 cup
    Mutton stock 5 cups
    Soaked rice 3 cups
    Directions for Garam Masala Potli Preparation:
    1. Take a muslin cloth and place red whole chilies, cumin seeds, coriander seeds, green cardamom, black cardamom, star anise, cinnamon stick and make a potli by tying the knot.
    Directions for Yakhni Preparation:
    2. In a pot add mutton, onion, salt, garam masala potli, water, Shan Ginger Garlic Paste and mix it well. Now cover and cook for 25-30 mins.
    3. Now take off the lid and separate mutton from stock. Reserve the stock for later use.
    Directions for Pulao Preparation:
    4. In a pot heat oil and add onion and cook until light brown. Add black peppercorns, cumin seeds, black cardamom and cook for a minute.
    5. Add Shan Ginger Garlic Paste and cook for 1 minute.
    6. Add boiled mutton, yogurt and cook for 3-4 mins. Add mutton stock and bring it to a boil. A
    7. Add soaked rice and cook until 80% water dries out. Now cover and steam over low flame for 10-12 mins.
    8. Your White Mutton Pulao is ready.

    Cooking time: 1 hour
