Just made these! Didn't plan too well though bc I'm making stew in the oven at the same time. Placing the cheese-its on the bottom rack and keeping an eye on them. My first pan turned out really good. Center crackers could have been a bit thinner. The second pan I used my hands a lot to make them thinner - so combination of french rolling pin and hands worked pretty good! I forgot the brushing with oil on the first pan and still turned out pretty good! 2nd pan is in the oven...with oil!

Do you think putting it in a tortilla press and then cut it up, that would work?

I love the idea of using hands! I could have made mine thinner that way!
