A Different Style of Pho aka Pho Bac (North)

  • This weekend we are making Northern Style Pho aka Pho Bac which translates to "North". A simple and clean version from its bolder cousin in the South aka Pho Nam "South".
    Noticeable differences -
    1. Thicker wide rice noodles.
    2. No beansprouts or basil.
    3. Some type of pickled chilis with or without garlic.
    4. Saltier and less sweetness in the broth.
    5. Usually served with just green onions.

    One garnish I usually enjoy this with is pickled garlic (pretty sure this is a northern style pho thing too - did not see it too much in southern style pho shops, or ones in the US).

      Definitely a more Northern/Hanoi thing in Vietnam!

    I had pho bac in Hanoi a few years ago, looks exactly like yours, but I didn't like it. It's too simple and plain for me.

      Definitely a more simple version of the bolder Southern take.
