Butter Pecan Ice Cream: lowcarblove.com/blog/keto-but...
Yields: 4
Ingredients:
1 1/2 cups heavy whipping cream
1/2 cup pecans, chopped
1/4 cup powdered sweetener
5 tablespoons of butter
1 tablespoon of vanilla extract
Caramel:
2 tablespoons of butter
¼ cup of sweetener
¼ cup of heavy whipping cream
Directions:
In a bowl add heavy cream, sweetener, and vanilla.
Mix until stiff peaks and set aside.
Over medium low heat cook the butter and add in pecans.
Cook until fragrant and amber in color.
Remove from heat and allow to cool
Fold in pecan into heavy cream.
Add to a sealed jar or container.
Place in the freezer for 2 to 4 hours.
For the caramel add sweetener and cook until amber then add in remaining ingredients.
Macros: (Does not include Caramel)

I love that you tell people to use sweetener of their choice and how to turn it into powder because another RUclipsr says to use Allulose and these products R not in most supermarkets. Not in my country anyway.

I love homemade keto ice cream a lot better than the store bought (Rebel was my favorite at one time). I control the ingredients and that makes it totally worth it. I discovered that using allulose to sweeten keto ice cream gives you a creamier end product. Love your butter pecan recipe. Totally going to try that!

I made this and it was wonderful. I put two containers in the freezer and had one 4 hours later (it was solid, so I was disappointed in myself for eating it early 😿). The other I left overnight, and it was perfect! The lesson I learned was to WAIT until the next day. And, next time I make this, I'll make the syrup, too! 😺
