This week, we visited Chefs, Co-Owners, and Made In customers Niki Nakayama and Carole Iida-Nakayama of LA's iconic n/naka, a hyper-seasonal restaurant with a 13-course tasting menu and 2 Michelin stars. Despite its inconspicuous locale-n/naka is in a strip mall, flanked on either side by a CPA and a neighborhood pharmacy-the menu follows the traditional structure of kaiseki, a formal Japanese dining style with historic ties to Zen Buddhist monks, imperial courtiers, and samurai elite. In this behind-the-scenes look at one of the world's most illustrious restaurants, Chefs Nakayama and Iida-Nakayama reflect on the philosophy that drives both new Californian cuisine and kaiseki: a reverential devotion to seasonality.
