found this on reddit on r/veganrecipes and tried to cook it today - as I am not much of a cook I kind of messed up the kitchen but the curry still turned out to be pretty good, thank you :)
Hey Lynn, do you have canned coconut milk? You can use that instead. Alternatively you could use some plant milk. But it won't be as creamy. As for the parsnips, you can use any other root vegetables instead. Alternatively cauliflower or aubergine work great as well! Hope this helps
Im gonna make it but im probably gonna leave out he creams and sugars i have homegrown parsnip and carrots in abundance so im gonna make my own version but its gonna be very similar
@@LowlyFood it turned out well i made it essentially the same i added courgette and edamame beans as i had loads of them turned out really well im having it tonight

Absolutely, I’m sure it would work well. You could dice it and roast it the exact same way as the parsnips and carrots.
