Ingredients (8)
115 g milk, 7 g instant dry yeast
50g sugar, 7g salt, 2 eggs
350 g Bread flour
70 g butter at room temperature
eggwash (1 yolk + 1 tablespoon water)
Sesame
When using a stand mixer (depending on the stand mixer specifications)
1. Add all ingredients except butter.
2. Mix 2~3 minutes on low speed.
3. Mix 5-6 minutes at medium speed
4. Add butter. (There is a lot of butter, so please divide it in number 2)
5. Mix 5-6 minutes at medium speed

Milk, egg temperature
Spring, Autumn: Room temperature, Summer: Refrigerator storage
Winter: Microwave milk for 10-20 seconds, Egg: room temperature
Fermentation time varies depending on temperature and humidity.
Use the oven after preheating.

Just made the buns today. Followed the recipe exactly. Made the dough in a bread machine, liquids first then dry. Then let it Proof in the bread machine. Once it was done proofing. I shaped it Into 6 balls because I wanted bigger buns for my fried chicken sandwich. Just don't over bake. I did 350 F for 12 mins. Total . Rotate tray halfway at 6 mins. Took out to let it cool off on a rack. Perfect amount of egginess and sweetness. Very soft.

I placed it into the fridge for 6hrs after shaping into 6 balls, took it out of fridge for an hour before baking for 12.5mins. They were huge, lovely, soft and fluffy! I’m so thankful for this recipe!❤ my to-to brioche recipe from now on.

I tried your recipe today. The buns looked quite small in the second proofing so I decided to divide them into six balls. I ended up with 6 XL delicious burger buns.

정말 정말 대단한 레시피 입니다.. 제가 언젠가는 동남아 가서 미국 유럽 은퇴하신 분들 상대로 햄버거 집을 하고 싶어서 조만간에 한국에서 작게 배달위주로 시작해 보려고 합니다. 가능하면 많은 재료들을 직접 손으로 만들려고 합니다. 대단히 감사합니다. 참고로 태국 야시장에서 케밥 1개 35바트 3개 100바트(4천원) 정도 하는데 튀르키예 분이 토마토 소스까지 직접 만든 1개 50바트 케밥을 먹어봤는데 피클도 수제라 정말 정말 건강하게 맛있는 맛이었습니다. 저도 건강하게 맛있는 (?) 그런 햄버그를 만들어보고 싶네요.
