    ✨Ingredients ✨
    #1 Toasted Almond and Cocoa Müsli Bowl
    ⅓ cup small cut oats (33g)
    A handful of almonds, chopped
    a small handful of raisins
    a handful of whole wheat cereal
    ~1 tbsp puffed quinoa
    1 tsp unsweetened cocoa powder
    oat milk
    raspberries
    serves 1
    #2 Nutritional Yeast Crêpes
    ¼ cup nutritional yeast (20g)
    ½ cup + 1 tbsp all purpose flour (60g + 1 tbsp)
    ¼ tsp salt
    ½ tsp baking powder
    ¼ tsp curry powder
    ¼ tsp cumin or ras el hanout
    ¾ cup water (180ml)
    1 tsp apple cider vinegar
    a bit of coconut oil for the pan, re-grease the pan after you’ve cooked a couple pancakes
    use a non stick pan
    yields ~ 6 small crepes or ~ 4 bigger ones
    filled with avocado, smoked tofu, chives …
    for the hummus sauce combine:
    1 tbsp store bought hummus
    a squeeze of lemon juice (if your store bought hummus tends to be more tangy then no extra lemon is needed)
    1-2 tsp nutritional yeast
    1-2 tbsp water

    #3 Lazy Coconut Peanut Sauce
    1 tbsp natural peanut butter
    ½ cup coconut milk (125ml)
    1 tbsp tomato purée
    ¼ tso curry powder
    a pinch of chili flakes, salt (or to taste)
    ¼ cup water (60ml) or more to adjust the consistency
    add a squeeze of lemon if it’s too sweet for you
    serve with some roasted veggies and or salad or rice yummmm
    #4 Late Night Green Smoothie Bowl
    ½ zucchini, frozen (100g)
    1 frozen banana
    2-3 dates
    1-2 handfuls of fresh spinach
    1 tbsp vegan vanilla protein powder
    1 tbsp peanut butter
    soy milk (I think I added like ½ cup? prob a bit too much since it came out quite liquid-y)
    serves 1
    #5 Banana Peanut Butter Porridge
    1 small ripe banana, mashed*
    ½ cup oats, small cut (45g)
    a pinch of salt
    1 tbsp natural peanut butter
    ¾ cup water (180ml)
    vegan yogurt (I think I added about ⅓ cup = 80ml)
    *if you have a bigger banana, then only mash up half and cut the other half into slices to put on top
    serves 1
    #6 Quinoa Lentil Burgers
    ½ quinoa (90g)
    ½ cup black lentils (95g)
    2 cups water (500ml)
    after the 15-20 min of cooking add 1 cup small cut oats (90g) + ½ cup more water (125ml) - if it’s too dry add more water, in my video I added a full cup which in retrospect was a bit too much I think
    ¾ cup all purpose or spelt flour (90g)
    1/2 tsp salt, more to taste if needed
    spices like pepper, cumin, chili flakes to taste
    1 tbsp miso paste
    1 tbsp white wine vinegar
    add-ins of choice: I added 2 spring onions, a handful of basil, ½ block smoked tofu (100g)
    oil for frying
    For more firm burgers add more oats or flour, maybe ½ cup extra? (this recipe is not a fully fleshed out one, I definitely want to experiment with this one more, trying different ratios and stuff)
    serves 4 - 5
    #6.5 Quinoa Lentil Oat Cake
    same ingredients as for the burgers - just with an extra cup of oats and ¼ tsp more salt. Also a very spontaneous not yet fully tested recipe but it was quite yum haha
    yields enough for 1 8-9 inch cake pan
    keep in mind that I used idk some of the quinoa mixture for the burgers so If you're only doing the cake - you'll probably have to bake it for 10 minutes longer, do 45 min first then check and see how it's doing.
    #7 Avocado Berry Yogurt Bowl
    eyeballed most of the ingredients for this one:
    ~ ¾ cup coconut yoghurt (180ml)
    ½ avocado
    2-3 soft dates
    ~ 1 cup frozen strawberries (~150g)
    1 tbsp vegan vanilla protein powder
    oats and fresh strawbs for the top
    serves 1
    #8 Miso Hummus Salad Bowl
    an ensemble of raw veggies and beans
    a sauce consisting of 1 tsp miso paste, 1 tbsp store bought hummus, 1 tsp rice vinegar and 1-2 tbsp water
    #9 Vegan Nutella & Oat Cookies
    1 cup small cut oats (90g)
    1/2 cup whole wheat flour (65g)
    1 cup regular flour (120g)
    3/4 tsp salt
    1/2 tsp baking powder
    2 1/2 tbsp cocoa powder, unsweetened
    1/2 cup vegan chocolate hazelnut spread (150g)
    2 tbsp cold vegan butter
    1/2 cup apple sauce (125g)
    1/3 cup coconut sugar (55g)
    optional: a handful of chopped almonds, chocolate chips, dried cherries …
    yields about 14 cookies
    bake for 10-13 min at 180C
    #10 Spaghetti w Marinara Sauce
    2 spring onions
    1-2 clove of garlic
    olive oil for the pan
    1 tbsp tomato purée
    1 tbsp balsamic vinegar
    1 tbsp rice or agave or maple syrup
    1 can chopped tomatoes
    ⅓ cup water (80ml), more if needed
    1 tbsp miso paste
    salt, spices to taste
    fresh basil
    vegan cheese
    spaghetti (I cooked 100g for 1 person, but you could use this sauce for double the amount for sure)

      I struggled with anorexia for nearly 2 years and a half. And recovery was tough at the beginning, but really the best way to approach it is to do the totally opposite of what the ED "voice" calls for. I promise you, if you challenge yourself and eat the foods that scare you you won't regret it and will see progress. Hope you are doing better ♡

      i do not exactly have anorexia, but i struggle with low blood (anemia) and im super skinny so its easy for me to get other diseases.. hope ur doing okay! 🤍

    A vegan "snack" I recently found:
    Heat up a cup of plant milk with a teabag of your fave tea. Add cinnamon, vanilla and other flavours/sweeteners of choice. Grab some rice cakes and dip them in the drink. I know it sounds weird but, believe me, it tastes AMAZING!

    Mina, in Argentina we have something called empanadas. As many argentinian dishes, this recipe contains meat. It’s a type of pastry that can be either fried or baked that contains meat or chicken as the filling. I would love to know what filling you would use and how you could turn this into a vegan recipe.

      There is an empanadas restaurant in Berlin called Gloria and their vegan alternatives contain onions, bechamel sauce ("salsa blanca") and either spinach, sweetcorn or minced soy :)

      Podes usar soja texturizada y condimentar con el condimento para carne de alicante que es vegano. Es igual a la carne la textura y el sabor, te lo re recomiendo

    i love vietnamese springrolls :)
    usually just use rice paper, rice noodles, panfried tofu, panfried julienned carrots, cucumber, lettuce, herbs (cilantro, mint, basil) + peanut/almond butter sauce (nut butter + hoisin sauce + water/lime juice)
    feel free to sub any veg u have on hand & adjust sauce measurements to desired taste/texture

    In Turkey, we have a street food called "kumpir". Its basically oven roasted potatoes with filling of your taste. We usually cut the oven roasted potatoes half, add butter and cheese first. And then add canned corn, chopped olives, pickles and sauce on top. I think the more you add different ingredients tastier it gets :)

    Maybe not incredibly creative but Korean bibimbap is always a staple around here. I just omit the meat. It has whatever veggies you want with rice and topped with a gochujang (Korean red pepper paste) sauce. My mix is usually spinach, zucchini, carrot, and mushrooms, and onion.

    Greek mousaka.. Basically it's a layered dish with potatoes, eggplants, mince(when I made it I used soy mince, but lentils would be nice) and bechamel 🤍💙 also Greek souvlaki:pita with gyros(which I made with mushrooms instead of beef), vegetables such as lettuce, tomato, potatoes and tzatziki(soy yogurt, minced garlic, olive oil, shredded cucumber and vinegar)

    i really appreciate you sharing your recipes, they're some of the most simple vegan recipes i've seen! some vegan recipes have lots of steps and require lots of time, energy, ingredients and money, which not everyone has. your recipes are simple enough that they can still be made by people who suffer from low energy (like me) or chronic illness(es) and fatigue. thank you for sharing healthy and easy to cook recipes!

    Heey
    You should recreate this Brazilian dish called coxinha.
    It's a traditional party snack made of a delicious creamy, but crispy on the outside deep fried dough and stuffed with this amazing well seasoned shredded chicken. Some variations also put a creamy cheese that we call catupiry (it's like cream cheese, but not sour).
    The vegan version is usually made out of jackfruit but I've also seen people make it out of palmettos, mushrooms (those that can be shredded easily) and banana peel.
    Hope you like the idea, I'm sure you won't be disappointed if you try it.

    Hey Mina! I think you should try the greek food "yemista" , it's basically stuffed peppers and tomatos with rice and herbs , baked in the oven with potatoes on the side. It's a greek favorite , (not to me personally, I think it's really tasty but not one of my faves) and it's a dish you can find in any greek traditional tavern (vegan tourists in Greece probably know what I'm talking about haha ) There are recipes online but you can also put your personal twist in the dish if you feel like it, we all know what a creative soul you are! :)

    You should make gazpacho! It's a Spanish tomato-based dish that is soupy and served along with bread. It's very delicious and healthy. The dish originates from Andalucía, the south of Spain where my family is from. It's a staple dish that is served cold as a refreshing lunch during the hot summers. Please make this!! I'm sure you'll love it

    Vegan Pesto [also gf]
    Ingredients:
    3 packs basil
    spinach
    lemon juice
    lemon zest
    lime juice
    lime zest
    olive oil
    nutritional yeast
    cashew parmesan cheese or cashew cheese spread/sauce
    seasonings I use garlic powder, Italian seasoning, salt, and onion powder
    half avocado or vegan cream cheese for spread for drizzle leave out
    minced garlic
    sunflower seeds
    How to Make:
    Take all the ingredients except the sunflower seeds and put in food processor. Blend until smooth [or drizzly]. Then, blend in sunflower seeds until it gives a nice crunch.
    How to Store:
    Put in a mason jar for the spread or use a washed chocolate [or caramel or strawberry] sauce container for the drizzle. Store in fridge.
    Uses:
    Spread on toast, take dinner rolls with the spread and shredded vegan cheese then cook in broiler, put the drizzle on top of vegan pizza [or use the spread kind in place of sauce], put in pasta instead of tomato sauce, or on tofu or really anything!!!!!!!!!!!!!!!!!!!!
    Please try this in a video its so good its my go to sauce for everything and its soy free, gluten free, nut free and vegan of course! It took a long time to invent this recipe try out its uses and type it up so it would mean a lot to me if you used it but if not that's ok!

    This time it's especially lovely cause of the "living alone" theme. I'm in my mid 20's and will finally move out soon for the first time. I look forward to it but also feel so SO scared and uncomfortable about the change (probl. normal). Especially cause I'm so close with my mom. So seeing you being comfy in your home makes me feel less scared, thanks so much for that ;__;

    Hey!! Please try making "Gemista" 🍅!! It's a recipe we make in Greece 🇬🇷 mostly in the summer because of the frest and flavorful vegetables! It's tomatos and bell peppers (some people also use eggplants, zucchini) filed with a mixture of rise and herbs and potatoes all around baked in the oven! There is a recipe with meat too but try the vegan one! Also with feta and fresh bread (also swap for vegan 😊)!!! Please try it !!! It's a very family type food and you will love it i am sure !!! ❤️❤️

    You should try brazilian brigadeiros, it’s basically vegan condensed milk (or plant milk and lots of sugar), cocoa powder and a bit of butter, then scoop into little balls with sprinkles

    Hi, just here to tell you I tried your protein bar recipe from a few videos back, the only thing I changed is that I used vegan protein powder in hazelnut flavor instead of vanilla, and girl I'm here to thank you because this can absolutely become my favorite protein bar recipe. Love love love it, soooo easy and delicious 😍

    Country's food idea: toad in the hole? It's a British traditional dish - basically sausages baked in a Yorkshire pudding batter (140g plain flour, two eggs and 175ml milk). Would love to see the vegan version! Xx

    - 3/4 cup any milk
    - 2 Tbsp Coconut milk or coconut coffee creamer
    Just mix all the ingredients till the milk is kinda like slush. i don’t normally mash the blueberries or anything, but i’m sure you could! it’s sooo good!!

    You can try Completo italiano, it is a typical chilean junk food😜 so simple to make! It is a hotdog with tomatoe and avocado with mayonaise on top, you need the following ingredients:
    -Hot dog bread
    -1 vegan sausage
    -tomato cut in cubes with a little olive oil and salt
    -some mashed avocado
    -vegan mayo
    Assemble like a hotdog, first putting the tomato and cover with mashed avocado, then put some mayo on top!!
    You can add sauerkraut too, its called chucrut here:)

    I live on one of the ABC islands, Curacao, in the Dutch Antilles. A local dish we have here is “Bonchi Kòra Stoba” which is a red bean stew.
    It usually has salted beef, pork tail and other meats in it. It also has plantains and carrots in it and I think a few other vegetables but idk I don’t remember.
    When my dad makes it for us he gives me the base of the stew without any of the meats in it and it always feels like there’s something missing. Maybe you could use seitan?
    So if you could make this that’d be really cool.

    You should try to make vegan Turkish Lamacun or Pide, both are somewhat like a pizza. My mom makes them for me but I don't have the recipe

    In London there is this vegan shawarma meat by a brand called Vivera I've been making this really tasty wraps for lunch:
    fry up the sharwama in olive oil, adding chopped spinach
    chop black olives, cucumber and put those in pan at end
    in another pan heat an italian flat bread or a tortilla wrap
    spread wrap with vegan mayo / hummus / chilli sauce - what you like
    add soy toasted seeds too
    then add the the sharwama and veg mix and serve
    Seasoning: mint, lemon juice, SUMAC and za'atar
    could substitute sharwama with smoked tofu or capsicum peppers or courgettes
    to make it more filling add scrambled tofu

    My family's from South Africa and I'd love if you veganized some traditional dishes from there!! The big ones my family liked are bobotie (meat and egg casserole) and melktert (similar to a buttermilk pie). They might be hard to veganize but it would be so cool to see what you come up with!

    tofu for breakfast// my fav
    you will need;
    > half a block of plain tofu (i chop it in cubes)
    > some butter for frying
    > spices ( i use BLACK SALT!, pepper, paprika, garlic)
    > half of an onion
    > a couple of little tomatos
    so firstly, chop up the onion and fry it, add the tofu ( press the water out of it first), add the spices, fry as long as you'd like; put it with the chopped tomatos in a bowl or on a plate and enjoy! i also like to toast up a bread roll and spread some bread on it and yeah it's really fast and simple yet so tasty

    Hey there:) there is a cool vegan dish in Hungary called paprikáskrumpli. Put oil in a heavy bottom pan and fry up some onion chopped paprika and caraway seeds. Soften the onions while stirring it sometimes then take the pan off the heat completely and stir in the paprika powder (you always do it off heat as the paprika powder could burn easily and turn bitter).
    Put it back on the heat and add the potato cubes, the half tomato chopped and stir it well so that the red oil would cover the potato. Pour in cold water just to cover of potatoes. Add salt. pepper and the parsley (the parsley we use without chopping and remove it from the pan after cooking). Bring it to the boil then turn the heat to medium and simmer it for about 20-30 minutes or until the potato is cooked. Adjust seasoning if needed.And thats it:)

    A romanian vegan dish: rice and vegetable rolls in cabbage leaf (sarmale)
    Ingredients:
    Rice
    Carrots
    Onion
    Mushroom
    Sunflower oil
    Marinated cabbage leaf
    Salt
    Pepper
    Recipe:
    Thinly chop the carrots, onions and mushrooms.
    In a pan put some oil (on medium-high heat), then the chopped onions, add salt and pepper and stir occasionaly. After about 3 minutes add the carrots and after 3 more minutes add the mushrooms. After everything starts to fry up add the uncooked rice, add some salt and pepper, stop the fire and let the mix cool.
    After the filling is cooled take your marinated cabbage leaves and lay them flat, then make the filling into a roll on one edge of the leaf and roll it and make sure the ends are tucked in. Repeat this until there is no filling left. Add the rolls neatly into a pot and put the left over cabbage leaves over then add some water just bearly enough to cover everything and let it cook on medium heat until it boils.
    And you’re done! You can serve this with some unsweetened plant based yoghurt on top!

    I don’t know if this is originally a Portuguese dish since it’s literal translation is “little French” 😂 but try recreating Francesinha! It’s like a very large sandwich with an AMAZING sauce and fries on the side.

    Hallo Mina! great vid :) Next time you make crêpes definitely try the combo of sugar + lemon; it's divine!!! For your next project, try to look into pierogies, which are a very popular dish in eastern countries such as Poland or Ukraine... it's also fairly easy to make, and with a lot of vegan options!

    You can try this Nigerian snack. Its called Puff Puffs
    Its a deep-fried, ball-shaped (if you can make it ball-shaped) snack that can be eaten with some dusted icing sugar or with some savoury sauce
    Ingredients (1 serving) (about 9 puff puffs)
    100g all-purpose flour (I sometimes use 80g all-purpose and 20g oat four for a slightly healthier one)
    25g sugar (adjust to your preference)
    5g yeast
    80ml warm water
    sprinkle of salt and cinnamon/nutmeg to taste
    Vegetable oil for frying
    Some paper towels (to soak up the oil when the puff puff is done frying)
    method
    -put the water and the yeast in a separate bowl and set it aside for the yeast to activate (about 5-10 minutes)
    -add the flour, sugar, salt, and cinnamon to a separate bowl and stir to combine
    -then add the water and yeast mixture to the dry ingredients and mix till it's thoroughly combined (it should be like a paste texture)
    -Leave aside to rise in a warm place for about 45 minutes to an hour (or until doubled in size)
    For frying
    -Pour vegetable oil (Or any oil of your preference (except olive oil)) into a deep pot until it is about halfway to the top of the pot (or deep enough to fry the dough) and wait for it to heat up. I usually place my heat on high.
    -Scoop the dough using a scoop ( i use my 1tbsp measuring spoon to scoop the batter) into the oil. You want to make sure you're doing it gently to avoid the hot oil splashing.
    -Fry the ball on both sides till brown (should take about a minute maximum if oil is hot enough)
    -scoop it out with a slotted spoon and place on some paper towels to soak up excess oil
    -Repeat till all the batter has finished

    1.Cold crunchy grapes dipped in chocolate spread (you can put them in tiny bowl together).
    2.Salt and vinegar rice crackers with peanut butter spread, chopped banana and a drizzle of honey as toppings (toasting the cracker is optional).
    3.Chocolate spread on grain or rice crackers.

    for your next video i have two recommendations! the first is shakshuka, its a middle eastern dish thats basically just eggs cooked in tomato sauce (i've heard of people using silken tofu to recreate this!) and the other is ceviche from south/central america. my family makes it with fish but other countries use shrimp and seafood. its just fish, lemon juice, cilantro and some other additions! i used to love these foods when i was younger!!

    where do you get the raisin bread from? I used to love it but wasn’t able to find a vegan version 😭 for your next video, I’d suggest you try out Borscht which is originally from Ukraine but is eaten in most soviet countries.
    This is my moms recipe, enjoy✨
    You’ll need:
    half a head of White Cabbage
    2 beets
    1 large Paprika
    few potatos (I love potatos,so I put a lot)
    1 large onion
    2 garlic cloves
    1 pack crushed tomatoes
    vinegar to taste
    2 big bay leaves
    Salt + pepper
    vegetable broth (enough to cover everything)
    Smetana
    1. Cut onion, cabbage, paprika, potatos and beets into bite sized pieces.
    2. using a big pot, add oil, Cook onions and paprika over Medium heat, add bit off salt to make them soften faster
    3. add the rest off the veggies, ne need to fry them
    4. add the liquids, 4 black pepper corns, 2 bay leaves. Simmer on low heat for 30 min
    5. almost done. Add 2 crushed pieces of garlic. Vinegar and salt to taste.
    6. Serve with a heep of Smetana (Crucial don’t skip this one!!) Vega cream work’s amazing for this

    I live in canada but I’m Pakistani. Can you try to make a vegan Haleem? That’s my favourite Pakistani dish. It’s made from lentils and wheat barley, fried onions and water cooked with a bunch of spices for 1-2 hours (stirring frequently so it gets sticky/stretchy) and served like a stew with lemon juice and crispy fried onions. You can look up a recipe for the exact taste too if you aren’t sure. This is my favourite dish and it’s extremely warming, hearty and comforting. Another dish I love is falooda which is like a parfait/custard thingy and is like the best thing ever. The first layer is sewiyan(thin vermicelli noodles, usually at Asian markets) cooked in milk(almond or oat works) and sugar and thickened into a pudding. The second layer is a custard with rose water/rose syrup with berries of your choice. The third layer is a basil seed pudding. The fourth layer is fruit flavoured jelly/jello. And the last layer is ice cream. This is served in cups like a parfait and the layers can be repeated as much as you want. I prefer the ice cream to be pretty melted when I eat it but whatever you like. I hope you try these!

    You should definetly try to recreate "gemista" is a traditional vegan Greek dish it's basically stuffed peppers tomatoes zucchini eggplant and even potato with a lot of veggies and rice baked

    You should try khichdi or chana dal (split chickpea lentils) for an Indian dish! Both of them are something very basic to Indian cuisine. Let me know if you want the recipe for any of them!
