I prefer the packets of mild sauce you get from taco bell itself, i find the store version just doesn't taste the same because i tried both on my dinner from tacobell and the packets in my opinion are just better, does this taste more like the packets or store version?

I couldn't resist. I make a tacco sauce similar but from scratch. It isn't a commercial copy, more of an authentic family recipe. Really simple, you just clean, and trim a roma tomato, dried chilli peppers, a fresh siriano chili pepper or two, yellow onion, and couple of garlic cloves, and a whole bay leaf, sometimes a beef bouillon cube for extra flavor, or enchilada sauce. Boil in a small sause pan until the raw vegetables are tender. Then throw it all in a blender until smooth. Then just add salt, pepper, to taste. If it's too spicy hot, add a dash of vinegar or sugar to tone it down. If you added a beef bouillon for flavor, and you want to convert it to an enchilada sauce just add a little white flour, or corn starch to thicken it. I typically don't measure anything, I know how much of what to add for my taste, and every batch is a little bit different. I keep it in the fridge, in old washed out jelly jars, and it lasts forever all the spices preserve it so long as it's kept in the fridge. It goes well with any Mexican food dish.

I’m comfortable with the heat level of the TB mild sauce, but a teaspoon of cayenne sounds like a lot of heat. Is the heat level accurate with this recipe? I always end up using too much cayenne for my taste. Maybe I’ll just cut it to a half teaspoon.
I totally agree, 1 tsp cayenne yields a finished product much hotter than taco bell mild. I had a bottle of the real taco bell stuff on hand for a direct comparison. Every recipe online makes the same 1tsp error.
I know I'm late. But you'll want to seal with heat by putting filled bottles in boiling water to heat them up until sterile, then take them out and cap to seal them. Sodium Benzoate is the preservative used in the commercial sauce if you want shelf life. I don't know how much.
Thanks John. I made my first batch 4 months ago. I used a small skinny hot sauce glass bottle that I thoroughly cleaned and filled it up for every day use. The vast majority I put in a glass jar and storage in refrigerator. Every time the small bottle is empty, I thoroughly wash and, microwave to sterilize, and refill from glass jar. My 8yo daughter loves Taco bell. We started off with bean burritos, then started making Mexican pizza, then enchiladas, and a month ago made Chalupas. The chalupas were spot on from youtube recipe. Small batch makes 8 large chalupas.
The flavor is close but not quite there. Taco Bell's mild sauce packet lists dextrose and sugar so maybe that's the difference? Funny most youtube videos have the same recipe. I haven't found a recipe with sugar yet.
Mild sauce for whatever reason tastes the best of their sauces. The others are just hot pepper sauce. The mild has an actual flavor profile. No, I'm not scared of spicy. Diablo sauce is child's play to me. Just flavor wise.. it's the best of their sauces. To the point where IF I buy on the shelf Tacobell Mild.. which is close.. but does NOT taste the same! Maybe it's the packet plastic.. idk.. but it's not. I add Tapatio to give it a bit more kick. Also, for those who are lazy, Old Elpaso enchilada sauce will get you most of the way there.
There's definitely less tomato paste and more chili pepper paste and something very sour and spicy in the original sauce that's not a natural ingredient, but a chemical of some sort. I tried many ways to make an accurate copycat myself, but couldn't even get close. It's either the MSG, xanthan gum or some other sht we definitely couldn't buy on the market that's making this sauce delicious and addictive. Some fast food items you just can't make at home, you have to go and buy it from their stores or the supermarket.

Xanthan Gum and MSG are most certainly on the market; at least in the USA. You've been able to find them in most convenience stores and supermarkets for years.
I had to make a 2nd batch without vinegar to combine it with the first batch in order to offset the over the top vinegar taste. Three tablespoons (are you sure about 3?) of vinegar was way too vinegary for me. It smelled perfect though.
