I had used your fruit cake receipe and shared the same with my friends. Also the alle belle and the date walnut cake. So far all receipes that I tried were yum except for tge date n walnut. It got burned at the bottom but other than that it was yum. I think indid something wrong because when I soaked the dates in water it didn't have much of the liquid. I think I must have gone wrong on the proportions. But thank you so much for the receipes. Will definitely be making the walnut cake again.

I would say just add more ground beef. If you really want some additional flavour, maybe substitute with a spicy chicken or beef sausage (like merguez or soujouk), but there really is no substitute for chorizo.

Love the idea of mixing chorizo. However is it Goan sausage or the Mexican chorizo? Unfortunately cannot get Goan sausage in the midwest but the Mexican sausage is available at all grocery stores around me.
You are just an amazing cook and so good at your demos. Very Inspiring. I use bechamel for my fish croquettes, but never thought to use for beef croquettes. Will definitely try them out next time. They look absolutely delicious and easy to make. You definitely need to go big. Btw, the chorizo you use, is it Goan chorizo?

Wendy...would it be all paste...I did try something earlier like this .it was like paste...better still roast the beef and then mince it directly for croquettes

Good recipe, my Mum's recipe is to use channa dal, cooked with the onions, etc. This helps in the binding, tastes good too.

You could use beef roast too and grind it up after it is cooked. It does become a paste, but a delicious one 😋😋

Lyon, It’s a spicy sausage meat that you can get at you grocery store in the form of sausages. I’ve taken out the outer case and used only the meat.
