Your expertise with the woodworking is super. To press the dough without forcing, you might consider doing quarter turns of the dough/parchment sandwich like we do with a cast iron tortilla press. That is, do an initial dough press without forcing down too much. Open the press, quarter turn the dough “sandwich”. Close the press, press down without forcing. Open press, quarter turn the dough sandwich, continue on this way until you get the size and dough thickness you prefer. Result: Much less stress on the dough press, more even pressed dough, less chance of damage to the beautiful tool you worked so hard to create.

Finally, a pizza (or tortilla) maker that uses a spacer to account for the thickness of the dough! The rest of these guys slap the two wooden planks on top of each other to install the hinges.

Well, the hinges breaking free is all in your imagination thus far. Using 3/4 in screws has held it just fine over a year and a half of making pizza, pie crusts, perogies, and tortillas on this design. My newer design uses piano hinges and even shorter screws and has been like a rock for a couple dozen pies so far. The only reason I switched hinges was to eliminate the play in the reclaimed ones I used in the proof of concept. Instead of criticizing right off the bat, try building it and see for yourself.

Nice build, why not add a lock to the handle so you don't have to stand there pushing down on it for a few minutes. Just push the handle down lock the handle with a metal hasp of some kind then after a few minutes you unlock it and remove the flattened dough... : )

Anyone got a video of a pizza cooked using this press. Would like to know how the base cooks. Do you get a nice crust with it.
Depends on if you remember to preheat the pan you're using. The upper crust and cheese will cook faster than the bottom if you don't.

There is a lot of stress on the hinge fixings (screws) after a few uses I imagine that the stress and strain on them will cause them break free.

If you ran boards with grain running in other direction there should be less flex also.
