I love how everyone at the Test Kitchen goes to the effort to simply explain the science behind what's happening. It actually really makes a lot of cooking seem less daunting knowing what kinds of things are going on. Of course couple with charming metaphors and descriptors.

It's perfect for me because I learn better when I understand why. I never mess up a process or cut corners once I get why it needs to be done that way!

Thanks you for justifying the way I separate eggs! I've always found I can get a more perfect separation, faster and more reliably, by using my hands. I also run a thumb around the inside of the shell to get that last bit of white! People are so afraid that egg yolks will burst like a bubble as soon as they touch them... But I manhandle my yolks and pull off the last thickest bit of white detached and they're always fine.

This helped me a lot actually whisking the whites till peaky helped improve the consistency of the omelet. I used to put the eggs on my mixer but it wouldn't peak probably overmixed. Resulting in a flater batter by the time I brought everything together, making it more omelet and not too much souffle. With this recipe I managed to get that ratio and have great omelet souffle. Thanks alot!

Tommy: Did you say Dairy Q-Queen peak?
Carla: Yeah, Dairy Queen - like on the top of a-y’know the Dairy Queen *tongue pop* and the top of the soft serve and it makes the perfect little swirl and then the little *slight inhale* peak on top that...just...tiny peaks over. That’s a Dairy Queen peak. Right? Ok-I’m not crazy, Tommy where’d you grow up?

That is a nice looking omelette and I love them so much since being introduced to them after getting into the Air Force. Once I ate one I was hooked and have been eating them since then. I thank you for showing us how to make one the correct way, Carla.

Please continue doing a great job by explaining so well. I feel like I'm taking a very nice and easy to understand class. Also, a lot of you have a great sense of humour.

In my 20s and know Jean Naté (only because someone gave it to my mom as a gift and she was highly upset and because I remember the yellow and white boxing from my grandmother's dresser.). I can smell it in my head right now.

Made this tonight! Super easy dinner: and a great way to stretch eggs when you’re cooking on a budget. Three eggs felt like five, and everyone was in awe of these giant, fluffy, wiggly, delicious omleettes. We made one with crushed bacon, one with your classic Denver filling, and one with chives, goat cheese, and arugula. Absolutely stunning, and quick and easy to boot.
