- Ingredients (room temperature: about 10~15°C)
Dough ❤
250g T45 French flour
(You can use other flour instead, for example: use 70% all-purpose flour + 30% high-gluten flour)
30g granulated sugar
5g salt
10g milk powder
12g fresh yeast (4g instant dry yeast)
40g eggs
95g water
30g soft butter
175g cold butter (roll in)
Almond Butter ❤
50g butter
50g icing sugar
50g eggs
40g almond flour
10g pastry flour
Whole almonds for topping
Almond slices for topping
Sugar glaze for brushing
(It can also be thickened with apricot jam and a little water)

我想問問,入油完然後用麵棍搓長後,發現牛油在水皮內散成一粒粒,根本無法跟水皮融合,為什麼會這樣?
牛油的延展性不夠,擀制時,麵團同牛油軟硬度要保持一致。牛油如果比麵團硬,擀的時候可能斷在麵團中。

Thanks for the comment,You can use 4g instant yeast instead of 12g fresh yeast

可以的,丹麥麵團可以做好後冷凍,或者做到最後成型前冷凍。用的時候放置於冰箱冷藏解凍。
