  • Happy Fall! What a coincidence that today just happens to be the first day of Fall! Here are two of my favorite things to make when the air gets crisp and the kitchen gets cozy! Have a fabulous week!
    My Pie Crust Recipe:
    2 cups AP flour
    1 tsp. salt
    combine with a fork
add heaping 3/4 cup shortening, blend wit pastery blender until pea sized.
    6-8 Tablespoons cold water
combine with a fork until dough forms
    roll in flour
    makes 2 crusts
    ___________________________________
    Pumpkin Pie recipe
    4 eggs, slightly beaten
    3 cups canned pumpkin
    1 1/2 cup sugar
    1 tsp salt
    2 tsp cinnamon
    1 tsp ginger
    1/2 tsp ground cloves
    3 cups (2 12oz cans) Evaporated Milk
Combine in order given. pour into 2 unbaked 9" pie shells.
Bake at *425 for 15 minutes. reduce heat to *350 for 40-50 minutes
pies are done when knife inserted into the center comes out clean.
    _____________________________________________________
    Chili Soup
    2 lbs Hamburger, browned
finely chop 1 onion & 2 sticks of Celery. Add to browning hamburger.
    Once hamburger is browned, add:
    1 tsp salt
    1/2 tsp pepper
    1 can Kidney Beans
    2 1/2 tsp chili powder
    1 tsp garlic powder
    1 tsp onion powder
    2 Tablespoons Worcestershire Sauce
    2 quarts tomato juice
    simmer 10-15 minutes .
We garnished with sour cream and cheddar cheese
(I halved this recipe in the video)
    Enjoy!

You should never second guess your self. My daughter had never made a pie from scratch, let alone video it. You're remarkable for your age and how you cook. Lucky husband of yours. So many men work all day and come home to nothing prepared. You're Amazing.❤️

You say so many men work all day and come home to nothing but what about all us women that work all day too and come home to nothing? I don't cook every day after a long day at work so that's probably why this comment bothers me. As I'm sure there's many other women out there that are exhausted after a days work. I may not be a good housewife (keeps up with all of the chores as one should) but that doesn't make me less than as a person and a spouse for my husband.

@@annaaa7988 I am so sorry that I was offense. That was not my intention. I worked outside our home, 10 hour shifts 3 days a week and 2 12 hour shifts. I tried to rely on my crockpot and pressure cooker. Again, I am so sorry!

@Anna R my channel is not a place to downgrade women that do work day jobs, but it is a place to encourage women who choose to be homemakers & housewives. Both choices are commendable, & her comment was not aimed at you or anyone else who works full time.

We take leftover pie dough and make cookies from it. Roll it out, spread over with melted butter, cover with sugar/cinnamon mix, roll up jelly roll style and slice about 1” thick. Bake at 350 for 20 minutes. Amazing cookies and no waste!

I’ll have to try Kathleen making that! My mom would cut dough in triangles and put slice of butter in middle then add sugar and cinnamon. She would overlap all three corners to middle and bake until golden brown. They were so delicious! My favorite of all her desserts.❤️

One of my favorite vids of yours Kim! In answer to what to do with extra pie crust...my mom would make fry bread with it. She heated a couple inches of oil in a pan and placed dough, about 3 or 4 inches in diameter and rolled out about 1/4 to 1/2 inch thick, in oil...turn them over in about 1 min, fry another min. Then she would slather butter and honey on them and sometimes cinnamon ...Yummy!! 😋

Yummo. Everything looks so delicious! With the left over dough my mom would roll it out like a pie crust. Put jelly or jam all over followed by sprinkling cinnamon and sugar over the top of the jelly. Rolling it, then cutting it in slices like rolls. Put in pie pan and bake 350 degrees for 20-30 minutes or until browned. They are soooooo good warm!

My mom always made pie crust cookies from left over dough. You just roll out your dough and put soft butter on it and then mix cinnamon and sugar and cover your dough. Roll up and slice into cookies about one half inch wide. I don’t remember the temp. to bake them. My kids and grandkids love them.

You can throw the scraps of your pie dough on a fruit crumble type mixture or on a baking sheet to bake off by themselves without rerolling to prevent gluten from forming and getting a tough product. The pie dough scraps are nice to have with jam or any other sweet spread, if the pie dough isn't sweetened it's nice with thicker soups as well like to give you a chicken pot pie dunker style side.

My mom would bake half of crust in large cake pan and then add a gravy mixture with potatoes carrots and onions. She would roll out rest of dough and cut into long strips and then criss cross on top of mixture. Us kids called it meat pie because my ma never had a name for anything she made. She would let us kids come up with names. My ma also never owned any measuring spoons or cups just eyeball everything. My ma was self taught amazing cook for us 7 kids. This recipe and her triangle cookie recipe were my favorite! You are a amazing cook and so are your videos and I’ve only watched a few! Thank you for sharing.❤️

My mom always took her scraps and would pat them into cookies and dust them with cinnamon and sugar. And great job! I can't get a crust to turn out!

Quick question...do you can your own pumpkin? I was under the impression it wasn’t safe to can🤷🏻‍♀️. I’m VERY new to canning, but am loving it so far. I grow my own pumpkins, but usually just freeze

A young woman making food in general is always good
Don't get worked up over internet comments
We don't waste any crust, we put it in a zip lock bag pop in freezer, roll it out between parchment (no to little flour) and make another pie crust for pot pie or fried hand pies

Freeze the leftover dough and the next time you make pies pull it out and combine with your extras, then you will get another 2 pie shells you can freeze for another day
