You can get your butcher to saw up some 50mm chunks of beef bones for you. Roast those off in the oven and put them in your stock in place of the rump steak. (Be sure and get the melted marrow in there as well!) I've made my onion soup this way for years. Oh, and by the bye, I like the Gruyere for my cheese

I was watching this whilst I was in the kitchen cooking the onions for your Potato, Cheese & Onion Bake - it was like 'Smell-O-vision' was an actual thing! The soup looks awesome by the way - thanks for another great recipe.
You might want to try a mixture of onions, yellow, white, red, leeks, and Vidalia if you can find them. Also maybe 50/50 beef and chicken stock. Both of these add an amazing depth of flavor.

Pretty much how I used to make it but I added a good glug of pale sherry at the same time as the stock. I am going to make this tomorrow, however I am going to use casserole steak, and use the beef for a curry for the next night's tea. I'll just use a Pataks Madras curry sauce.
I ;like to use locally produced items for my French onion soup: There's a cheese factory about 5 km from my house that makes a cheese similar to a Gouda. I also use locally grown onions. I cheat a bit and use powdered stock. I've never tried using throw-away beef in the stock.
Great minds think alike once again because I happen to have a lot of onions and was just thinking about this recipe......I am always fascinated as to how low cost recipes were invented and during the French Revolution ( when everyone was starving) The French poor only had onions ( because they last a long time) stale bread and a bit of hard cheese ( because it also stores easily) and this is how they fed masses of people. Omlette is also a French wod and when Napolean had to feed his troops protein ( and meat was scarce) 3 eggs a day= enough protein for a fighting soldier.
this is more of a winter thing tbh but we do like a good soup even in summer lol a bit like mince and tattys in hot wether we are strange like that aye
A classic French Onion Soup will always use beef stock. Usually by roasting beef marrow bones with vegetables and then simmering them in water for 4 or more hours before passing the stock and reducing it to the level required.

Never been one for soup - the stuff my late mother used to make was out of a tin and watery - needed two tins - but mam refused to open any more than one tin - realising that it was not going to be enough to feed us properly, mam, in a bid to make it go further, would add water to it - one of the ingredients of “cream of tomato soup”, “cream of mushroom soup” and “cream of chicken soup”, as the name suggests, is cream - mam said that it wasn’t very creamy at all - that’s to be expected when you add copious quantities of Northumbria’s finest council pop to it - we lived in Middlesbrough, but our water came from Northumberland somewhere - mam would just break some unbuttered bread into it - no adequate understudy for croutons - and that was our entire lunch - sometimes, mam often just served up a tin of mixed veg! As to Cup-A-Soup - one sachet is NOT enough for four people! I bet this soup you’re doing in this video is nice! Best soup I ever had was a cup of pea & ham soup I had on my first full day in hospital after my stroke! Sage and onions? Are you making soup? Or stuffing? At 4:45, I’m sure you referred to Mr What’s For Tea as Mr What’s For Two!

I use Gruyere or gouda and cheddar, I also add flour to the onions when caramelized

Oh yum. I've never put beef in mine just a packet of Au Jus Gravy powder. TY. I use Mozzarella.

I like this because there is no alcohol in it. I don’t like the flavor it gives the soup. I’m eager to try this this winter!

I tend to use thyme rather than sage. The rest of the fam didn't like sage
