I discovered that using allulose to sweeten keto ice cream gives you a creamier end product. Love your butter pecan recipe. Totally going to try that!

I've been experimenting more with getting good texture with homemade keto ice cream and am pretty happy with what I've come up with. Using 1 and 1/2 cups of heavy cream I'm finding 1 Tbsp of clear alcohol (I had vodka on hand) and about 1/4 tsp of xanthan gum works well. I add the xanthan near the beginning of the process in several VERY light dustings using my fingers to sprinkle it on the surface so it doesn't clump. I add the vodka along with flavouring extract at the very soft peak stage and continue beating for a bit.
I have noticed a few keto ice cream videos that use vodka or rum. Can you tell me why this is so and what does the alcohol do as opposed to leaving it out?

Several years ago, I did experiments on keto ice cream. Sugar acts as an antifreeze. This means that the ice cream remains scoopable when it is frozen overnight. Most low-carb sweeteners freeze as hard as a rock. A little alcohol helps. (I used pure grain alcohol because it has less water. You can use vodka, but it takes more.) Glycerin also helps. So does propylene glycol. But the best thing is to use xylitol as your sweetener. Xylitol acts the same way as sugar. It makes a scoopable ice cream even after a long time in the freezer. Plus, it kills bacteria in the mouth. But don't let your pets eat it. It is a deadly poison to cats and dogs.

@@nicolenorton6663 I followed the recipe. I bought heavy whipping cream and beat it with an electric hand mixer until it was light and fluffy. Do not over beat. When you pull the beater out the cream should stand up. Hope this helps….Enjoy😊
Looks delicious! I made a strawberry/toasted almond version. Instead of vanilla I used almond extract. It was good but the next time I make it I'll cut the (very few) strawberries up much finer and will also add a teaspoon of vodka to it. I heard the alcohol makes it less likely to freeze too hard.
Apparently gelatin world to soften sorbet/Sherbet. I'm not sure how it would act in ice cream. “You can soften gelatin in cold water, warm it to melt it, then add it to sorbet or sherbet mixtures prior to churning. 1 teaspoon of powdered gelatin is a general guideline per quart (liter) of mixture, although that can be doubled.”
I put the strawberries in the food processor and pulsed them. I like the idea of adding almond extract, thanks for that tip. 👍🏻😊. And try using allulose as your sweetener, it doesn't freeze as hard and stays creamy.
@Cat Patrick thanks for the tip about Allulose. I quickly looked to see where I could buy it in Vancouver, Canada but not finding it, even on Amazon or at our specialty health stores and markets. I will keep looking for it.

Put the pecan nuts into a plastic bag, close and make sure the air is out. Hit the nuts with (whatever) to make them smaller.....easy, peasy.
