That sounds good! The only thing with the canned green chilies is they are a low acid food so you would have to make sure that the pH level was high acid enough for water bath canning. My guess is it would be fine, but it's better to check to be sure. If it wasn't high acid enough with the addition of the canned green chilies, you could add some bottled lime juice or extra vinegar to bring up the acid level. I just bought some pH test strips to start testing this type of thing since I sometimes like to change up a recipe. Note that this isn't an issue with dry spices. You can play with those alll you want.
You're not a goober! Taco sauce is different from your typical salsa in that it's not chunky like salsa. It's tomato based, and smooth. Think the little packets of sauce you get from Taco Bell.
