  • In this video, you will learn how to make a quick, easy, no bake lemon cheesecake, only taking 45 minutes to make, excluding chilling time.

    No Bake Lemon Cheesecake:
    Ingredients:
    For the base:
    - 250g (18) digestive biscuits
    - 100g butter, melted
    For the filling:
    - 500g cream cheese
    - 150ml double cream
    - 150g icing sugar
    - zest & juice of 2 lemons
    - 2 tbsp. lemon curd, heated in a saucepan
    Method:
    1) Break up the digestive biscuits until they are powder-like, and add the melted butter.
    2) Mix them together, flatten into a greased baking tin, and chill in the fridge.
    3) Add the cream cheese to a bowl. Mix with an electric mixer. Add the double cream, and mix again until stiff.
    4) Add the icing sugar and lemon zest, and combine well with the mixer. Add the lemon juice and mix again.
    5) Fill the chilled base tin with the mixture, and smooth it.
    6) Melt the 2 tbsp lemon curd on the hob until it is a lot thinner. Pour it bit by bit onto different areas on the cake. A swirl effect can be achieved with a skewer, as seen in the video.
    7) Chill for 4 hours, or, for best results, overnight.
