(I Almost Ruined) Brazilian Style Tri Tip On The Weber Kettle

  • First things first...in this video, something goes wrong. I won't spoil the surprise, but suffice it to say I goofed. Now, that said, the combination of Brazilian flavors found in a Churrascaria and a tender Tri Tip was a winning move, one I'd definitely try again--without the mistake I made. Smoking on the Weber Kettle using the Slow n Sear and some Post Oak resulted in an amazingly juicy and flavorful piece of beef.
    Brazilian Marinade
    4 TBSP minced garlic
    1 TBSP pepper
    1 tsp salt
    2 tsp oregano
    1/2 tsp cumin
    1/2 of a medium onion sliced thin
    1 cup olive oil
    1/4 cup lemon juice
    1/4 cup lime juice
    1 cup orange juice

      I obsess over ingredients all the time. Maybe it's because I got 6 kids running a fullcourt game of chaos around me when I cook, but I'm always freakin about forgetting something....or its just old age. Lmao

    This is the first time I've ever smoked tri tip and it cashe out beautifully, thanks to you! I made a few adjustments to the marinade- added a half teaspoon of red pepper flakes as well as a half tsp of dried cilantro. Just a gorgeous cut of beef and might be my new favorite. I have learned so much from your channel and am really loving learning how to use a charcoal grill. Thank you!

    Hi Ry I just got done eating a tri tip I smoked on my weber kettle.I saw your vid and said I have to try that I made your rub my own by adding a couple other ingredients and used pecan instead of hickory. I cooked it just like you said and it was awesome I could cut it with a butter knife no lie. Thank you for the inspiration

    Tri Tip is the best Im from California so Ive been lucky to have tri tip available when ever I want unfortunately it is getting expensive I paid 2.99/lb last week used to pay .99/lb I just use Montreal steak seasoning set my traeger to high 15mins on the meat side 10mins fat side or until 125°f on the inside perfect every time LOVE YOUR VIDEOS

      Yeah, no problems at all. Luckily it never got to be a hurricane, and also it went in just east of where I was born which put the worst wind and rain to our east. I'm ready for hurricane season to be over.

    I love churrascaria and their salad bars are always outstanding in my experience (UK). One complaint is the salt added (I'm not on a low salt diet) always best to get second cut, as less salty. Top tip .. they usually heavily discount at lunchtimes and some offer seated by 4.00pm and all good.

    We do a lot of tri tip here (so cal), it's very abundant. You can even get prime grade for less than $10/lb. I did countless tri tips exactly how you've done them here in this video. My friends pitched in this year for my birthday and got me a Santa Maria attachment for the weber kettle (Gabbys Grills)
    That attachment changed my whole perspective on grilling tri-tip. Combo that with some high quality lump charcoal and its game over. We don't go Brazilian BBQ anymore. I can literally replicate everything they make there right here in my backyard.
    I think that addition to the kettle is a must if your looking to try out something new! Check it out!

    Ahhh... to be human:) You made me feel a little better Ry. Just yesterday I uploaded my first cook video on my new pit, after I nearly ruined the beginning. But, I put it up anyway to have something to look back on in a few years. You might go back and change the flavor, but I doubt you can make that meat look any better. Thanks for the vid...

    I wish our Costco carried tri tip.. My local stores don't carry it and I'm sure my local butcher will charge big money for one. Great vid as always. Thx

      It’s funny...for as much trouble as people in other areas of the US have getting Tri Tip, picanha is difficult for me to find.

    I would like to cook tri tip w/o the smoke. I am guessing the coals would have to be fully fired and no wood of course.

      Yes, just do it as a straight indirect cook with coals already going.

    Love your videos, Ry....Question: Can a Tri-tip be smoked/braised untill done and be tender????

      It’s very tender at my preferred doneness of medium rare (130 internal). If you’re talking about a higher level doneness it is possible. Harry Soo did a video where he cooked a Tri Tip like a brisket to 200 internal I believe. Not my cup of tea but it seemed to work :)

      Have you tried Joe's on 7 mile and Farmington Road in Livonia? There was a butcher called Byrds years ago, but I think that Joe's Market took over.... I don't live there anymore or else I would check it out for you.

    You always say "pull the meat and wrap for 30 minutes", but you don't show that. Are you "tenting" the meat, or actually wrapping it tight in foil?

      I should probably show it, but it's the least interesting part of the process. I usually either wrap loosely or tent. I generally only wrap tightly when doing a brisket or pork butt wrap during the stall :)
