INGREDIENTS & NOTES
#1 Monday’s Quick Miso Oats
1-2 spring onions, chopped
2 tsp oil
dash of chili flakes
½ cup (50g) oats
1 tbsp flax seed powder
1 tbsp nutritional yeast
1 ½ tsp miso paste
¾ cup (180ml) water, more if needed
1 tsp rice vinegar
1 tsp rice syrup
⅓ cup (50g) edamame, frozen
1-2 handfuls baby spinach
toppings of choice: avocado, chili mayo, roasted sesame seeds, walnuts…
→ serves 1
#2 Tuesday’s Edamame Hummus
1 tbsp olive oil
1 clove garlic, whole and peeled
½ cup (110g) frozen edamame
1 tbsp store bought tahini dip, hummus (OR sub w 1 tsp real tahini)
1 tbsp lemon juice
1 handful of fresh cilantro (or other fresh herb of choice)
1 large handful fresh baby spinach
1 tbsp soy sauce
1 tsp brown rice or maple syrup
2 tbsp oat milk, or if needed 1 tbsp more
also for serving: bread, tomato, bagel seasoning…
→ serves 2
#3 Wednesday’s Cherry Matcha Oatmeal
½ cup (50g) oats
few drops of vanilla aroma
generous pinch of salt
2 tsp flax seed powder
½ tsp matcha powder
½ cup (125ml) non-dairy milk
⅓ cup (80ml) water
2 tsp brown rice
handful of frozen cherries
for serving: white almond butter
→ serves 1
#4 Thursday’s Matcha Toasts
2 tbsp vegan cream cheese (or vegan sour cream)
½ tsp matcha powder
2 tsp rice syrup
optional: pinch of salt, few drops vanilla aroma
also for serving: bread, strawberries, banana sliced, almond slivers…
#5 Friday’s Muesli Yogurt Bowl
(all ingredients were eyeballed)
vegan yogurt
banana slices
strawberries
chocolate protein bar, cut into chunks
granola
oats
ground flax seeds
#6 Saturday’s Chickpea Tofu Toasts
200g firm tofu (7oz)
1 tbsp chickpea flour
1 tbsp nutritional yeast
¼ tsp salt
1 tbsp oil
→ enough for 2 servings of tofu chunks
also:
bread
2 tbsp hummus + ½ tsp gochujang
bell pepper slices
avocado chunks
fresh cilantro, chopped
#7 Sunday’s Blueberry Crumb Muffins:
for the crumb mixture:
150g white spelt flour (or all purpose flour ) (= 1 ¼ cup), if needed 1-2 tbsp more
2/3 cup sugar (130g)
1/2 tsp ground cinnamon (optional)
1/4 tsp salt
100g vegan butter, semi melted (1/2 cup minus 1 tbsp)
for the muffin batter:
250g sugar (1 ¼ cup)
2/3 cup (160g) vegan butter, fully melted
4 tbsp applesauce
1 tsp vanilla extract or a few drops of vanilla aroma
1 tsp lemon zest or 1 tsp orange zest
2 tbsp white wine vinegar or lemon juice
2/3 cup non-dairy milk (160ml)
2/3 cup sparkling water* (160ml)
480g all-purpose flour or spelt flour (4 cups)
4 tsp baking powder
1 tsp salt
1 ½ cups frozen blueberries (225g)
grease 16-18 muffin tins with vegan butter THOROUGHLY
OR use muffin liners, but even then grease the top edges of each mold
you could also rip parchment paper into little squares, wet them to be able to crumble them up, then place them into the muffin tins, grease the top edge of each mold regardless tho
→ yields 16-18 muffins

I was a weekend vegan for four years. My ex was a vegetarian and I’m lactose intolerant and with our work schedule being so similar, and living 90 minutes from one another, we could only see each other on weekends. I subscribed to your channel for meal ideas, but now, as a single guy, I can’t stop watching. Your voice is so soothing, you could narrate a book and I’d listen all the way through. Your taste in music is on point. And the whole vibe of the channel is just so chill and relaxing. I work in a pretty high stress environment with an extremely high turnover rate, though I’ve kept the job for 9 years now. And these videos always keep me grounded. I don’t know what else to say, but keep on doing your thing, Mina and I’ll always stay a loyal viewer. ✌️😊

Seeing the muffins i couldn't agree more for it being simple. I will make muffins for breakfast and sometimes eat on the go. Even my brother who doesn't eat breakfast will eat them if already made. He's quite lazy lol.
these all look v good!! Something I've been obsessed with lately, that sounds super simple but is really good, is a nice thick piece of chewy bread (like sourdough from the bakery) with peanut butter, halved frozen cherries (they have to be frozen!) and a sprinkle of salt. Sometimes I also add some pumpkin seeds for a little crunch! 🍒

Breakfast is one of the hardest meals for me to come up with when I meal prep for the week, as it has to be quick and easy to make but not repetitve/boring as it usually end up being porridge or toast for me, but the recipies in this video are a great variation. Thanks for the inspo!!

Hi Mina! Love your videos! I have to share with you one of my favorite snacks: take a graham cracker, spread almond butter on it, then take about a quarter from a frozen banana, slice it in half lengthwise and add it on top . After that, melt some dark chocolate and drizzle it (generously :) over the banana (You can also add flaky sea salt), wait for a second till the chocolate is hardened. Have a wonderful day❤

I also keep forgetting to tell you, you mentioned a few videos ago (it was over the holidays or right after) about learning a new language and I was super chuffed with myself in the comments for having such a big streak.. Sad news broke the streak - it was 60 days, which is the longest I'd kept at it. It's honestly been so tricky to stick with it while looking after my sick dad but after I broke the streak I've been hiding from Duo.. 😂Just thought I'd update you! Might give you something to giggle about.. 🙈🤣Honestly need to get back into it though, my French was doing so well. I've even met someone who spoke French to me after I broke it. I stunned myself by being able to keep up.

Maybe a video idea would be one about bread spreads? Like the edamame spread :) I made one with lentil & coconut milk & tofu yesterday and i know it sounds like a weird combination but it’s soo yummy!

We have this edamame paste called Zunda in japan and it’s just mashed edamame with a bit of salt and sugar. And we eat it with mochi/ rice cake as a sweet :)

Ich habe die Muffins gerade getestet und noch nie sind mir Muffins so gut gelungen. Sie sind super aufgegangen und waren mega saftig. Allerdings musste ich viel viel mehr Flüssigkeit zugeben da der Teig sich nicht mal verbinden ließ. Ansonsten war alles super.
Edit: Ich habe herausgefunden warum ich viel mehr Flüssigkeit zugeben musste. Ich habe tatsächlich 2/3cup geschmolzene Butter vergessen und diese Flüssigkeit wohl dann mit Milch ausgleichen müssen. Ich habe also unbeabsichtigt fettfreie Muffins gemacht und muss sagen, sind sehr gut gelungen :D
