I loved your review, Emilee, thank you so much. I didn't back any of the Sculptors but I wonder if this 64S could be my first electrical grinder. It look beautiful, compact and well engineered. Do you feel its 180W motor is enough for the average user that would use it exclusively for espresso? Thanks again for your videos.

I’m sorry. Deadlines had me consolidate thoughts and I shouldn’t have cut the tasting section. I tasted the stock 64s burrs alongside ode 2 stock and ssp MP on a DF 64. Out of them I found I leaned to ode 2 for filter in preference but they weren’t far off. Ssp blew them both out with cleaner cup and more pointed flavors. (I also swapped them in the 64s with ssp and that was preference as well but then you’re spending so much on the grinder and burrs… So only optimal if you already own something fancy for 64mm that fits the 64s) Espresso from stock is quality representation of the coffees but doesn’t offer the least or most flavor separation and pretty much balanced acid and sweet for me.
Glad Jonathan didn't seem conclude based on his EG1 testing that all grinders and burrs will act the same when changing rpm and just act as if it's a slight grind size change. In my experience even with flat burrs I noticed lower rpm generally gives you more flavour clarity and less body indicating less fines potentially or differently shaped coffee grinds I predict if people doing grind analysis are not seeing a difference in grind distribution. Higher rpm generally means more body potentially more bitterness more blending of flavours which seems like less fines to me. One weird thing I noticed recently playing around with Webers unifilter basket with a paper bottom filter (opens up a lot of surface area and needs finer grind size and generally extracts more from the coffee) is that lower rpm with a lighter roast at least was giving me more flavour clarity but also seemed like more acidity or sourness and I wasn't loving the shots as much as higher or medium rpm and I usually preferred lower rpm previously and never noticed that previously. The sourness does seem to die down as the shot cooled though which is interesting.
Oh and at higher RPM shots generally run nicer or LOOK nicer with less chance of noticible channeling, again seemingly indicating more fines or more of a bimodal grind distribution.
too long off youtbue. I'll try to be better. And to answer the Q, I clean them anytime I swap them out. But that's because they stay moderately clean and dont hold too much fines and stale coffee with the rotary knocker.
For espresso its just about 1-2g leaning to 2g. But I use the fines in espresso so its not such a big deal for myself. For filter with S burrs it was around.5g.

For espresso I think it’s optional but it will hold on to almost 2g without rdt if you don’t use the knocker. As for taste I didn’t try that much so I’ll do it today. See how far apart they pull/are.

I got cold feet and cancelled my super early bird for the 078s. I was feeling less and less certain I would like the burr profile with nothing to move to. The 064s would have been nice if it didn’t have a wimpy motor. Also with it being cheaper quality than the 078s and with Timemore being weird about changing the burrs, I wanted something that would surely handle these things. I’m about to pull the trigger on a DF64V
SO many factors. Being able to swap burrs for ssp cast on the 64 is pretty great if that's your thing, though I would lean towards the upgraded 78s version I feel. personally.
More it’s that each grinder plays by its own rules in what effect it has to the coffee. So users will need to figure it out or read community forums for grinder updates
