    This is a remarkable review from front to back, and there are many elements that stand out but the editing in the intro was top-tier. Truly phenomenal stuff. Using the grinder noises to mix a beat was inspired and the rest of the video carries that fun energy despite the video's more muted presentation. Really enjoyable.

    CORRECTIONS:
    3:31 - The grinder weighs 6.9 kg not 8 kg
    5:54 - If you include the 0 and 0.5 settings it is in fact 37 grind settings
    THINGS WE MISSED:
    - Visually, the RPM knob hidden away at the back is great, functionally not so much as you can't really see what setting you're on. As research progresses on RPM and people start experimenting with profiling, the positioning of the knob will become more of an annoyance. It could potentially be positioned above the start button and have a little more resistance to prevent accidental changes to the settings.
    CLARIFICATIONS:
    - We have confirmed with Timemore that the catch cup is made of an aluminium alloy and houses a magnet at the bottom so it can stick to the magnet on the base of the grinder.

    Thanks for calling out the pain points with the hopper. It's good to get an honest opinion that everyone else glossed over or left out. You also mentioned RDT, but allegedly you're not supposed to use RDT with this grinder because the philosophy of the knocker thing is to catch most or all of the chaff. If you use RDT, you'll allow some of the chaff to bypass the mechanism that is supposed to catch it.
    Since you're so obsessed with retention maybe it's worth doing a quick followup video where you RDT or don't and then try to measure actual retention inside the burrset (and from the knocker) in terms of weight or weight over X grinds

    Wow, your videos are always amazing but this is top tier stuff. Easily my favorite hands-on video on this grinder. The hopper seems to be the only weakness of this and using RDT will probably cause lots of issues with beans being stuck. Can't wait for the 078s coverage.

    I understand you can use the grind knocker as a fines catch for a more consistent grind.
    One uses the beans dry and let static do it's thing. Add a little extra beans, grind them all, pull the hopper and then knock the fines into another container.
    Also I thought the stepless models were for espresso, is this not the case?!
    If it won't 'spro I'm cancelling my pledge.

      When the knocker isn't used there is a decent amount of retention in the chute. It's not all fines and chaff. So knocking that out and discarding it feels both wasteful and unnecessary unless you have a particularly troublesome coffee that's producing a ton of fines.
      Yes both the 064S and 708S are stepless and more espresso focused but can also do decent filter.

    Really great review. I’ve been using my Baratza for a long time. It’s a fantastic grinder, the best for a beginner but it’s time for me to level up. I’ve been looking for a pour over grinder and have been wondering how the turbo burrs compared to the SSP. Thanks for that synopsis. Really great review. Thanks!

    Hi, great review (can we give some credit to the intro please?!)
    Could you maybe tell me the exact capacity of the catch cup? I regularly grind 60g for batch brews and I'm okay with working around the limited hopper size by feeding the beans in, but it would be annoying if the catch cup couldn't hold 60g.

    Would you say the acidity is muted with the sculptor? And is there still decent clarity or flavorn delineation?

      Absolutely not. Super vibrant cups and lots of clarity. The flavour separation is just not as fractured as the SSPs.

One question - do you think he clarity would be improved by twisting the grounds knocker into a different cup, using it as a fines catcher? I've seen some folks who have raved about the fines reduction that produces.

    Their hopper is nice looking, but if it had a zig-zag or spiral path for the beans, it would more or less eliminate popcorning.

      SSP around 8kg and the Turbos around 3kg.
      At the time of making this video Timemore do not sell burrs separately but I’d be very surprised if that doesn’t change.
