Try homemade honey mustard dressing. I still use some Duke's (the only mayo in my book), maybe 2 parts honey mustard and 1 part mayo. Really good option to traditional. Don't forget the iced tea. 🙂
I love chicken salad. Haven't tried it with almonds, but I've put dried cranberries in it. I've also put it on toasted bread with a bunch of cheese sprinkled on top and then under the broiler for a few minutes. Hope you're having a great Saturday
I always pull pull out of the veiny things, too. It's horrible to bite into. I use pineapple tidbits, cashews and green onion in my chicken salad. I'm allergic to almonds and it is so yummy! Serve it on a crescent roll.
This brings back a wonderful memory… my sister and I would travel to your part of the country for vaca… we always stopped for lunch at a favorite roadside picnic area half way through the trip… we packed chicken salad on croissants with cantaloupe for dessert!! wonderful times
I've made her other chicken salad, & she added cut in half 🍇 grapes, & toasted pecans or walnuts. 👍🏻 Browned both halves of croissants. Absolutely delicious!! My entire family loves them. ♥️
Yum, that sounds so good. My mom used to make a chicken salad with pecans and dried cranberries. I’ve tried to make it but it’s never quit right, I wonder if she added lemon juice? I’m going to try that next time.
😂 “I bet that was 1/3 of a cup”. One of the reasons I just love you Paula Deen! ♥️ I’m a Hellman’s girl (Hellman’s light now 🙄, but prefer the regular) and I LOVE celery so I’m going to try this combination!
I add pecans, green onions and water chestnuts to my chicken salad because I can't stand celery. But have been known to add grapes too. If you place leftover chicken in some chicken broth it won't dry out and turn brown or get tough. The most popular ways to serve chicken salad is on top of or wrapped in lettuce, on bread, in pita pockets, in tomatoes and phyllo cups. Had to do chicken salad for a bridal tea and wanted to make it look really good, so placed spinach leaves on the plate and placed the carved, hollowed and filled tomatoes in the center to make them look like a rose. It was a big hit and looked rather elegant on that fancy eating table. After that, got requests to do it again and again, and with different colors of tomatoes to match bridal themes or other parties. Got a request for appetizer chicken salad in cherry tomatoes and the client was bummed that they couldn't have the bigger "rose" tomatoes, but I said don't fret, and stabbed little holes in the lower sides of the cherry tomatoes and poked in the smallest spinach leaves I could find. It worked and made a rather elegant display too.
What I put in my chicken salad is 3cups of chicken 3tables spoons of sweet pickles and juice 1 cup of minced celery 1/2 cup of minced onion Garlic powder to taste Miracle whip to taste Enjoy on a piece of lettuce Or my favorite on a 🥐or🫓with a nice slice of tomato
Paula’s potato salad from the first yellow covered cook book is still to this day the best dang potato salad I’ve ever eaten. And the only potato salad I will eat.
I missed this until today... I searched " canned chicken salad recipies " I know some chicken salad, potato salad recipies. However, I like to see the variations on RUclips. I miss you Ms.Paula! Thank you for doing you thang and moving forward with a great spirit! :) I'm definitely using real lemon juice this time ya'al
love chicken sald. and mayo the Hellmanns or Dukes. I like bread, but with the lettuce bet it is good. with butter lettuce ( I think it's called that ). thanks Paula and Theresa and Eddie too
Gotta use that Dukes mayonnaise. It won't taste good without it! I lived in SC until I was 45. Moved to Maine. Now I order Dukes online, becauseno other mayonnaise tastes good.
Hey, when you open your can, do take the lid all the way off, drain the juice off. Then go the si k and run the can under the faucet and let the water until clear like. Then press the lid down to drain off any extra water. Then, proceed to make your tuna. It may seem dry, but once you add your ingredients, it'll become less dry.
@@crawleyr4919 Good question. Helman's Mayo is good enough actually. I would prefer to use Helman's Mayo over Miracle Whip Salad Dressing though. Paula's use of the lemon juice is a great addition also! I am going to start adding lemon juice to mine. I have never done that before and it makes perfect sense!
Dukes was originally made by Sauer's of Richmond, VA, but it has been bought out. It's what we grew up on in Central VA. Salad dressings (e.g., Miracle Whip) are too sweet for chicken salad, but even my grandmother's homemade mayo (which was to live for) had a pinch of sugar in it.
I bet if you added Mt. Olive Salad Cubes to this recipe it would be good. Dukes mayonnaise is also 100% sugar-free. Which works for my Diabetes. God Bless
Chicken salad is a favorite in this house. My family likes it with Vidalia onion, celery, sweet pickle relish, spicy mustard, and Hellmans mayo (with salt and pepper of course) on Texas Toast. A piece of iceberg lettuce on that bread and the bread sliced up with a smear of Hellmans. I make these sandwiches when we go off somewhere and need to picnic or ... just because 😊 Thank you for sharing Paula! You are always a delight ❤
I’m a mayonnaise girl too Paula & Love Dukes! We did not have that up north. I found it when I moved south. I will have try with the almonds & fresh lemon juice. So glad you didn’t use grapes. They do that here and not a fan. Love your videos. Thanks Paula!
Excellent! Thank you Paula1. I made it exactly following your directions and put a couple large dollops on a salad with tomatoes, avocados and cheese. Delicious!
I do that. You can stir that around in a skillet w a little butter or oil n brown a little n season n it's delicious. It's hard when u live alone. Only so much u can do w all that food. So iv really cut back on that. .... I mean who wants to eat chili for days n days n u still have some left. You can freeze it but I don't like to but I do.
Do you have a good tuna salad recipe? I just put mayo, onion, and relish in mine and I’d love something different if you have one. I like to change things up sometimes
Hi Paula, I love your recipe. I love Chicken Salad it makes a great dinner on a hot Summer night with Corn on the Cob. I love it in a nice big Bun. I love Mayonnaise, Hellman’s Light please!
Paula, so happy to see someone else likes mayo with French fries. Been eating them that way since 1980. Also some red onion and treagon in that would be great!
Good morning Paula and Eddie! Have my cup of coffee watching you. The chicken salad looks delicious 😋 thank you for sharing your recipe with us. Have a wonderful weekend.
There is a luncheon restaurant near me that serves a delicious Hawaiian Chicken Salad melt . Apparently, the owners had one like it in Hawaii. The ingredients and recipe are chicken salad, American cheese & pineapple slice … grilled on closed raisin bread . It is delicious.
For me, I'd have to have some diced onion in the chicken salad too and I do add lemon juice to my chicken salads too only I mix the lemon juice in with the mayo first before adding it to the chicken, celery, slivered almonds mixture and of course a bit of diced onion too... lol ( I prefer Dukes Mayo too) It looks delish even without the onion...
I didn't realize this was Paula Deen. She looks different here. Where do you live? I've never seen a fireplace by a kitchen and I love it!! The recipe looks good. Have you ever tried putting red grapes and sliced almonds in it?
I use Jewel’s grilled chicken for my chicken salad. It’s thee best ever. I use mayonnaise, celery, purple onions, relish, boiled eggs and green grapes sometimes. No other seasonings required.
Will definitely try this, it sounds great. No disrespect but shouldn't you have used a different spoon to dig out the mayo? Just that you'd been stirring the chicken and then plunged it into the may jar - though it did look almost empty so perhaps knowing this you were'nt intending using any more mayo from that jar but my concern is that it doesn't set a good example for someone first learning the basics and youtube is where so many of us come when first learning.
Yes I agree also about 2:29 in she wipes her nose with the back of her thumb left thumb and grapes the almond bag with it a then pours them in that same hand she used to wipe with and now she’s stirring and turning the bowl with the thumb in the bowl. Just saying. Wash hands constantly for cleanliness thank you.
Ok Paula what’s the difference between Dukes and Hellmans ? Is it sweeter or thicker ? Just curious because so many people in your region prefer Dukes but I’ve never heard why
I stopped using ketchup with brown sugar on top ,trying to cut extra sugar. So now I save some of the plain tomato sauce and add brown sugar to it. I baby steps add i honestly can't tell the difference.
I love chicken salad and I love mayo. I also do not like the imitation lemon juice. Gotta be fresh squeezed. Never tried it in chicken salad so I will try it next time. Thanks Paula. Your the bestest
What do you put in your chicken salad recipe?
I make it the same as you, plus one more ingredient- a tablespoon of deli mustard.
Tarragon and dill ... and pecans
Everything you added, but I also like onion, mustard, and relish. I truly enjoy your cooking!
Try homemade honey mustard dressing. I still use some Duke's (the only mayo in my book), maybe 2 parts honey mustard and 1 part mayo. Really good option to traditional. Don't forget the iced tea. 🙂

It tastes a thousand times better with Dukes. Unfortunately for me, Dukes isn’t sold in my neck of the woods. 😢
The lemon juice will have to try for sure! Was that Dukes mayo?

BluePlate is good too.
That recipe looks delicious and it's so simple 😋
