This is not self sufficiency, because it is not indefinably sustainable as a lifestyle. To be self sufficient, you need to be able to make and maintain all of your equipment, shelter etc. This includes the kayaks, paddles, your clothing, shelter, dry bags, tools etc. What your doing is playing "let's pretend". It is a nice illusion though!
I am Portuguese and 40 years ago I lived a life like this in Mozambique. I will never forget.
