    I’m going to make a version of this today. I have a bunch of parsnips, spinach, kale and carrots that I don’t know what to do with. I’m glad I found this!

    found this on reddit on r/veganrecipes and tried to cook it today - as I am not much of a cook I kind of messed up the kitchen but the curry still turned out to be pretty good, thank you :)

      Great to hear, don't worry I regularly create a crazy mess in the kitchen. It's not a success unless there's bits of it on the floor!

    I'm glad I found this recipe, I had some carrots, parsnip and kale, and no idea I could combine them together 😁

    Hi do you think adding rutabaga would taste good?

    • @LowlyFood
      @LowlyFood  2 года назад

      Absolutely, I’m sure it would work well. You could dice it and roast it the exact same way as the parsnips and carrots.

    Hi! I want to make this but I don’t think my grocery will have parsnips or creamed coconut. What do you suggest I use instead?

    • @LowlyFood
      @LowlyFood  3 года назад

      Hey Lynn, do you have canned coconut milk? You can use that instead. Alternatively you could use some plant milk. But it won't be as creamy. As for the parsnips, you can use any other root vegetables instead. Alternatively cauliflower or aubergine work great as well! Hope this helps

      @@LowlyFood I made this recipe yesterday, except that I used beans and lentils instead of chick peas and coconut milk. It was thick and yum!!
