Love that you’re doing a video on Mexican good. I did want to add that the Chile relleno is not breaded. It’s actually egg whites beat to a fluffy consistency then they mix the yoke in. They dip the stuffed pepper in the mix and then fry it in oil.

We recently visited a hole in the wall Mexican restaurant while on vacation and I was happy to find that they offered cauliflower rice in place of regular rice. They had lots of meat/seafood and veggie offerings that were on the menu that were served over rice and when I asked for one without rice they asked me if I'd like to sub cauliflower rice. None of my local Mexican restaurants offer this option.
But, Germany has the best Mexican food in all of Europe. Adolf Garcia's Taco-Laden was our favorite. Their schnitzel tacos were the bomb, as was the bratwurst enchiladas with sauerkraut. And for dessert? Strudel-churros! Sadly, the potato pancake flan wasn't too great. But the rest was......wunderschön!

Totally albondigas are not keto friendly unless you make them at home, also chilled rellenos are not breaded , is flour and egg mixture to cover them. I'm from Guerrero mexico and our ceviche is definitely not friendly because there is tons of ketchup on it. Just ask them and check with the meseras( waistres)

One of the things you could consider is replacing the chips in nachos with the chicharrones (instead of lettuce, like you mention). Obviously boosts the caloric profile, but it doesn’t get soggy like baked lettuce and is something non-keto friends would enjoy (if you like sharing).
Boy, oh boy. Ignorance is a bliss. Authentic Mexican cuisine is huge on fresh SEA FARE. Ceviche is only a drop in the bucket. There's no need to dwell on the "pork rinds" ay! Or the "nacho".
Great video! "Traditional" albóndigas usually include chayote (100 grs = 5 gr carbs = 25 calories) as well as potato and carrots. And, as someone else mentioned, the meatballs could be made with rice. Another way to serve albondigas is in a chipotle/tomato sauce; these meatballs will sometimes "hide" hard-boiled eggs inside.
Thank you very much for this video. FYI Chile’s rellenos you can dip them in eggs once battered in replacement of the corn or flower breading and they taste really good!! That’s how I’m accustomed to eat them.

Juan Amaral I’ll be making the chorizo myself. We live in England and the only chorizo is Spanish chorizo, which is more like a salami hard roll, and nothing like Mexican chorizo. Thanks for letting me know about the added cheese, when we visit back stateside I’ll have to go to the Mexican butcher, buy and cook up my own chorizo!
A few favorites of mine that weren't mentioned here are menudo without the hominy and also queso fundido with chorizo that can be eaten with pork rinds.

I love Mexican seafood...ceviche is my #1 go to dishes sometimes served on a tostada or a snack 😋 last time I ordered a snack expecting to see a small plate but oh boy! The size of that snack was totally intimidating I ended up having a takeout box with all the yummy shrimp 😜

I’m very fortunate to live near the coast so I fish a lot and shrimp are cheap. Also with the influx of Mexican workers during sugar cane grinding season traditional Mexican food is readily available in Louisiana. In some areas there are Mexican food trailers near the fields that feed the workers but never mind selling some to the public. Amazing food to say the least. Thanks for all the great info and never apologize for the nerdiness, lol.
Would be awesome to see one about Arabic food which can be very keto: Shawarma, Kabobs, stuff like that. Be careful with Tabouleh salad because while it looks like just an herb-base salad, it has bulgur (a grain) in it.

I love beans and am on keto. So, I ferment my beans for atleast 1 month to remove all carbs. They become 0 carb content. Plus its great for the gut since its fermented and it has lower lectins ;) We keto lovers should just be a bit creative to not look really weird to others!
One of my favorite Mexican places her in Texas has a stuffed avocado with your choice of meat, I like the shrimp with white fish, peppers, mushrooms, zucchini and carrots. Not a lot of carrots. I ate this even before keto.
I'M ON MY FIRST DAY OF KETO! I started with a breakfast of homemade guacamole (avocado, red onion, tomato, cilantro, fresh lemon juice), 1 egg, on a 3 net carb spinach wrap. So good! I couldn't go straight to keto when I started dieting. My mom passed, so I wasn't eating much, anyway. I got where I would eat "whatever" once a day, found my stomach churning and hurting. But once I got used to my stomach shrinking, I started making myself eat more often. So now I feel like I'm ready for keto. If I can feel like I did after breakfast this morning I know I can do this. I felt filled, the food was tasty, and I probably won't eat again for 12 hours. Eventually I want to add the 16:8 as long as it doesn't hurt too much. Would love advice!
The chile verde (carne de puerco en salsa verde) is super easy to make at home. At the grocery store you can pick up a bottle or can of the salsa verde pre-made. Get some lean pork cuts like boneless pork ribeye steaks, cube them, and put in a pan with a little water(1/4 cup per pound). Slow cook it on very low heat, covered, for around 45 minutes to an hour. Once the meat is tender just add the bottle or can of salsa and stew for another 15 minutes, salt to taste. Serve with a low carb tortilla or some cauli-rice. Simple.

Save shrimp and scampi shells and boil them for 30mins(?), discard the shells, drink the broth. Now, is it a bad idea to grind up shrip shells and eat them? Are these shells, in powder form, digestable?

Yes you have to put some kind of flour on the Chile before you put it in the egg mixture not a lot just enough to dust the entire chile it helps the egg stay on the egg and not slip off
Regarding the chiles rellenos - typically, they are breaded with just beaten/fluffed up eggs. Ask if they add flour before you request they leave the breading out.
The Mexican joint I go to has a dish called Chicken Tropical. It is done up like a fajita but has broccoli, cauliflower, peppers, onions and zucchini fried up with it. Then has a salad on the side. Lots of cheese on the chicken too. You have to order the guacamole on the side though. I use guacamole as salad dressing along with the salsa.

I love doing chicken mole (brown) over cauliflower rice. Pro tip: when you finish braising the chicken put in the rice and let it braise for about 5min or so with the chicken

Chile relleno is coated with egg. Sometimes batter. So you can still get it the way it’s regularly made you just have to ask if they use egg or flour

Most places in east Texas will use flour and not egg. When I went up north to Idaho and Montana, they use egg. So depends on the restuarant

I'm Mexican on keto. Low carb tortillas are a must to survive. I have used cauliflower for rice but also in bits for posole. Adapt and overcome!

Actually some are... some cover the chile poblano with Fluor then Into egg mix or some people add the Fluor in the egg mix
Yes you have to put some kind of flour on the Chile before you put it in the egg mixture not a lot just enough to dust the entire chile it helps the egg stay on the egg and not slip off

Regarding the chiles rellenos - typically, they are breaded with just beaten/fluffed up eggs. Ask if they add flour before you request they leave the breading out.

The Mexican joint I go to has a dish called Chicken Tropical. It is done up like a fajita but has broccoli, cauliflower, peppers, onions and zucchini fried up with it. Then has a salad on the side. Lots of cheese on the chicken too. You have to order the guacamole on the side though. I use guacamole as salad dressing along with the salsa.

I love doing chicken mole (brown) over cauliflower rice. Pro tip: when you finish braising the chicken put in the rice and let it braise for about 5min or so with the chicken

Real chile rellenó isn’t breaded. It’s just eggs that look like a breading. Also, Menudo! Just order with out the corn!
The Chile reñeno is not a corn or flower shell it's just a Chile dipped in whipped egg whites and deep fried stuffed with cheese stuffing usually, all keto.
