Try holding Shift and the down arrow key to select a line. Press down arrow more times to select a complete paragraph, once it's selected you'll be able to edit as you type. ;)

Sounds like you need a Mac crash course, they are more intuitive and user friendly than pc. Maybe it's just you adjusting to things being more intuitive in apple devices ;) Apple products challenge the status quo, maybe that's why you're feeling this way.
