    I might try the first one. Honestly, French creamed eggs are all we eat now. Mix up eggs, salt n pepper, cream if you want, to taste - you don't need cream. It's the cooking technique that makes them creamy. Butter in frying pan, melt it - and so far you're thinking "that's just scrambled eggs." But here the secret intervenes. We cook scrambled eggs pretty hot - medium at least - and they congeal and can get a bit rubbery in texture. For this, we use med-low heat, or a bit lower - it can take a bit longer than scrambled but worth it. Stir w spatula as they cook. They will finally "set up" but never get rubbery like our scrambled eggs. They'll stay creamy in texture. It's amazing the difference this makes.

    I have eaten eggs all my life, even when my big sister made a boiled egg which wasn't cooked 🙃 I was about 4yrs old and she was about 8/9😅 I can still remember that she said, it's OK, she'll eat it, (to my bro.) which I did, after those many yrs, nearly 70, I can’t eat soft eggs any more 😢 I really love you both as you remind me of my sister and I ❤ you're inspirational, many thanks 😅

    The best omelet I've ever made was after finding a YT video titled, 'The perfect "Waffle House Omelet" Toddle House style.' I don't own a shake machine, but but beating the egg in a blender, or with a mixer is about the same thing, just more hands on. :)

    Turkish eggs (Cilbir) is my favorite egg dish. Don’t go crazy poaching the eggs just cook them in a little water in a covered pan. Yes it has a sauce of yogurt garlic and dill. Best of all it it topped with Aleppo chili butter and more dill.

    The first recipe reminds me of Dutch baby pancakes. I would fry in butter , top with berries and sprinkle with powdered swerve.

      Have you tried Avocado/feta topping?: 1 part avocado, 1part feta, grated onion to taste mush together.

    I've been putting feta in my eggs for ages, with avacado on the side. Mostly because I miss being able to put both on beans. Add some sour cream and I'm in heaven.

    This is the first time I’ve seen this video and the feta egg taco reminds me of what I do, which is, I take two low carb street taco size tortillas, smear some hummus on each tortilla, add a half slice of Swiss cheese to each, add a slice of bacon to each, topped with an over easy egg that I cooked with shredded cheddar cheese melted on top (i.e. 1 egg each), garnished with chopped green onions. Very yummy!😋 I like feta, but I haven’t tried this recipe yet.

    I love eggs, eat them all the time. My non keto husband thinks they are going to kill me. I happen to like aged cheese. The more aged they are the more”stinky”:Asiago, Parmesan, Gruyère…

    You can make that egg with any cheese. I use shredded cheddar and make these all the time. We call them cheesy eggs in my house. My family loves them. You can also use an egg wrap for no carbs.

    Umm....isn't an omelet without stuffing, just called scrambled eggs? 😂
    Anyways, McD's used to have a breakfast wrap with eggs, bacon, tomatoe slices, a romaine lettuce leaf, and FETA! I loved it. I miss it. So I'm buying those Hero wraps! Lol.

    I could see making the second recipe with pepper jack, avocado, and eggs and I think that some thinly sliced tomato might be nice. But I agree, "stinky" cheese probably wouldn't be to my liking.

    Fluffy omelettes were one of my kids' favorite breakfasts! They are better with added ingredients! I'm nearly 62 and just learned from you that feta cheese smells. Had no idea! I love the idea of that recipe!

    Maybe nduja instead of avocado? I never think of feta as being stinky, but it’s probably relative to some of the others I eat 😂 I always put grated cheddar with my fried eggs like this.

    if you add 1/2 teasp of water before the lid, the top of the egg will baste, get steamed. looks so yummy, I love runny yolks

    I actually did the tortilla recipe with provolone slices and tomato with the egg. Years ago when I first became a follower of the vegetarian dietary lifestyle, a book I had called melted provolone in a skillet "cheeson" because the smokiness of the cheese renders a nice similar to bacon flavor ... I've done this recipe for years and had no idea it was now being done with feta! Have to try that!

    Lilsipper has a great cheesecake recipe. It's made with eggs & greek yogurt. ( I added sweetner to mine) It was quite good.

    I love watching you two, so entertaining! A good combination for feta is basil and tomato! A tip for cooking the top of the egg is adding a 1/8th to 1/4 tsp of water then placing the lid on it, then take it off the heat or cook at a lower temperature. ❤🇨🇦

    I don't like feta. I think in keeping with the current cottage cheese rage I will try a ring of cottage cheese. They are sorta similar in texture. I have been tired of eggs for a while so thanks for your continued efforts with egg variations! I love every video you ladies put out, such a great channel. Have a great night!

    I like a little feta in a salad. But that recipe sounds like a bit much. Maybe use 1/2 mozzarella and 1/2 feta. Or even just your favorite cheese instead of the feta.

    I have a love/hate relationship with eggs. The only way I can eat an egg with runny yolk is if I have buttered toast(especially rye) to dip in it. The soufflé(that’s what I was thinking watching it) egg dish would be good with something on it.
    Feta is something that I can eat in small quantities on a Greek salad.

    There's a restaurant in Chicago, Lou Mitchell's, that has similar omelets. Good with cheese, ham and some veggies inside. Actually, really good with feta, tomatoes and onions!

    I mix a little heavy cream into the eggs for an omelet (or scrambled eggs) which results in a fluffy texture.
    The feta egg looks good - have to try that.

    Yes, I love this idea of the recipe and I agree with you that you can put whatever you like in it. I would put micro greens, tomatoes 🍅 , and a slice of fresh avocado 🥑 . And of course, my Cholula sauce🌶️ … I probably shouldn’t have it, but I do like it so much … maybe a couple drops 🌶️

    Fyi: you can get the same result for that omelette by simply whisking the whole eggs for like 5 minutes until they triple in volume. Works just the same.

    In high school homemaking class we learned to make "fluffy omelets" where we did the same thing, cooked them in an electric square pan, covered and served, still whole. Thanks for the reminder, it was a staple in our house once a week.

    If you go to a Waffle House, Omelette Shoppe, or Huddle House restaurant this is how they make their omelettes. They put them in a milkshake blender and swirl the pan when they pour it in and it makes a very fluffy tasty omelette.
