6 Easy Freezer Meals! Grocery Haul & How to Cook Rice!

  • I'm back, and I have another fun cooking video for you! Freezer meals, something every woman loves! Just pull one out of the freezer, pop it in the oven, and you have a stress-free meal! Several of these recipes are my Mom's original Mennonite recipes, and I hope you enjoy them!

    Spaghetti recipe:
    Fry 1 lbs ground beef. Season with salt, pepper, garlic powder, onion powder, & Chopped onions. (whatever makes you happy)
    Add 2 quarts Spaghetti Sauce.
    For the Pasta, Bring a pot of water to a boil, and add salt. Once boiling, Add your pasta and cook until soft. Drain, and rinse with cold water, this prevents the noodles from sticking together!
    Combine Sauce & Pasta and Bake! 350 degrees, or until center is hot.

    Meatball Recipe
    Combine:
    2 lbs Ground beef
    1 lb Sausage
    1 can Evaporated Milk
    2 Cups Oatmeal (quick oats)
    2 eggs
    1 Cup Onions
    2 tsp Salt
    1/2 tsp Pepper
    1/2 tsp Garlic Powder
    2 tsp Chili Powder
    Mix together, form into meatballs, and place in a single layer in a greased pan. yeilds 2 9x13 pans
    Cover with BBQ Sauce. Recipe below:
    2 Cups Ketchup
    1 cup Brown Sugar
    1/2 tsp Garlic Powder
    1/2 Cup Onions
    Heat Sauce & pour over meatballs. Bake at 350 Degrees for 1 1/2 hours.

    Chicken Enchilada Recipe:
    Combine:
    3 Cups cooked shredded chicken
    2 4 oz cans Green Chilies
    1 Cup Chicken Broth
    1 Can Cream of Mushroom Soup
    1 Can Cream of Chicken Soup
    1 Onion
    Mix & fill Tortilla Shells. Cover with Chicken Mixture. Top with Cheese, Bake at 350 Degrees for 30 mins. Makes 1 9x13.

    Chipotle Casserole
    RICE:
    Add 2 cups rice & Several Tablespoons Olive oil to a saucepan. I like to add some freshly minced Garlic, but this is optional. Fry over medium heat until the rice grains become lighter/whiter in color.
    Turn the heat up & add 4 cups of water. Add spices, (Salt Pepper, garlic powder, onion powder) Let boil, stirring very infrequently. The more you stir, the stickier your rice will be. Do not put the lid on. Cook until all of the liquid is dissolved, you can check this by creating a hole in the center of the rice with your spoon, if water pools into the hole, keep cooking the rice. As soon as water does not pool into the center, turn off the heat, put the lid on. You can add Cilantro & Lime if you like those flavors! Let the rice rest, and fluff with a fork when you are ready to serve .

    To Assemble the Casserole, cover the bottom of the pan with Rice, Top with chicken, and then sprinkle drained black beans on top. You can also add Cheese on top! Bake at 350 degrees until center is hot!
    Topping suggestions: Pico De Gallo, Sour cream, lettuce, Salsa, Cheese, Onions, Tomatoes, cilantro

    Chicken Noodle Soup
    Bring 10 cups of water to a boil, and add 10 cubes of Chicken Boullion. (If you don't use Boullion, you can use a chicken base)
    add:
    3-4 Cups shredded canned chicken
    1 Cup Chopped Celery
    1 Cup Chopped Carrots
    add onions to taste
    mince 3-4 cloves of garlic
    salt & pepper to taste
    Garlic powder & Onion Powder to taste
    Boil until veggies are soft. Add Noodles.
    Cook until noodles are soft!
    Garnish with parsley. I like to serve it with warm biscuits!

    Mama rice tip: When making a casserole in the oven, grease a casserole dish, add your dry rice in a 1:2 ratio to water. Season as preferred. Bake for one hour at 350 degrees covered. Works great when you have a couple little ones hanging off your skirts and you can't cook rice on the top of the stove without burning it.

      Yes! I have two boys who are 14 months apart and cooking rice all in one in the casserole has been very helpful. OR if you have an Instant Pot, that’s also a great way to make it that is hands-off!

    That was so incredibly sweet and thoughtful of you to make these quick meals for your friend who is expecting. I can on wish I had been so fortunate. But I still am blessed. My two son's are 19 and 22 and my husband and I are coming up on 27 years of marriage next month!! We made it thank God.
    And the scripture you wrote on the trays for the food was just beautiful. You are a sweet child of the Almighty God indeed.

    I make my own brown sugar.... in the stand mixer combine 8 cups granulated sugar with 1 cup of molasses and mix until well combined. It’s has a better taste than store bought. I can chicken breast and love having it on hand especially when chicken is less than a dollar a pound.

    Thank you for sharing, everything looks so yummy. Thought I'd throw my little bit of advice in as far as freezing. You can get the plastic cutting boards at the dollar tree and use those between your trays in the freezer for stacking😊

    I'm a Mennonite. I do freezer meals too. I'm married to a English man. We live in a English world. Put I keep my Mennonite ways. My three daughters are working on the Mennonite way when my son is keeping the English ways. I homeschool my four kids. I still make all my kids and husband clothes and stuff and all of our food is homemade food and baked goods and more.

    I generally use my instant pot to make rice. Spray with nonstick spray (I like avocado), two cups of rice, 3.5/4 cups water, a tbsp butter, set on rice. Perfect rice everytime. 😊

    I'm Puerto Rican and make my white rice differently. I always cook rice in a caldero. You put water in the pot little less than half way for a smaller serving size with salt and about a ladle full of vegetable oil. When the water starts to boil you're going to put rice in the pot and you wanna put enough in so that there's only a little bit of water on top of the rice. You're going to cook that on high and then when there's a little bit of water left you're going to turn it on low and cover it and keep cooking it until it's the texture that you want. I like my rice to be a little bit on the softer side some people like it to be a little bit more firm.

    I love cooking videos! It is so fun to see how other folks prepare dishes that I am already familiar with as well as see new dishes.
    Just a tip for you, if you put a damp wash cloth or kitchen towel under your cutting board and/or mixing bowl, while you're working, they won't move around so much.

    Yes I love to watch cooking videos thanks for making them I love red rice but I have to try that also I just always put my rice in a pan with a little olive oil and roasted and until it’s a little brown all even The rice And then I have a boil water ready I do one cup of rice and 2 cups of water 2 teaspoons of tomato bouillon A little bit of salt half cup of tomato juice I put mine in a pressure cooker or instant pot for 4 minutes and that’s perfect♥️🤍🖤🤚🏻

    I love your videos! I can’t believe you’re only 20 years old. You put me to shame when it comes to cooking! I’ve never canned anything fresh nor do I cook mostly from scratch. And I’m 63 years old today. lol 😃

    It's def great to cook your rice grains a little first in some fat. I think it keeps the pot from foaming over (with the lid on).

      Another trick to cooking nice rice; Cook it just as you would cook spaghetti noodles, etc. Fill your pot with water and bring to a boil. Add rice and stir just enough to keep it from clumping. Bring it back to rolling boil for 11 min. Do not cover. Drain in colander. Rinsing is optional. Add the salt and spices Clump-free rice and fewer carbs! It is important not to add salt, etc to cooking water. And cook precisely 11 min. It can overcook quickly. Good luck!

    Well I watched the first video on making Sunday supper...took me back to Grandma's, then the garden video!! I know you're WAY WAY younger than me and it makes me kinda sad because of a spinal condition that will continue to get worse, I just can't do any of the things I used to do. I LOVED your garden video it just looked wonderful!! I'm trying but everything has to be in containers which is ok, it actually did pretty well last year but at this moment very restricted to what I can grow. My hubby is a trucker and therefore not home much to build me stuff to grow in😏. Any/all ideas anyone may have for garden stuff to make my gardening easier is greatly appreciated!!! Thank you for being a role model to the younger generation that just isn't like it used to be. Much love🙏❤️🙏❤️🙏
