- At Michelin-starred NYC restaurant The Musket Room, chef Mary Attea draws on her own Lebanese heritage, as well as the ideas of other chefs in her kitchen, to make an inspired winter menu. Here we see her test out a mackerel with citrus vinaigrette, prawn-stuffed tortellini topped with lobster roe, and a play on barbecued pork in Middle Eastern spices.

I haven't seen any recently but I'd like to encourage you guys to explore some more restaurants in the Metro Detroit area as well please :)
Amazing work
One thing that I like and amazed by these restaurants is how the relationship between the chefs and the vendors is so closely related.
What do you mean by vendor? The server or the owner? (not native english :))
@@patr3d33 vendors are the people that sells chefs the food(the fish and vegetables and etc)
@@patr3d33 vendor is suplier to chef/restaurant. They deliver chicken, fish, meat, pork to chef. Have good relationship with your vendor is important because you want your ingredient always available at best quality
Having a good relationship with your suppliers is always good business but i think it's nice to just make friends with people in different branches of a similar field. You get a lot of insight to what's what from each other
In France, Spain and Italy some of the best chefs will wake up very early in the morning and will go directly to the specialty markets to get the first catch of the day, fresh produce, etc etc
This is one of my favorite series on this page. No extra host, and just highlighting the ingredients and process is simply amazing
Agreed. I like watching this type of videos but sometimes the hosts can be quite unbearable. No host is better.
The chef, the passion and the craft. Nothing else.
Removing that "food critic" from the show was the best move they made
me too, some insane talent coming out of this kitchen and such awesome humans.
yep! right there with you! as someone in the industry i LOVE this stuff!
With a smile on her face the whole time, so refreshing.
on screen tho, we don't if she yells or shout when the camera are off. but yes good energy
@@billylee4460 lol
I ate here as a seasoned chef and it was literally one of the best meals I have ever had in memory. Go team.
Legit question. As a chef how hard do you judge or how critical are you when you go to other places? Can you sit and enjoy without picking it apart?
@@corymccarron7587 depends on the situation. I stay pretty calm now, but 10 years ago I’d pick things apart and over analyzed to the point that I couldn’t enjoy myself.
@@ChefBardo right on man. Always important to remember everything is different and just enjoy sometimes
@@corymccarron7587 This comment was a couple of weeks old, but I can say for myself that I think chefs often have a better understanding of what you can expect from different places.
Watching this series always makes me appreciate the craft in cooking more. All the chef's hard work and passion can truly be seen in their dish and It also teaches me a lot about the world of cooking that I have never seen, I really appreciate the series
Very well said
Same here
I wholeheartedly agree with your assessment, very well said
Most all chefs at this level have an Instagram to follow nowadays. I'm finding the differences in their presentation there to be stark where you can see the truly creative ones vs the ones just aiming to meet a standard. Nothing wrong but the schools of thought are important to contrast.
As a chef I thank you 😊
Compared to a lot of the chefs I've seen on this channel, I absolutely love Mary's energy! She is humble, driven, efficient, and best of all: compassionate. I loved the part of her interview where she said she's not a person who responds to yelling, what a great attitude! She deserves all the success this world has to offer. Much love!
Her kitchen is spotless and beautiful. Seems like she has a wonderful staff, too.
she's just a very nice boss
I absolutely love this series and this particular one might be my favorite. Seeing women leading the kitchen, folks showing the utmost respect for each other, and great food. These are the kitchens people need to see and highlight.
Agree. Women have done most of the cooking for generations. It always seemed odd them me that men ran most professional kitchens.
@netflix
Must go as the best michelin star restaurant so far: clean, normal dishes without strange garnishing that doesn't add anything, combined with a chef that really lifts the spirits. Immaculate!
Incredible how skilled the pastry chef is, but also how calm everything is - I think it's great to be well away from the shouting and screaming of old style kitchens - this food looks as good as anything made in the past and done under good conditions.
That looks like a pretty happy kitchen: where the owner does a waiter job, wine director has a tasting part and chef does the shopping. Would love to be involved in such a project. Oh what a nice vibe 😉
I was surprised by that too. Owners too often take a back seat and don't really participate but this one seems to be hands-on. I like that.
@@johndough8219 She knew it was filming day?
yeah. they all seem to respect and value each other
@@Andrewnutrition Looked a bit like that to me as well. Especially how she's hovering in the kitchen during dinner service.
To me it showed so much leadership between chef and owner, When the chef was talking about it being being busy and finished the day and the owner just looked at her shook her head and looked away. 🥸
She’s such an amazing boss!!! The VIP was a waiter who works at that restaurant so gets a free meal but as a VIP I would be so over the moon if I had a boss like that haha
exactly!! and she literally added dishes on to send out to their table.. almost like an omakase meal.
The quality of videography is just adds to the craftsmanship 😃
This is superb. I love how she delivers gold standard food but at same time leading by example and treating all her team with respect. You get the impression the team has fun and has the support of the owner.
Love her last comment. It’s really about the team and putting better people out into the world
Chef: *makes pasta with raised edges resembling a cup shape to hold roe as seen in finished product*
Owner: "i would like to have a better pasta that can hold all that beautiful roe."
The chef seems like she is incredibly knowledegable and very skilled at her job.
Unless i misunderstand what the owner is talking about, it seems like she isnt.
Love the number of Mise En Place episodes coming out recently! By far, my favourite series - gives such incredible insight into the motivation of these great chefs and their incredible dishes! Thanks Eater!
She is such a chill chef. Mise En Place is just the best
This is by far the best cooking series on all platforms. I click as soon as I see a new Mise En Place.
High-end dining experience with such a harmonious atmosphere in the kitchen.
Just perfect
I LOVE the energy of this kitchen; they’re executing at this extremely high level but they’re having so much fun working with each other
The crystal blue shrimp and scampi roe dish looked gorgeous I bet it tastes as good as it looks
It did!
I’m in the cooking business, I’m the number 2 in the kitchen. I cannot do what these guys do. I respect the patience and experience these guys have against regular line cooks. I like the kitchen I work in but the industry is truly tough. That just makes me like it over again with these videos.
The Chef is amazing and creative, would be great to learn from her. The Staff is happy and love what they do which is a direct result of the Chefs true leadership for sure!
I love this one, it all feels so kind, homely and almost 'casual'.
Then you see the food, it looks absolutely top tier.
Beautiful.
I loved this video, it seems almost like a cartoon or a tv show, a lot of high end kitchens seems to be so chaotic, there are some videos were it hard to watch the chefs knowing they are probably destroying their life’s due to their career, I’m not sure this isn’t the case here but the world that is shown in this video seems more tranquil, at least to me.
Awesome personality! Love the Chef ! And the staff looks very professional! Probably a great experience to enjoy a meal there .
Wish more chefs/ cooks had this kind of attitude and compassion for all their staff. You can tell everyone is happy and enjoys being at work
Chefs are known for being volatile and transferring that negativity to their staff. I've never wanted food prepared with that energy. Her demeanor should become the professional standard.
Wow, that chef is a treasure. What a role model. All the best to her!
That blue lobster roe is beautiful.
Very few things in nature are blue. I was amazed!
I LOVE the way Chef Mary expedites her kitchen!! I also just love how much you can tell she cares and respects her team. Beautiful food, beautiful group of people.
The head chef makes me happy.
Looks amazing and I'm so glad there are chefs out there showing people that you don't have to be a complete *sshole to get stunning food out to patrons. It's not 'snowflake-y', it's decency.
@Alban Musa if you’ve tried and failed and it just doesn’t work out, then you let them find a chef they deserve. People who don’t respond well to respect are luckily far and few in between.
“...putting better people out into the world” what a beautiful closing statement more power to you!
Love the fact she says she don't see the point in shouting. In harmony kitchen
Love how the owner wants a different pasta but doesn't elaborate. That's how you you make things happen 👏👏
Never saw Blue Roe. It's gorgeous, and the pasta looked beautiful and delicious. An extremely talented chef who understands leadership. The team is wonderful. YES!
Gotta love watching the Mise En Place series. I always look forward to watching these a lot because as a chef myself, my passion for cooking always gets re-ignited by their passion and inspiration.
Nice to see the owner helping out. ☺️
Did you see the look on her face when Chef said we're finishing up another busy day.

Every chef understands the tone of her voice when she called "two vegans, but anchovy butter is OKAY!"
Love the diversity in the staff.
Vegan, but anchovy butteries okay... I greatly appreciate that making it into this clip. Gorgeous food, great job Chef and crew!
Wow her philosophy of teaching was incredible
This was beautifully chill, seems like a great kitchen to work in. Shouting doesn't really motivate me either, just makes me stressed and constantly feels like i've done something wrong.
I love seeing the passion and hard work these chefs do on a daily basis its wild.
This is probably the chill looking chef I've seen on this channel.
I’m always amazed how the Chef reads off the order, 4,5,6 different items, everyone listens, replies “yes”, and then they all know what their responsibility is, and how how how is it all done at the same time?!? a well run kitchen is like a beautiful dance and definitely an art form, I love these videos.
Did I see the owner running food?? That’s never happened before at Star restaurant
"better people out into the world..." just the right message. bravo! 🙏🏻
Mise En Place is my favorite series. Absolutely love it! Please bring more of it!
Another fantastic episode, highlighting a passionate chef and her team
This woman has got to be kidding me, the bread, the blue scampi, blue roe, the PORK. This is unbelievable!! They are on their way to two stars for sure!!
This has been my favorite episode , She is such an amazing laid back chef.
you guys need to start doing these in 4k
Always appreciate the content. Thanks for sharing
I have had that pasta and I’ll tell you this. It’s amazing!!!!
This was great watching a professional kitchen working together so well. You have a great team chef. I have one more thank you for you chef. Thank you for saying your using a cure on the mackerel instead of saying " dry brine". I'm so sick and tired of saying dry brine, like it's some sort of new technique. It's just only a technique that's been around for a couple of thousand years, curing that is. So thank you for speaking to truth. Cures can be great. Death to " dry brines". ( OK, I went a little overboard on the D B stuff. I'm not a perfect man.) 😄👍
Lol I don't think it's that deep. I think she said cure instead of dry brine because it was fish.
Keep up with these! They are amazing look into the work behind these beautiful dishes
i only can say, i want more more more of this amazing content. Thank you
Just watching these guys work, it's art.
What an amazing group of talented chefs. I am impressed.
This Chef's conduct should become the professional standard for restaurants. Volatility and abuse are rampant in kitchens and this needs to be regulated. Chef Attea proves a successful kitchen can be run without all the aggression and misconduct commonplace in most restaurants.
It's always nice to see people enjoying and being professional at their jobs.
I love the diversity of food looks amazing.
Extremely extra energy all over this place and i’m loving it
I love this episode and the energy in that kitchen. Awesome.
Super Chef ! This is when you run it with passion you can really see in her eyes she loves what she doing.
wow I reallllly enjoyed this episode and that pasta dish with the roe and edible flowers was frigging beautiful 8:05
The Shrimp Tortellini looks beautiful!
Chefs are always creative..either with new stuffs or the old ones. Kudos
Love this video. What a wonderfully kind and talented chef and team. The next time I'm in NY, I have to try The Musket Room!
"not too precious" as you painstakingly tweezer every single element on to the plate and top it with flowers
That duck looked amazing. The dessert loved it. I love a chef with really good ideas and inspires his or her staff and I really like an owner that pushes the chef to do great things
6:37 that duck looks amazing
I wish I could’ve worked for a boss like her during my time in the kitchen, maybe I’d have sticked in the industry for a lot longer. If all the chefs de cuisine are have the same energy and style of leadership like her, the culinary world would definitely jumps leaps and bounds.
agreed but im glad you're out of the industry
I loved her she is such a happy chef
Food looks delicious, chef. Thanks for the video and sharing your process.
Really love this series!
Love the mise en place series
Wow constant and changing, both word in a single sentence. I like that.
As someone who catches Spanish Mackerel here in Florida, I’m so excited to see it on the menu! It’s freakin delicious. Grilled, pan seared, smoked, or oven baked, it is awesome
just love Mise en Place. PLease make many more!!!!
i love these. more, please!!
Im loving the people and place soo much!!
I love this women and her style in the kitchen, well done 👍
Wow that pasta dish was absolutely beautiful
The plating is so beautiful in this.
Is it me or does she sounds and looks like Leslie Knope from Parks and Recs? Amazing chef by the way.
That pastry chef is one extremely talented woman…most people don’t understand how much work goes into being a pastry chef…just marvellous
She has a wonderful attitude.
Fabulous good vibes. Love the 'not too french style', not scary but still exciting. Simple style is always best. And all garnishes are eaten, love it.
Damn that last sentence. Chef....you are a wonderful person. Absolutely wonderful.
Wow, she is an amazing chef! well done chef Mary!
how are they so relaxed! impressive
Chef seems like a fantastic person. Would go there just to support people like her.
Wow Chef Mary! If you're watching this, then I'm inspired by your humbleness. I feel so inspired to work in such an amazing Michelin star restaurant one day. This would be a dream come true.
I believe the pointed cabbage is a really nice arm stand
Amazing chef with an excellent philosophy
At 11:03 owner shook her head when chef said we are going to an end to our busy morning 😂😂😂😂
