Oak vs non oak, is it written on the label or bottle?
Unfortunately it is not required on labels and rarely prominent even if it is mentioned. That said, wines that are barrel fermented or barrel aged often mention either barrels or oak flavors somewhere on the back label. If you don't see those on a white, chances are it was made in stainless steel.

"wine is always made with 100% grape juice" by both legal and technical definition, that is flat out wrong on multiple levels. Wine by technical definition requires all sugars (Fructose) present to be from fruit (not limited to grapes). The concentration of the juice it self and what fruit it comes from is irrelevant. By legal definition it must be made mostly from fruit.

If a wine is made from fruit other than grapes, most countries require that this non-grape fruit be mentioned on the label.
It is sad when a professional presenter and “expert” uses a a California Chardonnay as an exemplar of oaked Chardonnay instead of directing beginners to Burgundy, the place where oaked Chardonnay finds its truest expression.
California chard is an exemplar of oaked chardonnay. So is Burgundy (some areas). two things can be true at once.
