The niche is approaching the 10th round and has taken some heavy shots, but is still standing strong. It is impressive what the Niche was able to accomplish from its beginning.
The thing I really appreciate with the Niche is the low retention and absence of old grounds getting mixed with my grind. This translates into the absence of old sticky oxidized oils in my extraction. I was lucky to get one at a price much lower than anything mentioned in this video. It would be fun for me to see the Sculptor besides a Niche when it is reviewed with espresso burrs.
I am interested in your learned opinion on best dedicated espresso only grinders under $1000? This timemore 78 seems like a potential contender for that title… when they eventually release espresso burrs but I would like to get a new one in the immediate future.
When the kickstarter opens for the espresso models, do you think it'd be smarter to go for the 078S for the bigger burrs that you said look a lot like the EG-1 ones or for the 064S for the wide availability of burrs in that size? (SSP etc). It sounds like there's a day 1 discount on the Kickstarter, so we'd probably have to make the choice before folks had a chance to review.
Hi Lance. I would just like to say that I appreciate the obvious efforts you have made to improve the way you present content. Overall, compared to previous review videos, I felt that this was a lot more organized, focused, and professional, and crucially you did not sacrifice any of your enthusiasm or personality to achieve this. Great work!
I've had Timemore Sculptor 078 for about seven weeks now, and have been trying to dial it in. The first five brews I made with an arbitrary random grind setting of 12, with the motor speed set at the midway point, as it came, at 1100 RPM, were excellent--best I've had in a long time. I'm using a moderately dark roast. But then I couldn't reproduce that. I experimented with different speeds and variation in the fineness, settling on 10 with the fastest speed of 1400 RPM, which made a pretty good brew. But then I remembered you're supposed to season the burrs, so I put 5 pounds of about 7 pounds of older coffee I set aside for that purpose through it, using the coursest or next to coursest settings, and after that couldn't get good coffee at all. I took th the burr out and cleaned it and the one still attached inside and put it back, which didn't help much, and it wasn't that dirty. Eventually after continuous experimentation, and setting it to the slowest speed of 400 RPM, I got good coffee setting it to 9 on the grind dial. But after one good cup that way, next time it wasn't good, so I'd have to go to 8.5 on the dial, which would be good. But then the next cup after that would not be good and I'd have to go to 8 on the grind. This continued that way every two grinds, so I'm down to 6 on the dial. I'm worried if it doesn't stop becoming courser after each run I'm going to run out of finer settings. Maybe this is the end of the so-called seasoning of the burrs, but it had better come to an end soon. Has anyone else experienced this type of thing on their new grinder?
How do you think this compares to the DF83? I know you haven't tested espresso with this yet, but I'm looking for something that can do filter + espresso, and it seems like this will be a strong contender. I'm particularly curious whether the espresso compatible burrs will perform just as well for filters vs the purely filter model. Also curious how alignment was for you out of the box? Edit: Also anyone know about the timing of availability/pricing for US markets?
I think these grinders are really different. The DF83 is a sturdy and heavy animal that it's best for espresso. The DF83 can also do anything else but there are some caveats that can clog the grinder or mix some corse fines when you switch from filter to espresso and ruin your espresso if you don't first purge it. Also I think it's really soon to wonder if the Timemore would get out on its first iteration without problems as the Ode did. Ode is in it's Gen2 and really doing a nice job for the price. Will the Sculptor? On that price I rather wait 1 year after it's out, meanwhile for me for $150 more I have combo: the DF83 and the Ode Gen2 and couldn't be happier! Maybe with the cash I would go for the DF83 + Sculptor combo on 1 or 2 years later.
@@carlosfedericolopezspindol3103 I think DF83 can be good for pour overs too, but declumper tends to make more fines, so modding that would help, also improves flavour clarity a bit.
Do you think there's necessarily a reason to get the 078S over the 064S? The major differences they listed is the 078S has 400W instead of 180W, up to 1400RPM instead of 1200RPM, and obviously the bigger burr size. This is my first stand alone grinder and looking to use purely for espresso.
Dear Mr Burrrrrr man, thanks for another well-thought-out, informative, and enjoyable video. In this video, you compared the TS 078 against the Ode 2, noting the TS 078 provided a superior tasting cup.....can you hypothesize whether the TS 064 would also trump the Ode 2 for filter (appreciating you are unlikely to have tried the smaller unit), or if the TS 078's advantage is solely due to a larger bur set? As a filter drinker who loves juicy fruity, light coffee's, would you take the 064 due to the high number of options, or pay another couple of hundred $$ and go 078 as its just that good and after market options will most likely come? Many thanks Regards J
Hey Lance! Thanks for the in depth review, any chance you'd give some insight into this vs the DF83? Being based in Singapore and having access to products from mainland China the price of a DF83 might even be cheaper, let me know what you think!
Your channel came to my attention because of your recent poll. Taking a look at some videos and I love your energy, really reminds me of my beloved passionate lecturer with a touch of beatbox and silliness here and there. Keep doing the good work sir!
You mentioned using the RDT method for reducing static on the Ode. I have one a V1 with the SSP MP burrs and saw a post/comment somewhere about simply touching the catch cup during the grind. I tried that and it works! Spritzing or putting a couple of drops of water on the beans before putting them in the hopper would almost always make a few beans stay in the hopper. Now, with dry beans, they all get ground and I'm not seeing any fines sticking to the cup or exit shoot. I don't know if it works for everyone but I'm pretty happy with the results.
Thank you for this outstanding, thorough review! Your videos are always fun and informative. So what I’m guessing with this is the Ode SSP will still give you better clarity than the Timemore 78, even though you may like juiciness of the Timemore a bit more?
Well explained. We are testing the 78 right now and have a similar experience. Looking to have it Certified outside of China within a couple of months. Will surely be a hit
Personally, I come directly yo your channel when I have questions regarding grinders and ESPECIALLY burr sets! You are the man, Lance! Bucket list item is to sit with you and chat over a cup of coffee.
Considering getting rid of my DF64 for the 078S...do you think this would be an obvious upgrade or would you just upgrade SSP burrs to the DF64. Torn on what to do here
I usually think of the static as nothing but a nuisance but it's interesting to see Timemore use it to their advantage and essentially use it as a fines collector.
I'm likely going to order the 78 for espresso when it hits kickstarter. I have been using the Breville SGP for almost 3 years now. It works fine but it has always been lacking. This checks off all the boxes. Aesthetic, quality, price, performance. Time to get the credit card ready.
My favorite thing about this video is the shaving piece. Thank you for sharing your coffee expertise and overall awesome personality and humor with all of us. I've learned a lot from watching your videos on how to make better coffees. Hope you are doing well.
Thanks for the excellent review as always Lance. Was wondering if in your experience you think this grinder can grin fine enough for use with a moka pot and/or aeropress. I've seen some conflicting reports. Thank you!
Hi Lance, Thanks for this really comprehensive (as usual) review - I’m in the market to finally replace my 5+ year old Breville SGP and was originally going to go Ode 2 w/ SSP, but this looks to be the better option. Curious as to what settings you’re using for the different filter methods? I brew primarily drip but do pour over on the weekends when time permits. Great review again! Can't wait for the review of the espresso burrs! I think I see a Fellow Opus over your left shoulder! When's the review of that coming? Excited to hear about that as well! ;)
I have a Niche and I am enjoying both the filter and espresso it gives me, I think the law of diminishing returns is very key in grinders above its price in the UK, several "Niche killers" have come up short in all sorts of categories and I think your own highly developed palate means that most of the reasons you find other grinders "better" are lost on me, and most other "normal coffee nerds" like me. Saying that I suffer the same upgradeitis as most coffee nerds so I will join the kickstarter and get a Timeore to see whats what. Might even do a RUclips comparison for other Normies! ;-)
Something I didn't know I needed, nor thought I was in the market for. Lance is the flava Flav of this grinder right here, told us all what time it is.
Thank you for the review. I have had the NZ for over two years. I am now considering a grinder for filter brewing. This is a fabulous option! I normally don't support kickstarters but, this may be something I can't pass up. I hope you can get the other burrs to test. I would love to see how they perform. 😁☕☕
Hi LANCE, did you find on the Sculptor 078 that adjusting the RPM at different scales (just for example, scale 5.5 and scale 12) resulted in opposite changes in grain size distribution? Specifically, at 800 RPM at scale 5.5, the grain size is finer overall and coarser at 1400RPM. Conversely, at 800 RPM at the 12 scale, the particle size is coarser overall and finer at 1400 RPM. Please bear with me if my presentation is not very clear, as I am using Google Translate.
Hi Lance, thank you for another great review. I have a wilfa uniform with ssp brew burrs. I only make filter coffee. I was thinking about the weber eg-1. But the sculptor 078 also looks very nice. It also has a fines collector that the eg-1 does not have. How big of a differance in taste is there, also regarding hitting astringency. Do you miss the fines collector on the eg-1?
You've made me excited for this!!! Thank you for uploading this video :). Thought it would be longer, but this length was just right, for my circumstances tonight (sick kids).
I can't believe I was just looking at this grinder yesterday and you uploaded a video! Great video as always! I see the Varia VS3 in the background 👀, I hope the review for that is coming soon! You're the burr man!
I can't do an espresso comparison but if this burrset is any indication of the care they're taking, I'd take this over it based on a few factors. Motor, fines collector, build, etc.
mr burrman, would love to see the 64mm version do a head to head with same burrs in like the ode and df64. Really see what that fines reduction system does for taste and all that. the day after i ordered my df64 i got an ad for this one, and while i'm happy with my df64, this thing does look Real Nice
Great overview Lance - have you any update on the 78S for espresso and filter use and whether the 64S would be a better option? I typically do 70% filter and am keen to see other options from my Zero
Thank you Lance for this review! I appreciate and please continue to do long format videos! There is never enough information available for consumers spending their hard earned money on coffee gear, expensive or not. 🙏
Great review Lance! Idk if my comment in your poll made you actually consider the lighting of the videos but this seems to be much better from the previous (for me at least :P )
Lance, are the turbo burrs on this grinder able to be aligned, or would I be stuck with the factory alignment? The ghost burrs on the outer edge look like it would prevent me from using the expo marker approach to ensure alignment. Super interested on purchasing one, but don't want to be stuck in a situation with a grinder I can't align. Thanks!
I’m glad we get more and more “affordable” grinders that get closer and closer to the performer of the really expensive ones. I always found it a bit ridiculous the need to spend €1500-5000 on a home grinder, not because I haven’t been guilty of that crime, but I also admit I rather not if given the chance. Obviously such high end grinders do offer a unique feature as fantastic build, precision, low machining tolerance, rpm but no matter how nice that is, it rarely translates into being x number better . It is really as you say diminishing returns in the cup. Even though the 98mm SSP burrs I owned before where fantastic, these where definitely not anywhere near the x price better. I must admit 64mm MP was never my favourite burrs, probably because I had those 98mm, so I opted for something else. But I’m glad to see we now get the benefit of larger burrs in this and the DF83 for a much more eatable price. Honestly I do think it’s a missed opportunity they made this so close to 80mm, has those burrs been 80mm this would had much more of an interesting platform especially as SSP are launching burrs to that.
Hey Lance, you're the burr man. I look forward to receiving my 078 even more after watching your video. I am going to dive deep into your video archives to learn a thing or two about V60 technique in the meantime!

Love your videos, Lance! I just replaced my Encore with the Fellow Ode Gen 2 for pour over. I have a Ureka Mignon Notte/Manuale for espresso. What are your thoughts on my espresso grinder? Is it decent, or not very good? I’d be interested in the Timemore when the right burrs come out if I stand to gain something from it.
lance - do you include the particles that come out the fines cleaner when knocked in your brews? would the brews not be a bit hollow without them like sieving fine brews sometimes do?
Man Timemore really putting themselves out in the market there and better than ever. Looking forward to their quality over quantity approach unlike their generic minded competitors at home. Might even do a RUclips comparison for other Normies! ;-)
Well said! This Niche Killer talk is nonsense!
Niche too expensive for everyone outside UK
Is the 078s a true pour over and espresso answer? I have an Ode gen 2 and was going to buy a niche for espresso…. Wondering if I can go 078S for both?
Something I didn't know I needed, nor thought I was in the market for. Lance is the flava Flav of this grinder right here, told us all what time it is.
Cancelled my ode gen 2 and pre ordered this! 💛
Thank you for the review. I have had the NZ for over two years. I am now considering a grinder for filter brewing. This is a fabulous option! I normally don't support kickstarters but, this may be something I can't pass up. I hope you can get the other burrs to test. I would love to see how they perform. 😁☕☕
The people want the 078s Review! lol we want to see it crush a niche, df83, and p64!
The 078S was announced yesterday. 😁 can’t wait to see your test. Greetings from Germany
Hi @lance. So you favour the Timemore over the Ode Gen 2. Where does the DF83 sit then? Similar price point. Which gives the best result??
So excited for this review! Thank you Lance!
hope it doesn't disappoint!
You're the burr man!
hey burrmen, what do you think about the grinding speed? and what do you think about the 078s for espresso and 064 for pour over? :)
Thanks for the video!
Great ad and nice moustache!
also, is it just me getting 404 on the harrys site?
you ARE the burr man!! ♡ which is why i’m waiting for your take on the O-O MizenOmni burrs before pulling the trigger on them or the ssp cast! 😊
Is the 078 more unimodal than the Pietro manual grinder? Thanks!
Great review! What do you think about this one vs something like the DF83?
I can't do an espresso comparison but if this burrset is any indication of the care they're taking, I'd take this over it based on a few factors. Motor, fines collector, build, etc.
That auger at 11:20, is it aluminum? Being scratched by beans, would it not add aluminum contamination to coffee?
Good catch. Did you find the answer? I'm hoping the flat burr models S may not have it
mr burrman, would love to see the 64mm version do a head to head with same burrs in like the ode and df64. Really see what that fines reduction system does for taste and all that.
the day after i ordered my df64 i got an ad for this one, and while i'm happy with my df64, this thing does look Real Nice
Lance, I just wanted to say that YOU'RE THE BURR MAN!
Great review. Just got my Sculpture 78. What is recommend speed?
Man, I just bought the SSP MPs for my DF64 and I now have buyer's remorse. Thank you sooo much ;-)
Great overview Lance - have you any update on the 78S for espresso and filter use and whether the 64S would be a better option? I typically do 70% filter and am keen to see other options from my Zero
Thanks for the vid! Hope you’re enjoying your time in Portugal. Are we going to get any ‘field trip’ videos? 😊
Awesome! Thank you for the review! Any insight on how this compares to the 64 SSP cast? Or the 80mm lab sweets?
Thank you Lance for this review! I appreciate and please continue to do long format videos! There is never enough information available for consumers spending their hard earned money on coffee gear, expensive or not. 🙏
Great review Lance! Idk if my comment in your poll made you actually consider the lighting of the videos but this seems to be much better from the previous (for me at least :P )
Of course! I take criticisms seriously and we worked on it!
It makes me rethink my next coffee gear shopping. Thanks, Lance!
Thanks!
That's a burrfect review Lance!
Which is better, Timer or Baratza Forte BG Grinder?
I don't use Harry's razors, but I want to now! I'll watch your razor reviews when you start making them! :)
Many thanks Lance.
many thanks to you!
Probably the only ad I've ever listened all the way threw.
Killing it, mate. Just commenting to boost engagement stats ;). Seriously looking forward to seeing your view on the espresso burrs, hopefully they’ll realize you’re the burr man and give you an early peek.
I have no vision of this ever being attainable for me budget-wise but it seems rather sensual. Really dig the footprint, static, mags.
Great review. It's a lovely looking grinder.
Thank you very much for the comprehensive video. Taste wise how does it compare to 1zpresso zp6?
Interested too (as an owner of zp6)
Hello Lance, really like your reviews and knowledge. If you don’t mind, best electric conical burr grinder 300$-500$. Which one. Thanks!
Eureka does a solid job! If you're happy, no need to upgrade!
@@LanceHedrick thanks for taking the time to reply to your comments. It's meaningful.
Thanks Lance for your in depth reviews!
thank you for watching!
best intro and color grading that I've seen from you :)
Love love love timemore products. Very excited about this
Thank you, Lance!
thank YOU
lance - do you include the particles that come out the fines cleaner when knocked in your brews? would the brews not be a bit hollow without them like sieving fine brews sometimes do?
I do not include those bits. They are papery and can be bitter.
Man Timemore really putting themselves out in the market there and better than ever. Looking forward to their quality over quantity approach unlike their generic minded competitors at home. We need innovation and user experience design based on human interaction. They might branch out into something great down the line if they can maintain balance between budget and marketability.
I agree! Really impressed with their stuff lately.
Hey Lance, excited for this to launch in the US. Any idea what their 64S and 78S burrs will be similar to? Will they be aiming for clarity, body or somewhere in between like a cast?
you're the BurrMan ! i drink your words, cause they have clarity, body and soul ! Keep on brewin videos Lance 😉
