I made this crust for the first time on Thanksgiving to hold my Pumpkin pie filling. I added a teaspoon of vital wheat gluten and found that this is the most amazing Keto pie crust I have tried to date (believe me, I’ve tried them all!). Anyhow, the crust holds together like regular high carb pie crust. It also tastes fantastic. I find so many Keto pie crusts are too crumbly and fall apart when cut into. Not this crust. Pure genius!
thank you! and adding gluten is a great idea, I'm gluten intolerant so it's not an option in my recipes but it always seems to be a good idea to add it if you can digest it. :)

@@perfectkid2488 If you haven't found out yet, wheat gluten can be okay on keto.
Just remembered it contains carbohydrates ~10-15%, and is highly refined.
So I think moderation is the key.
I used this pie crust recipe to top a chicken pot pie last night, and it was delicious! It tasted like regular pie crust... I will definitely be using this to make a sweet pie soon... Yum!

Can you do a keto fruit tart video with vanilla custard using this crust? I want to try it out but I'm not sure what would be best to thicken the custard...
it's on my recipe list!
I have made a keto chocolate pudding recipe which could be made as a vanilla version if you leave out the cacao, just add an egg yolk to get that custard flavor. I will be making a tested full vanilla custard recipe in the next year sometime though!

Thinking of making for Thanksgiving. Can I make crusts day before? Should I make the dough, then pre- bake and etc day of? Using this for both sweet and savory recipes.
Awesome recipe. I was wondering, is it possible to not use almond flour at all.? So just coconut flour. Will it cause the dough to crumble more easily? Or did you just use almond flour so that the coconut taste isn't overpowering?
Coconut flour acts very differently from nut flour, so I'm afraid this recipe won't work well unless you use some form of nut flour as the base. Coconut flour alone will be very dry and crumbly. :/
TPH Keto Desserts alright thanks! Almond flours are expensive. I'm going to ground my almonds into flour. Hope it works just as well. Looking at using psyllium husk instead of xanthan/guar gum as i can't find one in my area.
Yeah, almond flour can be quite expensive. I've made my own before and it is quite time consuming, but as long as you pass it through a fine-mesh sieve multiple times it should work perfectly. :) Also, feel free to leave out the xanthan/guar gums completely if you'd like, because I've had some test recipes that seemed to work fine without those ingredients. :)
TPH Keto Desserts i used psylliam husk. It turned out alright. The 'dough' was soft but it wasn't crumbly (probably due to the cream cheese). Thanks for thr recipe. Have to say this is alot more work than creating a 'regular' pie crust with all purpose flour
I'm glad it worked! Yeah, unfortunately keto desserts are usually a lot harder to make than the full-carb versions. But it's worth it to get all the benefits of keto adaptation! :)
Would this crust hold up for savoury pies like a traditional chicken pie?
I haven't tried it with savory pies, but I don't see why it wouldn't work. :)

No, unfortunately it won't rise and puff into distinct layers like puff pastry dough does in croissants. :(

Why do you make such small amounts ?
When I started this channel it was a side hobby and I had very little money for ingredients, let alone to test recipes multiple time and throw away ingredients from failed attempts, so I did everything in single-serving mini sizes. The last year, almost two years now I've been making full-sized recipes, so check out my more recent stuff for full-size recipes. :)
