machine lets you hire unskilled employees to make pizza. that's what the machine is about. same thing for that rotating pizza oven. the manufacturers of those devices sell the benefit of having unskilled labor make your pizzas or not having to reply on skilled pizza maker employees. they boast you can train someone in 1 hour to make high quality pizzas.
I'm sorry, I know it would be ideal for a fast food restaurant. However in my opinion, I've come a long way watching your videos and learning the entire process from using biga, to stretching my pizza dough. The taste is in the hand. I'll keep stretching by hand. i've been making pizzas by hand for over 13 years now, in ovens i've built, throwing sourdough pies. I can see how these two machines can really increase output - the dough 'throwing' machine, and the rotating oven floor. It enables lower-skilled people to achieve better results with less training, and higher output and hence better profit - so long as people are buying and your ingredients aren't shit.

I really appreciate your craft and binged a lot of your videos but the business major and mechanical drafting hobbyist in me knows that machine is a game changer and worth the investment but the most amazing thing about this video is the master beats the machine by a split second and still makes amazing pizza.
For pizza base consistency, the machine is a winner. There have been all sorts of dough rollers and sheeters, so this one is not a deal breaker, BUT, for Neapolitan pizza base consistency, and, speed, without having a master maker, this is cool... almost as cool as feeding the homeless. Kudos!
I think hands... however, I believe technology is amazing and does a consistent job, but the love that is out into the pizza dough by hand cannot be replaced! I’d be interested in this when franchising Reds, to keep consistency, but for my flagship store, it will always be done by hand, by me! Why not? If the dough and sauce was made with hands, the stretching can be done by a machine. Very effective and helps you to deliver more and give a quicker service and increase sales and salaries. The love is still involved from the beginning of preparation 😎

Aaron Rodriguez this is not a tortilla heated press machine. Far from it. This piece of equipment generates no heat and doesn’t kill the fermentation process allowing it to still maintain air pockets through out the dough. It does this two ways, first by the vibration of the motor and secondly the rollers that act as a shiatsu massage pushing the dough from the center to the end creating a great crust.
I think the crust on the Master Pizza is more well defined and harmonious in appearance, and probably in consistency. The Pizza definitely seems more proportional and appealing to me. Thank you for your insights Chef. I think such a machine would be great in high volume situations where you can’t have an expert Chef’s touch on every pie. Moreover, if associated with an automated sauce dispensing and cutting system (Costco Pizza), it could potentially simplify the gourmet pizza making process and allow cooks to focus on prep-work for homemade toppings, presentation, and speed without compromising on quality. Of course yours is better. A heartless machine can't make something better than someone who is creating something through a skill they have mastered and love. The machine may at times create a flawless product. But it will never be a work of art. I believe yours are. And I want to add in, thank you for how much I've learnt from you videos. And that was amazing to give the food to homeless people as well.
Without a doubt, if I were to open a neapolitan pizzeria, I would buy that dough machine and the oven with the rotating base. Consistent good food is so key in the restaurant business.

I like both as for high production the machine is easy for individuals that lack experience. Takes time to train employees to press dough. This removes stress for new hires. I like it! Unfortunately I looked into this machine and it operates on 220v only. For my mobil pizza trailer business I can supply 220v ac through my generator however it would be nice if they offered 110v ac for the US market.
