I haven't finished the video, but the 101 comes from university class numbering! The first number indicates year level, while the second and third numbers are the course numbers. Traditionally, introductory courses are numbered 01, which makes 101 the most beginner/introductory course in a given subject. In this case, the subject would be rice!

@@RieMcClenny So if this were university, intermediate rice could be class number 201 and advanced rice would be class number 301.

I've cooked rice since ever, but this is the frist time I heard about soaking the rice before you cook it. I was hoping that Rie could explain the benefit of soaking vs cook it straight away after washing the rice. Also, I thought washing the rice on the strainer was westerners' thing so I was surprised that Rie did it as well in the video. I always wash rice in a bowl that the rice cooker came with couple of times until the water is clear.

  • @poleosis

I have successfully made onigiri with medium grain rice. However, and this is a big exception, I do not wash, soak, or rinse the rice in any way. That way more starch is released which helps it stick together better. I also only use something like 1.5 cup water to 1 cup rice. As shown in the first rice cooker (though i learned it from alton brown good eats), long grain rice needs more water than medium grain, which needs more water than short grain.

Quick tip for sushi and onigiri because they dry out really quickly in the fridge, you should put them in an airtight container or wrap them up with something airtight (like cling wrap) to keep the moisture in. Learned that the hard way, lol.
